[Music] [Music] because guess what I have a awesome treat for you today not just a treat and awesome treat you today alright Dave we're going to do an hour Taric Cajun cousins crawfish etouffee this would be off the chain I tell you now what I want to start with is my ingredients that I have here as you can see I have some crawfish tails this is a reason a crawfish tails you want to get the ones that has the fat in the package got a little back you got half the factor the kind is the trick Tara and this one whatever you're going to have a quarter cup which is one stick of unsalted butter I like to unsalted okay and I have my flour right all-purpose flour I have parsley garlic salt Felton Louisiana Hot Sauce two stalks of celery I have two onions but I'm knocking use both on the use of cup and a half some half was going to be gone okay a fresh bell pepper yeah I just want to teach you this is a female bell pepper it's got the full points it's sweeter than the male the male has three points just a little trivia right here okay nice now and this is some Sally did you say the female was sweeter the female is sweeter don't believe it and now that always is I understand it now some people like the female for salads ah I like the female for my cooking gotcha okay male is is it's not as sweet which the male has three points on it I never knew that okay all right a little stuff hello well seafood stock a little tomato paste a little tomato sauce okay I like fire roasted fire resistant okay dice tomatoes alright and this is my ingredients that I need and let me go ahead and cut up my vegetables gonna be back in a minute all right Brett let's do it t this is a definitely from scratch crawfish etouffee it is not from a bomb not from a box that you buy and it's all pre-made even the vegetable is about to be cut and everything's gonna be served and fresh and now it gives it the flavor I want to see this one thing very simple to follow instructions this is a very simple recipe easy to do in an hour you're gonna have it done and you have a great meal for your family awesome I'm looking forward to it all right Brett thank you deficit after I got the vegetables all cut up cuz I'm gonna take my my butter as you saw was unsalted real butter I want to put it in my pot yeah I like magnet like pots it works great for all kind of types of cooking now what I want to do is get the butter fully melted before I add my flour okay and it seemed like regular roofs on a dark Roux you wanna use a cast-iron skillet like a head back here but we're doing a blonde roux okay that is a root that's more of a yellowish color okay okay so that's why they called it blonde roux and we let me get my own you know my butter is melted on my head my good my flour here I just sprinkle in here like such and that's gonna start to my roots okay okay miss suppose blonde Roux it's gonna be a blonde roux that's right like a blonde woman yeah this is a blond roux okay I got it good it's gonna take about 5-10 minutes for this to happen you know oh yeah this is about the way you want it right here all right and with that color that's when you got your vegetables in okay all right sure this looks amazing bone and vegetables hit that roof well you heard that oh yeah just popped yeah beautiful beautiful beautiful now how long do we saute the vegetables down in the roof right we get them tender I mean it's gonna cut in half inside all right browning him up a little big in this okay and you see how the blonde Roux yeah she's all up in there how nice that looks and I'll put the vegetable did sort of roof it's not going to get any more problems than this already calculate but you wanna stay on top of it so it doesn't stick but John's going to be very very immediate hot rub that's all the flavors trying to get out of there but guess what I'm a capturing yeah rise this is beauty smell it smells amazing submit a piece ok a little sweeter piece in there yeah adding a little can of tomato paste alright oh sure you don't need the whole camp out but those okay alright okay the painting had been there for a few minutes now and what I want to do I want to add my far roasted diced tomatoes I like Bob Rosie could give you that little flavor okay you know so these are fire roasted okay got it yeah it's beautiful good all right buddy tomatoes in it I want to bring it down to like a medium low heat and just kinda let it cook slope okay good something like this you don't want cook fast alright think what slow cook it and I guess for about 15 minutes just gonna let this cook and all the flavors gonna get married and have great cams okay so I'll be back in a few minutes oh look at him vegetable has gone getting at uh their reddish orange yeah look taking on the look you're right alright you want right there all right he's got a few minutes hi Brett hello tomato sauce justic color is what you looking for you you see the coming here has got that orange flavor yeah orange color and all that flavor in there yeah so we had a little tomato sauce yeah we're gonna give it a little bit redness but once we have that crawfishing that fat he's gonna bring it back to that orange color in that and that's the true color you're looking for right right into faith that's right and you see this right here sure and I'm gonna do this and just let this cook slow you don't want to rush I like my vegetables the way you can see them up okay and I'm fixin to add the crawfish in right that's gonna be the next step and I'll have one package open right there okay you can just take it and you want to make sure you get all that fat that crawfish fat it is what works and I'm gonna show you a trick after I've dumped all my crawfish in so the Carl fish fat gives it to flavor right already fed it is what you need okay I know my mama show you a trick all right after I get all this in here because what I like to do is I'm gonna take a little water okay and I'm gonna rinse my bags off okay the water God chant we are I can get all all right yeah Oh as you can see I've got my crawfish in here I'm gonna mix all this up in here real good and then on my head a little water to each one it in bags and shake it up and add it in here okay all right sounds good I'll be back in a sec I just want to see you stir this so everybody can kind of get an idea of what to do yes beautiful all right all right I just put just a little bit water in the bag and I shake it up like that okay you go I like it and that goes all your flavor is in the pot that's it is a secret not everybody gonna tell you that's a big secret I like it I just stated I put it back to about a medium fire and now I want a season with my salt pepper my parsley garlic my hot sauce in for look a little seafood stock in it okay and you want to put just enough seafood stock as you can see I'm just kind of salt in the top a little bit okay you know it's really hard to measure you say about teaspoon anything you just want to put okay but again nice closely you didn't want to cut them okay what you have here see what do you wanna come across and cover sure I put a pot okay okay little black pepper gotcha when you wanna put your little parsley in right here now this has been cooking for a total of about 40 minutes by 40 minutes since we started so you have a but by another 20 minutes fun for the final product put a little garlic okay I like a little blowing on the rolling yeah myself I know that alright put a little bit more hey here's another secret ingredient okay hot sauce what you want to put just enough to give it a little pain little pop yeah look pop but you don't want to hold on we call that a little kick well I don't mean like that a little splash now I got my seafood stock you don't want to get all of it you gotta have just enough to get the gravy loose alright okay so we're gonna put seafood stock in their stock and in in and I need a little bit more salt and pepper to my taste a little swig it is you know [Music] then we doing let it cook all right I'll tell you what it's looking amazing and I'm this is gonna be something else when you get it all finished you can see the crawfish tails and the vegetables you can see everything the colors all the different flavors and the colors and it smells unreal so looking forward to the finished product crawfish etouffee right in Madison really come to a real nice boil man and it's starting to really cook good this is gonna be some sauce and balm stuff Wow it still needs to of picking up a little bit so what I'm gonna do I'm a lord of all kinds you need to cover off a little bit all right the water fall out of it okay and we're gonna let it simmer now okay and this is good stuff right here well it smells amazing look at the smoke well let me see that stock yeah pretty that look this is some real good Cajun cousins crawfish etouffee or you take long look at that Brett that's right goodness see the smoke coming through the camera good smell oh yeah buddy look at that your net beautiful oh it's amazing and it smells amazing I can't wait to sit down and have something fix it a nail it right now and you know how it's all close together because the best one pop music player that's true I just want pop gotta have that flavors won't be there and you know what they go very much a so we got here look at this and if you have any comments
