it's also very delicious. First, when we say Basque. That is a place in Spain and France that is
on Bay area near the Pyrenees mountains. They have a very good local cuisine, we call it the Basque Cuisine or the Basque Regional Cuisine that those foods are truly comforting

room temperature, it should not be cold. So if it's from refrigerator, of course,
your cream cheese is on refrigerator. You remove it for 1 hour outside
before you are gonna mix it. So you can see that it's being
mixed too quickly now, right? It's becoming really smooth. Right? So see, just as quick as that how my cream
cheese and sugar mixture has become smooth and I'm going to scrape
the sides of the mixing bowl. This is very very easy. It just really sounds so grandeur
and the taste is also very grandeur but it's not that too
expensive, right? And then you're going to
put the eggs one at a time once the cream cheese
and sugar has turned smooth. Just one at a time. So I'm gonna put one. 1 When the first egg you put disappeared,

mixer for a bit. I said that you
minimize it for a bit. 4 If you put the two together, don't

we can't really do anything about that. Just trust the process. Okay. So as you can see,
it's still smooth. It's very nice, right?
You scrape it again. It's very important that you always scrape
the sides and the bottom of the bowl because there are solid cream
cheese that would be left on it. Okay. So you scrape and then
you mix it again. I will just wipe this. And then you pour
the cream already. 1 cup of heavy cream. You can also use
all-purpose cream, you can use
thickened cream, you can even
use sour cream. 1 cup. "I want to put that flavor because my neighbor on village is already making Basque Cheesecake." "Is it okay if the one

and then you just cut it slowly. So there. And then this goes
into a hot oven. 400° F oven. It's really hot or if you really
want that the top is really burnt. Then 425° F or 450° F for
around 40 to 45 minutes. When you remove that from the oven,
you can see that it's middle part is still moving. Right? That's very normal because as it
cools down, it would set for a bit so I'm gonna set it up
on my oven already. So here, I have cooked one of course
and I'm gonna show you the two. This one has been
baked at a 450° F oven. My apologies since it
was sliced already. Of course, I already tasted it
since this was just yesterday. While this one,
I bake this at 400°F. It's on you if you want
your cheesecake Mestiza or if your cheesecake have
gone to the beach already. It's on you but to me honestly,
both of them are very delicious. The burnt taste on this cheesecake
is the kind of burnt that taste good. Right? The fancy kind of burnt,
