oh she was delicious today we make one of the most requested recipes and cooking guy history chicken tikka masala look one of the most popular dishes in England we were there that's all you hear about chicken tikka masala chicken tikka masala chicken tikka masala the official dish of of England by some accounts it's pretty simple it is a bunch of ingredients generally more than I like to use but that's the Indian food world a an Indian couple came up to me in my restaurant yesterday not not tacos here in San Diego and a little italy food hall and said huge fans loved all the food any chance you're gonna do more Indian food and I said you know I just feel like it's I like to use less ingredients when I can and it's like in the Indian food world that's like well use 27 ingredients just to start so this is not 27 ingredients but it's worth every single one you'll be so happy with this we start by making the sauce then it begins with nonfat Greek yogurt my favorite juice of a lime three ish cloves garlic minced and perfect OOP couple tablespoons of tomato paste or as they might say in England tomaso paste a couple teaspoons of garam masala here I'll cover up the brand that's what it is and it means spicy seasoning I think it's just this really lovely combination of five or six things including cardamon and coriander and cumin and you can make your own but how l it's just easier to buy this so two teaspoons of this hmm and this smell already the smell already pinch of salt and pepper always salt and pepper little ground coriander and you know coriander is is code for cilantro but in the ground form they always call it coriander some cumin love cumin tumeric beautiful yellow color sort of a cousin to curry a little ground ginger and one of my favorite ingredients coconut milk oh so luscious so fantastic so flavorful and now we mix somebody suggested a t-shirt that all it would say on the front is and now we mix well there's always that point when you have to mix and if you taste it at this point it's Indian food it's spicy its flavorful its I was gonna say anxious but I've used that word twice in the last couple episodes that I'm not going to and by the way I have a cut on my finger that I didn't have a proper band-aid for oh my god this is great and by the way this is not an angle you're used to but we're shooting early because of stuff that I have to do later and we have a major Sun problem we're trying to deal with so yeah I know welcome to this angle now we cut our chicken and put it in here and we're using my beloved chicken thighs look I just find them to be much more tender and juicy and delicious so because we're skewering we want even size pieces and this looks about right to me I say that now but here's the deal even size pieces cook at the same temperature one giant ass piece versus little tiny pieces all in the same skewer that's gonna be a problem and you don't really want that so try and get them as close to the same size as you can and little bits of fat like this let me trim the big pieces but that that's okay you know what we say means flavor we said so much we had a whole t-shirt about it if you haven't bought one yet you can click below and find yourself the recipient of a lovely fat means flavor than I'm effing delicious t-shirt okay and we're finished okay simple now we take our chicken and we put it into our sauce I'm actually gonna steal a little bit of the sauce set it off in a little bowl for use later not a lot but I got enough sauce in here to deal with no I dripped shoot hey trip okay now the chicken goes in you mix get it all covered beautifully we whisk this away to the fridge and we leave it for a couple hours those are going to be so delicious we could absolutely eat them plain just by themselves but we're gonna make a little a little sauce a little dipping sauce to go with them but because it's an Indian style dish an Indian dish actually but because it's an Indian dish we'll use the proper terminology we'll be making a writer or a ITA which is really just like a condiment and our right side will consist of well take a look so out comes back the yogurt again and we will add to this some cilantro that will rip bunch up start to cut until it's nicely chopped up and fine put this in lovely for a huge burst of flavor we'll add some mint we'll just grab a bunch of these leaves chopped them up to Oh as you cut the smell and you know what that means that means the smell will translate to amazing flavor and it goes and then garlic lime juice again pinch of salt and pepper a little more of this ground ginger that we're using earlier and we mix and the freshness of this will be tremendous served alongside the chicken the mint the cilantro the garlic that lime juice get you right there it's gonna be so good okay here's where we're at our chicken is marinating our raita is made we'll just go in the fridge and live in there until the chicken comes out until it goes on the grill and we have some rice to make some bass Maddie rice I'm feeling good max we'll play a little music to take us through our two hour waiting period you won't have to wait that long and we come back we're making rice and we're cooking chicken and life is a dream today we start with our rice which is bass Maddie rice I have a cup and a half of water in this pot to it we'll add one cup of this rice then it goes lovely little pinch of salt a little stir we wait till it comes to a boil put the lid on turn it down to a simmer leave it for 15 minutes and then we're basically there and while that's happening it's time to get messy and skewer our chicken turn it down we leave it for 15 minutes now we skewer and here my skewers wooden which means if they go right on the grill they're gonna burn so we let them soak as long as you can I say give them an hour hour and a half if you got two or three hours nothing will go wrong they'll just be better now is the messy part you should do this the other way excuse me you take a piece of chicken and the skewer and we meet right here and we just do this and this now here's the deal when I skewer things I only like to put a few pieces right at the very end I know people have a tendency to skewer a lot of stuff but let me show you why that's a problem look that's a but that's a bite more than this I take out my tonsils at the very least scrape up the roof of my mouth take out the back of my tongue something like that you see people sometimes they make skewers like this long how the hell do you get to this stuff down at the very end you get the first bite this way then you got to go right right and you tarnished off off and then you've got sauce all over your face it's a disaster so I like a few pieces at the end like this cool let's continue no there's a Larry David episode of that no hoax in the I don't remember so yeah look it's messy yes it's a bit of a pain yes but but why not it's worth it in the end look that the you you you can make tikka masala without skewering just cooking it a pan and stuff and that's it's fine I just like sometimes it's nice to offer somebody a skewer because they look cool and and they're easy to eat and so you know the fun to eat I mean so just continue till you're done and then and then you're done and when you've got all the ones you need to skewer let's get them on the grill and on they go nice orthos these are gonna be something to behold he said hoping he doesn't screw them up rice is ready it's been 15 minutes take it off the heat put it to the side give it five minutes then we fluff it I can't make a bad joke but I won't but now we can turn our Stuart's over come on dot see that's what you want you want that prettiness right there oh boy just a couple solid little bites at the end of a skewer how would you not like that oh I smell everything grand masala turmeric coriander and remember we saved back some of the sauce let's use that now to do a little extra basting and don't worry we're gonna throw them back down on this side to caramelize this sauce a little bit more before we're done and I know what you're thinking you think and family look beautiful and now the sauce is covering up all that gorgeous color well don't worry we're gonna turn them over before we're done to kind of caramelize that sauce in a little bit now these guys are almost ready yeah okay so that side is now looking beautiful so we're gonna turn him back let a little more color that a little more color get on these guys that that sauce that I added starts to burn in a bit add a little more sauce here a little more turning we're almost there come another minute there it's time let's take them off and plate oh man beautiful okay first things first our rice lid off and we fluff oh you know bass Maddie rice just has this really gorgeous smell to it not crazy overwhelming like jasmine but just super beautiful so let's do this using the the the bratwurst plate I bought in Germany I realize there's a difference of country here but still we'll just cover up that logo right there take one of our little beautiful skewers I'll throw the kid right there remember all right the condiment we made this yogurt sauce throw a little there tiny bit of cilantro and a perfect bite look how pretty here's what I like about this here's what I like about this these are flavors that you don't normally make you don't normally put together unless you're a huge Indian food or chicken tikka masala fan so if Kourt that sticks a little hot so first a bite of just this I mean it's like the most flavorful gentle curry type dish you've ever had and see how easy that was and then when you get a little bit of the the right - on it that cools it down adds even more flavor oh this is just like craziness in my mouth and a little bit of the rights of with the rice what country am I in am I in am I in India am I in England ladies and gentlemen that literally is one of the most flavorful chicken dishes I've ever had in my life that be my my my English accent there just occurred to me I can do an English accent and everybody is okay with it what do you think it's good or not everybody's okay with it if I did an Indian accent people will not be okay with that and I don't know why because I can do an Indian accent but I don't want people to hate me and I feel like people would hate me why is that Irish accent solemn your ol piece of have more of that chicken tikka masala before I whip it i dr hans everybody's okay with that Indian not okay are we too sensitive people say it's because you're not eating one light English either or Irish okay it doesn't matter here's what matters this is delicious change it up folks not the same thing all the time look I know we do a lot of sandwiches and burgers and fried chicken and things like that and they're all great but you gotta change it there's a whole world the food out there that you must get your head around start here and if you don't want to pull together a gram masala and and coriander and and and and and and powder ginger and stuff like that you can buy a garam masala paste just do that but have the coconut milk it's okay it's so good all right thanks for hanging out always always always thanks for being here we really appreciate it means so much to us oh we're on our way to a million a million of you
