this is our black bean soup wow it's earthy hearty Smoky water soup heat up the olive oil in a large Skillet or Dutch oven then add chopped onion celery and carrots and fry them on medium heat for 5 minutes now add crush or pressed garlic ground cumin or cumin seeds and chipotle powder to give it a smoky and spicy spin if you don't have Chipotle powder you can use red pepper flakes fry the spices for about a minute now you can add vegetable broth black beans you can use canned black beans or black beans that you cook yourself in plenty of boiling water for about one to one and a half hours bay leaves and crushed tomatoes seasoned with salt and black pepper give it a quick stir then cover with a lid bring it to a boil crack the top often and simmer on medium to low heat for about 20 to 30 minutes now turn the heat off discard the bay leaves and blend about a cup of the soup to make it extra creamy as a final touch we're gonna add some freshly squeezed lime juice guys this makes all the difference okay now you can serve it in a bowl with some more freshly squeezed lime juice a Sprinkle of fresh cilantro sliced avocado a dollop of dairy-free yogurt or sour cream easy right
