this is our chickpea Curry guys this is a creamy nutritious dish inspired by Indian Cuisine you'll love this because you can make it in one pot in less than 30 minutes it's the ultimate weeknight dinner to make it start by gently frying a chopped onion for 3 minutes in your favorite oil I use olive oil then add grated garlic and grated Ginger and fry for one more minute now add the spices I recommend curry powder ground cumin turmeric powder ground coriander and red pepper flakes then toast them for about a minute or until you smell their fragrant Aroma you can now add drained and rinsed canned chickpeas vegetable broth crushed tomatoes and coconut milk now seasoned with salt and black pepper and let it simmer medium heat for about 15 minutes optionally you can add a tablespoon of sugar a handful of spinach a touch of garam masala and you're done easy right
