[Music] hey everybody so if you're new to the facebook group then you may not be aware that if you ever bring up cheese sauce without also including a recipe at the very same time that that's grounds for some pretty serious backlash uh this is you can modify this a million different ways so we're just gonna wing it so as you go here write down the things that you like and the measurements that you might like and then just try it out and if you don't like it then you just have to modify some of your spices or whatever so don't get too caught up on the exact recipe because you know i don't really do the recipe thing very well but anyway let's get going so the first thing we're gonna do is get this pan hot we are gonna saute one yellow onion or sweet onion or whatever kind of onion that you want and you can just rough chop it because this is going to go in the blender and we're just going to use a little bit of veggie stock homemade veggie stock to keep the onion from sticking i'm also i've got like two whole heads of garlic in here i'm gonna use about half of that for this one so you also may not may have seen in the facebook group that i get some pretty serious grief when i use the minced garlic that comes in the in the big bottle from costco it's not as bad as you guys are making it sound let me just tell you when i first switched to this way of eating remember i cook like i cook every meal and you've seen how much garlic i use chopping garlic was pretty tedious so yeah i cut some corners and i used the costco garlic that is literally just garlic but anyway i am using fresh garlic to try to tame the beasts in the facebook group that are on my case no i'm just kidding this is way better it tastes better it really does then the mint stuff i just need to get with it and uh not be such a baby and cut chop my garlic especially if i'm making a video come on dylan so uh oh my god there we go i thought that might be getting kind of hot okay so we got about a whole head of fresh garlic again i didn't chop it very fine just enough to get it to cook and we're gonna send in the onion and just let her saute for a little while and then just add some veggie stock as you need to to keep it sauteing without sticking too much simple simple so while that's going i'm going to get some other stuff ready i've got this mellow miso mellow white miso you can use any miso if you want this to be totally sos free salt oil sugar free it's already sugar and oil free but if you want it salt free you can leave out the miso you're not going to miss it that much but i'm going to use a tablespoon of miso then i'm going to add we have nutritional yeast this is more than a quarter cup but less than a half a cup probably so maybe we'll call it a third of a cup or just wing it do do what you like start with that and then see where it takes you then we're going to put in i've got some turmeric here put in like a half teaspoon of turmeric you're not you don't want a strong turmeric flavor but you do want the nice orange color for your quote unquote cheese sauce oh that's looking nice okay let's put in like a half a teaspoon of black pepper just ground pepper let's put in like a whole teaspoon of paprika this is the regular sweet paprika you can use smoked too if you like it whatever i've done it with both and i want to do like a half teaspoon of cumin because i really love cumin in everything oh and we definitely need a good whole teaspoon or more of crushed red pepper you can figure out the amount that you like this is some thick ass veggie stock okay so then i'm going to add like around start with a half a cup add when you're in the blender if you need a little bit more okay now whisk this all up and we're going to add this to the pan just to get it a little bit cooked and i've got a whole bunch of yukon gold instant pot cooked potatoes that i'm going to use in this sauce as well as the thing that i pour the sauce on top of i'm going to show you in this at the end of this video what i like to eat this with okay let's go ahead and add our mixture of spices and once it gets hot we're going to be ready to blend it away [Music] tangerine is one of my favorites [Applause] this is just a guilt-free sauce you can put this on everything and believe me i do sonny thank you for the love yo okay i think we're there let's do this you know what to do okay have your veggie stock ready because you may be in need of a little bit more once you get this fired up let's rock and roll i almost forgot one of the most important parts of the recipe and that is to take like one or two potatoes that might be a lot and we're blending that up too the cooked potatoes that's going to give it a nice thick texture okay let's try that looks pretty nice oh it's real nice and thick [Music] i'm not going to eat yet because i want to make this other one first okay so we got our onion chopped up our bell pepper chopped up so let me chop this garlic just real quick while that's heating okay go ahead and dump in the onion bell pepper and garlic [Applause] all right just as before we're gonna start with the base so i got a optional tablespoon of the miso i've got that same amount of nutritional yeast a good three quarters of a cup of veggie stock a teaspoon of chili pepper a teaspoon of cayenne it a little kick to go with the sweet bell pepper maybe i'll do like a half teaspoon of paprika because i still do want that flavor in there another half teaspoon of turmeric or more i'm going to leave out the cumin and i'm going to put a whole teaspoon of curry powder i don't even know why i put these plastic shaker things back on the bottle they're i take them off every time and then let's do a little a little bit of black pepper okay what do you think let's whisk that up see where it takes us if you haven't watched my video on how to make your own veggie stock you should really check that out all i do is save my frozen veggie scraps every time i'm doing anything like the scraps from this onion the inside of that bell pepper will all go in the freezer you know add water to cover it and just boil it simmer it for hours i do it overnight sometimes sometimes i only do it for a few hours just depending on how much time i have so just put it in mason jars and throw a few jars in the fridge and it'll keep for a couple weeks every time i take a load out i do two of my big 20 quart stock pots and that saves me like 75 bucks every time i do that so it is well worth it let's just start with one potato mash it up real good and let's give our first sauce a try [Music] oh it's really nice and thick just potatoes and cheese sauce this is an awesome lunch you can just have jars of cheese sauce ready potatoes and just dip it if you want i do this driving [Music] so i'm ready to add my spice mixture here oh that's going to be nice [Music] oh yeah your kids will love this too you know they will you're going to trick the hell out of them they're going to think this is cheese or something we don't care it just tastes good [Music] we are looking ready here yeah this is ready to go okay so for this one instead of the potatoes i'm going to use this is just steamed cauliflower maybe let's do like that much in this part i'll just eat [Applause] excuse me i know i'm gonna need a little more broth i think it's looking pretty thick okay let it rip i think we got this one just right all right let's see what's up oh boy okay so what else do i like to put the cheese sauce on you saw the instant pot potatoes that was delicious how about a little steamed broccoli and cauliflower [Music] covered in curry red bell pepper onion cheese sauce oh yeah [Music] oh i love the curry so much it is so good yeah just just always have this in the fridge ready you just put it on anything the nice one you don't have time to cook you just all you do is make some potatoes or steam some cauliflower and broccoli or all of it and just pour it all together and you're done it is like a five minute meal just just stock it just stock it you won't regret it um this is so good one tablespoon of the miso has 660 milligrams of sodium so in the whole jar there's 660 milligrams of sodium that seems reasonable a quarter teaspoon of straight salt has almost 500 milligrams of sodium so having 660 milligrams of sodium in a whole jar of this is pretty low sodium so but if you're totally sos free i get it leave out the miso one single serving of corn just get it right on there oh yeah you'll see you can laugh at me oh it's hot oh yeah just right in there right in there oh man curry flavored corn so good oh look at you look at you just singing to me just yeah just roll it in just roll it in work it into all the crack oh boy oh yeah that was good one carrot stir it around get it right in there you just want to get fill the entire crevice don't leave anything good just all right overflow it just overflow it get it right in there sriracha oh just one little jar of black beans plain old black beans [Applause] cheese sauce just like that oh yeah babe here we go pico right on there get just all in there pico what do you think beans cheese sauce and pico hard those beans came right off the stove oh this is one of my favorites well that's a little look at what i lunch in a day you got to have that cheese sauce ready this is a lifeline you got that ready with the pico you can do anything you can feed anyone and make them happy this is these are the these are the core concepts right here so i hope you enjoyed it tell me what spice
