Just made the 15 min version for dinner, thanks! Next time I’m going to add a bit more of the starch water, as the pasta absorbs a lot of it.
Is there anyone who doesn’t love buttered noodles? Babish can suck it though if he thinks adding Parmesan is bad. Even if he considers it a “half-assed Cacio e Pepe,” a little Parmesan, Romano, and fresh basil and garlic and it’s probably one of my favorite dishes. You can leave out the pepper too, as far as I’m concerned.
Also I love the tip that better noodles and better butter makes better buttered noodles.

Diet be dammed. It’s buttered noodles for dinner!!
Add a few squeezes of lemon juice. Throw the lemon in during the emulsifying. Serve with a shit ton of Parmesan on top and you got yourself a Limone. Makes it even more special.
This was good but that third method is like using a drone to kill a mosquito.
