somebody welcome to another episode with cooking with Nana a friend of mine have requests how to make tea but it's going to be in my way of how I do my do the mica tea so this is what I have first I have the red curry paste umm paprika garlic shallot it's where I all mix this together and blend it and this is how it's turn out to be and then all this is going to be on the I'm going to cook all this together to make the red curry paste when it's red it will be on the the broth of the mica tea and my second step is this what I need to make the broth I have kolandra lime leaf is called by key hood this is how it looks like sugar msg eggs peanuts some people don't like to use peanuts but you don't have to if you don't want to you can use yellow monks be for it but now I don't have yellow monks me to show you guys and I use um shrimp paste salt tempering um juice in it too so I will teach you how to do the red curry paste so this is what I have a waiter turns a little bit brown and stuff until I add all my red curry paste and paprika it depend how red do you want Tomica tea looks like some people like it read some people don't like it to read I like the this can more instead of instead of the jar because to me the can taste a little bit more better than the one in in the it's the same time chi it takes times and stuff you know it's a lot of people like it so I let it sit for a while and I love to add my lime leave I love to add this in here if I killed it smells good because it's going to be on in the from the broth already when you know that it turns out a little bit Brown you start putting your curry paste in mmm I wish you guys can smell it even though you haven't done anything yet it still smells so good with all that fresh herbs and all that stuff in here and I'm going to start adding this after I mix it in I'm going to add my um paparika powder like I said it's the pen how spicy you want it how red do you want the prop to look like but this one is 2 cup already alright you just use half of it right now I'm going to mix it first see how we change color if you want you can add a bit more like I said you can you as much as you want is the pan up how spice and how red you want your sauce to be slowed down the heat a little bit let's all miss everything all the oil all the garlic all the rest of small red onions and everything that's in there so this time I'm going to turn it off and then I'm going to start my broth but then to me I like the way it is if you want a more red you can still add more this red curry paste but I'm not going to do a lot today I'm just going to do like a small pot and show you guys how I do my make a tea okay this is the thing I'm going to use for my broth for my makeup team I have three layer of pork some bones it's a meat and Grahm pork like I said this is what I I cut the lemongrass in half and then smash it get all that smelly herbs I'm going to take August 3 well Michael Anka let me slice Mike Lanka and I already have my pots all boy in there I'm going to put this in the pot so it will have all that smells fresh herb this big pot is for my mica tea broth I'm going to put that in there and put everything in there and this side is my small pot why I use a small pot this is what I use you the one i have the one yin bone I like to rinse all that that where the bone they have that when they cut it it's so so if it takes good and I don't know how you took how my person described it but all the bones I have I just like to over not overcook it but just clean the part out and this is like the meat okay I wait until that is done cook you see how my pot is done like already read all my um beef on my court when it's all boiling up I will add salt in there you see my umm I put all the herbs in all my water's boiling it's best when everything is really boy where you can put the median so I will put my three layer of um Billy the fact so me I let it cook and stuff this is what I have and I am soft pull up the pickle spoon like this and then some msg like I said you don't have to use MSE if you don't want to but I like to use MSE if you don't want to use msg you can use the this chicken soup basic chicken mix soup if you want but like I said my house we use msg if you don't like MSG you don't have to use so we just wait till everything is cooked when it's cooked I'm going to bring it out and slice it and stuff put everything in there and but this one I'm just like let it cook a little bit and I'm going to rinse in cold water get all that bone stuff separately and everything should be done and my ground pork micron pork I just add a little bit to it to brings a little bit thickness into flavor just making like three or four balls if it's like how I said it's a pan how big pot you want in it stuff so when everything is cooked I'm good spring out match the ground pork and stuff I'm going to half of the pound of the ground pork on the ground pork I didn't season or anything I just make a ball like a meatball and push just put it in there and then I went out everything's cooked and stuff and I think I'm going to rinse my small pot I didn't want to over cook I just want to take you see how how all the fat and all that stuff that comes up from the bone I'm going to join it I just rinse it with cold water that's the meat and stuff that's vixen above that's fine because you got to put in that um in those three gold pot and then when it's all cook we're going to slice it dice it up and back into the pot again just some of the bones you know how they they have Bloods and stuff that is there you don't I like to put Boyd separately because I don't want to mix one in my um the froth of my need to keep this is all just the bone to bring flavors into your mica tea so now I'm just waiting to everything is cooked when everything is cooked I'm going to bring it out and slice it and I'm going to put all that ingredients that I have to that show you guys that it's going to be all in here so all my needs is already cook everything's cook so this time I am going to take take it out from the pot because I'm going to take it out and come and slice it when I'm done slicing it I'm going to put all the ingredients in together like I told you remember the the fat mega tea especially it's a lot of fat people like oh wow you know people they're scare up their weight and stuff but the bone you can leave the bone there and stuff remember the meat ball put it in there because we're going to come and smash it see all the bones just leave it in there let it have all of that work bone for the flavor and stuff see where's that Bowman stuff and it sticks the meat in there that's fine it will fall off the long you cook in there you get softer and stuff so I'm gonna have this cool down why I'm going to slice it and to remember the sugar I'm going to add in here because mega tea is mostly sweet and to me it's little bit sour there's one too three like I measured this already I use two cups it's a penthouse week you want and stuff so we add the sugar msg salts in here so we just have to wait for that meat that I took it out let it cool I slice it and the rest I will come back and put everything in here see I didn't have to meet all Kuhn and I'm just going to slice it this depend how big slice you want but this is how I slice mine not too big not too small Lisa is perfect some people like it make it chunky but this is I just keep slicing it because everything is going to be back into the pot see the three layer of flat fat remember the meatball that I have like I said just smash it you can use this to smash or you can use your hands to them has to break it in you know if you don't have that you can use your hand just squeeze it break it apart he's off break apart I put all my meat in here and we'll put back in the pot stir it so now I put all my meat in there I will open my coconuts you can use different con coconut I like chap choice it's more um thick and more creamy I'm going to use two for right now to get all the coconut and stuff in there mostly I use four but people don't like too much creamy and stuff look at this a lot of meats and stuff smells so good in here so I'm just going to wait until it gets boy and stuff then I will get ready to prep the stuff that I need to make to add more stuff in now this is what I'm going to add on my tprop I have shrimp paste I use probably two big scoop of this and now the well I'm gonna a little bit water to break down the the same pace this is it brings more flavor more it tastes taste very good I just break it down a little bit make a little bit watery this is my hot water then I use my tambourine soft cooking tambourine to make it lit because the thing is already sweet already remember I had I'm sugar so I'm going to add em to marine there's one two three four and then if you want to add more you can add more but I'm just going to do four to see how it's going to taste mix all in together and it will bring it over here remember that red chili paste and I put it on that I did earlier I'm going to put in here I'm going to put in here first oh I'm so good in here I wish I have someone to come and taste it for me like I said it's the pen how rip do you want the your Omega T to be so I'm going to use it off this red thing you can use s on Capone also a lot of people's ask me what do I use for spoon is the same thing the red curry paste that I use I use the same thing on a spoon too and remember the last pot having that shrimp paste and and and the thing that I make some tambourine sauce I pull it on in and my two last items I'm going to add in some eggs and peanuts I'm going to have this pope like for like 5-10 minutes let it all in together you see how red it is how he should get a little bit more red red but I'm going to have it sit and cook if you decide to add more coconut you can I only app to let them go to add more coconut because if you like get more creamy and stuff see yeah I think I'm going to add two more coconut so it tastes better because I add the other two earlier so I'm going to add two more sometime I mom would see you guys put too much coconut but hey that brings the best food right to have more coconuts that's total for coconut I use can you guys smell it Oh smells so good I think I need a bigger pot huh okay now I'm gonna have to X I'm gonna wait until it gets a little bit balled up and then I'm going to have the peanut so I put more coconut I put the tempering sauce and the free shrimp paste all mixed together into that pot so now I'm going to my two items I have left it's a peanut remember like I said you can add peanut if you want to you don't have to if you don't want to and then you can have that yellow mung bean it's in a bag as yellow all you do just soak that and rinse it and smash it and put it in the pot this is my peanut it's a pan how much you want it and how left and my eggs I'm going to add my cut is size 30 so part you could add 12 like one dozen of eggs is the pan how you like to hook so there's two four six two I'm going to put six eggs just beat it up a little you know so they get all and together and I'm going to bring everything over here you see how my pot is all boiling already so I'm going to lower it down take all this layer off look at how red and it is okay remember I add my peanuts in there if you want to add more peanuts to add if you don't you don't have to some people like a lot of peanuts some people don't after that this part I'm going to add my eggs in there sorry boiling up I'm going to add my eggs the eggs is a cook in there he's seeing how the egg is you see that's that's the eggs right there meat is supposed to be creamy sweet little bit sour all the flavors are in here if you see like that that's the eggs that I put it in see that's the eggs right there that's the pork like I say you can add more peanuts if you want your immunity or that yellow mung beans in the bag okay and then the next step I will teach you how to do the noodle simple and easy how to soak the noodle boil the noodle and prep everything and how we serve this so this is my mica tea this is how it looks like when it's all done we clean this up does that look good or what okay my next step remember I'm going to teach you guys do the noodle and so the soup of nicotine is done and this is what I need for later on you need vegetables and a noodle to go with it you can get a cabbage slice it put in here and your bean sprout risotto wash and rinse put in here and just Lantos all mixing together just mix it up you can find uni you want put carrot you can put carrots you can put any kind of vegetables that you can slice and put it in this is what we have and my green onions is going to be for the noodles that I have right there now I'm going to start doing the noodle I use this brand for the noodle and I just rinse it in cold water and I put in here I just soak in I don't want the noodle to be very soft medium after that I'm going to bring you in rinse in the cold water gonna keep doing it get on my noodle in here just for like a second or so turn it off checked all that water out move it here I'm gonna rinse it in cold water so you don't get sticky together when it's all hot I'll rinse shake it I'm going to use the same Bowl okay squeeze all that rinsing water out since though see how I just squeeze we have all that water up that's how we would look like put in my pot and I will use my homemade fried garlic so you don't get stick together a spoon like remember like I told you you don't have a fresh one you can pour on the toilet with the garlic right here mix it up you can add you just bring more flavor to garlic noodles after that mix it up okay and remember I told you we need um green onions and you pour it in the noodle you mix it all up okay so now I'm going to show how you just like so everything is all set and ready to eat so I'm going to have my vegetables in here they're not the one we slice you can have more vegetables less vegetable just a pan you want more noodle you can add more noodle see how if you don't wash it it gets very sticky you have to wash it with cold water how we do Omega T Oh the projects waiting for me just turn it pour it in you see that port three-layer pork in there you see the eggs there's eggs there and there's some crushed peanuts and then over here and you're all set people who love to eat with um fry um pepper if you want more soundness you can ask lemon you can add on the side you see
