Welcome back to Binging with Babish where this week we are venturing once again into the land of Westeros taking a look at the second slightly more refined loaf of direwolf bread that Hot Pie makes for Aria so it means before we can get cooking we've got to take a little arts and crafts break I got this template and the inspiration for this recipe from the Inn at the crossroads which is a blog that recreates food from Game of Thrones there's a link in the video description where you can print yourself one of these and cut it out and now we can use it to make sort of pseudo bread one that takes a bit more inspiration from Irish oatcakes than it does from actual bread and we're gonna start by lightly processing some old-fashioned rolled oats measuring out 265 grams or about two cups worth and combined with 550 grams of whole wheat flour 1/2 teaspoon of baking soda 2 teaspoons of baking powder and 1 teaspoon of salt that we're going to whisk together to combine eventually excepting that we can't make this bowl work and we're gonna have to graduate to something a little larger that's better now we're gonna whisk that to combine and then beginning adding our liquid ingredients that is 6 tablespoons of honey for sweetness 1 2, 3 4, 5 6.. there we go we're also going to add 6 tablespoons of melted butter you're going to give that a tertiary mix to just combine before starting to add buttermilk a little bit at a time I ended up adding about 275 milliliters until a thick doughy dough forms moist enough to hold its shape but not too sticky or wet now unfortunately I have no way of knowing that this is actually accurate and if it tastes anything like did on the ship.. Oh my God.. you guys it's Maisie Williams! Babish:Thanks for coming by the show Maisie: Thank you for having me Babish: I thought we'd each make our own here and you can see if you can make a better diary Maisie: Great! Babish: You're wearing all these nice clothes.. you're here Fashion Week I don't you mess them up so.. Maisie: Thank You! Babish: Do you want me to help you? Maisie: no no no no, I don't need your help (laughs) Babish: All right you're going down! (Both laugh) Babish: So, this is from a blogger who claims to have spoken Babish: to the food stylist from the show. We're really making props right now. Babish: Which knife would you prefer?Choose your needle! I'm just cutting around the wolf's ass Maisie:Yea, same. Maisie: I want to eat some of it. Babish: Yea, it's not that good. (laughs) Maisie: No, it's really not! Babish: it's very cerealy Maisie: Yours looks really good. Babish: Well, I'm professional. Yours has character Maisie: Wow! Babish: I know, I just threw some serious shade. (laughs) Maisie: (laughs) You know what! I didn't come here for this! Babish: I've got a super star here! (laughs) Babish: Hey! That's perfectly wolf-shaped it's a hell of a lot better than Babish: Hot Pie's first attempt Maisie: it is - Can I put this in your ... Babish: I thought you were feeding it to me Maisie: Yea would you like some? I feel like mine looks so much better. Babish: It does look a lot better. In a rustic kind of way. Babish:Im sorry I gave you, like... my personal defense knife. Maisie: I think I'm going to take it a step further, you know? Babish: Oh my god, what are you gonna do? Stab me? Maisie: I'm gonna take it a step further and kill you so as I win. Maisie: Okay, I'm going to do that too and pretend that that was my idea Maisie:(sarcastic) Oh do you know what?! I think this would be great with some sugar!!! Babish: (sarcastic) Oh! Well, I happen to have some in my hand! (both laugh) Maisie: Wonderful! Babish: You're so kind about the cleanliness of my kitchen Maisie: Well its just 'cause its on camera (laughs) Babish: Off camera you'd be dropping sh** Maisie: Yea (laughs) Maisie: Okay Babish: Into the oven! (Both laughing) Maisie: I don't know which-! Maisie: Look at that! Babish: Let's do that a little lower, it was like ... yea! Babish: These are cool enough to touch. Maisie: Yea, look, yours is a bit burnt.. Look! Look at the back. Babish: Wow. Maisie: I'm going to put everything on it!! .. No I'm not. Babish: So I guess this works as a vehicle for things actually taste good. Maisie: Like soup? Babish: Like soup! Babish: I could see myself eating a tail for breakfast with, with an egg or something. Maisie: yeah dipping it, in a boiled egg. Babish: it tastes very nutritious. Maisie: I don't think it's gonna become part of the clean plate. .. I wanna say that again ... I don't think it's gonna become part of the clean plate... (laughs) Babish: You know food is dry, when it takes 3 tries to say clean plate club Maisie: I don't think it's gonna become part of the clean plate club Babish: Yours is better, because its thicker so it's a little moister. Maisie: Are you gonna keep that bit in? Babish: No. Maisie: I feel like this is too much honey butter Babish: that sentence doesn't make any sense to me. Maisie: Yea, that is true. Babish: I feel like it's all stuck in my teeth Maisie: Yea, no the honey butter is really good, the bread is terrible. Babish: well thank you so much for coming by and eating this not very appetizing stuff. Keep up the good work Babish: with that whole Game of Thrones thing and good job, you beat me. Okay so I felt bad about feeding Maisie Williams what I would charitably call a very very dry biscuit so I tried a few other recipes ranging from whole wheat breads to crackers and nothing really came out quite right they either came out too dense or too dry because they need to hold their shape when they're baking. Finally I found one that looks semi accurate and still tastes good it's a brown butter pecan scone. We're starting by making a half cup of brown butter we're gonna put that in the freezer while we wait for that to freeze solid we're gonna measure out 85 grams of whole wheat flour 85 grams of all-purpose flour combine those in a medium bowl and resolve to follow through on your bold choice as you add 1/2 teaspoon of salt 1 teaspoon of baking powder and 1/4 teaspoon of baking soda we're also gonna add just shy of 1/4 cup of white sugar whisk to combine and let's get the butter going as you can see it as frozen very very solid we're gonna scoop it out into the dry ingredients and then I'm gonna try out this pastry cutter to cut up set butter.. what... did I stutter motherf- sorry this is a family show anyway we're cutting the butter down into pea-sized pieces then we're gonna add some sage; fresh sage freshly chopped and some pecans that we have toasted and let cool completely. We're just giving this a little tossy toss to make sure that everybody's gotten to know each other before adding 1/2 of 1 cup of buttermilk folding gently to combine making sure that we don't break down all those nice hunks of butter we're turning this out onto a lightly floured countertop working in just a little bit we don't to build up gluten and patting it into a disc large enough that we might cut a direwolf from it we're brushing this guy down with a beaten egg and baking it 425 degrees Fahrenheit for about 20 minutes or until a lovely shade of golden brown we're cooling this on a rack because it's really really really hot out but we still want to serve it warm so we can melt some honey butter over top to make honey butter simply combine a ratio of 2 parts butter to one part honey mix well to combine and spread it on stuff because it tastes really really really good and so does the scone it's light and tender and flaky and the flavors all play really nice together it's a member of the clean tail and hind quarters club (British accent) All right bakers 20 minutes... Bakers you now have vingt minutes! Oh god! 20 minutes! I haven't even got my moose anus cut out, yet
