it's late summer here is Scotland and you could be fooled for thinking that you've hit the gold rush but coming across this field of false chanterelles however on closer inspection you realize your dreams are foiled and they're not the real thing so how can we tell one from the other [Music] we've had two really really dry summer followed by a bit of rain and cooling down and it seems to have been perfect for the false chanterelles I've never seen so many in this forest I'm gonna pick a few different stages of maturity so we can have a look at the difference between the young and the old ones the good indicator is if you can find a perfectly round one like this this is a real giveaway look at the dark spot real chanterelles are the same color all over the cap whereas this one has a darker orange ready center turning it over you can see the color of the gills they're very peachy in color and very orange a lot more orange than the chanterelle here's a more mature specimen interestingly this one doesn't have the dark spot in the middle and looks very much like a chanterelle however I'm turning over we can still see it is far too orange underneath and the gills are just completely wrong let's have a little look inside this one here opening it up do notice the flesh reasonably white but still streaks of orange throughout and not much difference between the cat and the flesh and look a slight hollowing the stem take note of these gills look at how they behave and they go all the way up to the cap there and all the way down to the stem let's break fuel off quite hard to break off on a younger specimen of the full chanterelle still quite orange inside really and the girls quite perfect going all the way up to the cap in almost a straight line one other indicator is the smell is quite different from the real center of the real Sun trail is a very distinct apricot a fruity type of smell it smells very mushroomy which is quite vague but nowhere near the fruitiness there's maybe a slight kind of a rubber tire II smell in there as well quite distinctly different from the real run trail if you come across the patch of realest on trails you can be sure that the following year they'll pop up in the same place I remember last year about 200 metres away there's a wee patch let's go and see if we can find it as if by magic here they are next year look at where they are surrounded by Moss blueberry bushes birch and behind me a big peach just as I did with the false chanterelle let's have a look at the color the shape the gills or lack of in this case and the smell we'll pick a few different stages of maturity EE notice how the young chanterelles do start off round but there are a lot more conical and when they get a little bit bigger the shape becomes quite a lot more random and flowery and free so here's a nice mature one to pick a younger one will do and you can see there I'm not gonna disturb these because I might want to come back to either later but that's a baby there I've lined up three chanterelles and three full chanterelle let's have a look at the color first of all the caps very similar in on the chanterelle it fries more at the edge and the false chanterelle a little bit more rounder the color of the cap will remember this one had a darker spot in the middle from the full chanterelle than the true chanterelle look it's almost paler in the middle turning over let's have a look the gills of the false chanterelle are very orange and quite straight all the way to the cap on the true chanterelle their false gills so they're more like veins they're rubbery and they tend to fork very prominently at the cap they're real color difference as well and in the stem look at that on the top not so much underneath absolutely look at that quite orange in the stem on the fall chanterelle there we open up the reel at the true chanterelle look at that really white inside quite a difference inside maybe another interesting feature of the chanterelle sometimes they get these deformities in the middle of the cap or on top of the cap final reinforcement the true chanterelle the false chanterelle - Chantal last but not least let's smell them to test so this is the true chanterelle with the white interior and the full skills mmm amazingly aromatic savory and fruity at the same time especially once you get hmm almost quite our Mandi let's try the fall chanterelle no way there is prominent still that mushroom savory smell very similar but without that fruity over note admittedly maybe because of the dry summer these chanterelles have come up earlier than last year which is interesting now all this foraging is making the hungry so I think I'll pick a few than the tip of the pot so we've got the chanterelles back into the kitchen I thought what a nice way to enjoy them make an omelet with the orange birch bolete mushroom a bit of bacon onion garlic all the ingredients here chanterelle orange birch bolete bacon some garlic onions four eggs one of the greatest things that chanterelles that to addition to the color look at amazing let's try a bit unbelievable little taste of awesome magnificent
