Hey everybody welcome to The Wolfe Pit Today I'm making simple, basic, backyard Barbecue
Chicken. I'm doing it on my Napoleon Mirage 485 gas
grill. It's easy, it's delicious so let's get started! I haven't had a chance to use my Napoleon
gas grill since late last fall. So the firs thing I need to do is to get everything
cleaned up. I'm going to turn all three burners all the
way up, close the lid and let it burn for about 10 minutes. And it literally only takes about five minutes
to get this up to 700 degrees. After burning for 10 minutes at 700 degrees
I brushed the grates off and everything is clean. I've turn 2 of the burners off and I'm going
to leave the far left one on high for now. I've very liberally seasoned 6 chicken leg
quarters on both sides with salt and pepper. Now I'm going to place them on the right side
of the grill that has the burners off. This method of indirect grilling will prevent
flare ups and grease fires from your typical gas and charcoal grills. Now I have all of the chicken on the indirect
side and I still have the left burner on high. I'm going to close the lid. Then I'll make any adjustment to the burner
to keep the temperature between 325º & 350º. Now after cooking for 30 minutes skin side
up with the lid shut at 350 degrees. I'm going to flip it over and cook it skin
side down for 30 minutes at 350 degrees with the lid shut. Now after one hour of total cooking time the
chicken is 3/4 of the way done. Now I'm going to begin basting them with regular
store bought bottled BBQ Sauce. You can use your favorite Barbecue sauce or
your homemade BBQ sauce. It doesn't matter, just use what you like! Also put as much or as little BBQ sauce on
your chicken as you like. It's your chicken so coat it up the way you
like it. Once the chicken is coated the way you like
it, close the lid and let it cook for 15 minutes. After 15 minutes flip the chicken. This is another advantage from cooking indirect,
you don't have to worry about burning the BBQ sauce over the direct heat. Once again add a thin or thick layer of BBQ
sauce to the skin side. Now for the last 15 minutes I'm going to increase
the temperature to 400º. That will caramelize and help set the sauce. Here's the chicken after an hour and a half. Look at that beautiful color! There you have it, fork tender, basic backyard
