Hello y'all, welcome to my ranch! Today I'm gonna prepare you some delicious 'enjitomatadas' like we call'em here in my ranch. Here I have: 4 tomatoes, 1 onion, 2 serrano peppers, and 2 garlic cloves. A bit of oregano 17 oz of curd and a bit of cheese. You'll see how tasty I'm gonna make'em! First, I'm gonna cook the tomatoes... And this pepper... Two garlic cloves... And a bit of onion. I'm gonna put water, and I'm going to put it to cook. And I'll be preparing the curd right away. Here, I already have the pot warming up, and I'm gonna add a bit of oil so it cooks while I chop the onion. Now, I'm gonna chop the pepper. Now, I'm gonna toast a bit the onion as well so that it's really well toasted. I'm just about to add the curd. So now that it's toasted, I add the curd and I'm adding a bit of salt. Ok, so now I'm grinding the pepper I'm about to add a bit of salt… …Aye, I was forgetting the oregano! A bit. Ok, so now I'm adding a bit of oil here in the pot to toast the pepper. —I'll wait 'til it heats a bit— Now I'm gonna put it here so it fries a little. I'm letting it boil, 'til it's really well boiled. Ok, since this is already boiling, I'm removing it. And now, I'm adding a bit of oil in this little pot to fry the tortillas. Now I'm just about to put them to fry the tortillas. Not leaving them too long… …just to warm'em up a bit. Ok, so now I'm gonna prepare them, I'm putting them here in the sauce… …I'm putting them here, I'm adding the curd and I fold'em. *cook-a-doodle-doo!* Now I'm adding... A bit of cheese. A bit of sauce over it… …Look how tasty they look! Now I'm gonna taste'em to see how they turned out. I made them reeeeeeaaaally tasty! just how I love'em!
