guys i'm going to show you how to pan sear a beautiful rib eye steak using that ninja foodie never stick 10 inch frying pan coming up cooking with cj the show about cooking drinking barbecue and all the other stuff that goes along with it i am not a chef i am not a bartender i am not a pit master but i play all three on tv i'm gonna show you how to make quick easy tasty recipes and have a little bit of fun along the way so let's get this party started what's up everybody welcome to cooking cj i'm cj and thank you for being here today and joining me on this journey of food gloriousness that's a new one i like that one i think i'll stick with that one food gloriousness i'm in all right guys like i said we're going to be cooking a big oil this thing is about two inches thick i have it trussed up so it stays together nice and tight and we're gonna put it on that new 10-inch ninja foodie never stick pan now their claim to fame on this one is that you can take it from the stove to the oven all right so i'm testing that theory out tonight because i got a big old ribeye right here thank you and i don't want to mess it up no and it's just too thick to just sear on a pan alone we need some time in the oven okay so we're gonna get a nice heavy duty sear on it and then we're gonna put it in the oven finish it up we're gonna butter baste it with a little garlic and a little rosemary it's gonna be amazing but like i normally do i dry brine this steak i put a bunch of kosher salt on it let it sit out for an hour hour and a half right got nice and sucked all that salt in pulled off some of that moisture now it's time to get it on that i want to call it a skillet because everyday they claim that you could do things like a cast iron skillet so we're going to see get over to the stove not the ninja foodie station let's start cooking the batboy all right come on all right y'all let's get the heat on we are turning up the fire on this bad boy we're going to take it high we want it hot and heavy we want a great sear on there over here we have a couple sprigs of rosemary a few garlic cloves already smashed some butter we're gonna do a couple uh a couple nubs of butter and that's it we're just using the salt that's on there we'll finish it with a little salt and pepper but i don't like to put pepper on the steak while i'm doing the searing process because they get burnt easily no one wants burnt pepper all right all right team it's time to let this go oh you hear it i'm gonna get a little closer hear that sizzle all right pushing it down we're getting a good crust on it once we flip it we'll add the butter the garlic and the rosemary get a nice crust built on the other side and then we'll get in the oven okay we got the sizzling up or we're gonna let it go for about a minute or so i want it to be as wall-to-wall pink as possible there's gonna be a little bit of gray on the edges so we're just going to let it go a minute or so give it the flip minute or so and get in the oven to finish up okay it's time to flip this bad boy over oh look at that crust oh yeah all right we're gonna give it a little bit more cooking time and then we'll add our butter our rosemary and garlic and start basting this bad boy up okay time to get that butter oop get over here get that butter in get our rosemary sprigs whoa bumble garlic in there go what do you say we get one more in there one more little nub it all right now we're just gonna baste so notice i'm using metal utensils on this bad boy these pans are metal metal utensil safe and that brown butter worked in there real nice okay basically the long time here give it a little uh little extra loving all right now let's go get it in the oven all right we have our oven at 350 and throw that in there for about 20 minutes we'll check the temp and that's it guys okay guys it's been about 10 minutes we're gonna check on it real quick just hit it right in the thick part in the middle right there 123 122. all right there you go it's coming down a little bit probably only got about five minutes to go give or take all right so while we got it open might as well base some of that goodness back on there now it's turned into brown butter it's got all the the beef fat in there rendered out from the stake we're gonna pull this probably in another two or three minutes let it rest let the carryover temperature take you to about 130 and we'll be good to go all right guys we took our pictures for the gram thumbnail let's go ahead and take this bad boy out we got our extra butter piece on there for the pitcher let's take that put it in there we'll spoon that over later let's get these uh little uh strings out get the other one pretty dang good to me let's cut off let's just start in on it huh get a nice medium and as we go closer it'll be medium rare as we go closer to the middle it'd be medium rare in the middle there we go not wall-to-wall pink but pretty dang good to me last thing we're going to do got a little although this black pepper salt we use that to finish it off just a little dusting over the top that's the dish guys i'm pretty sure it is close to perfection as can be but let's cut a little bite off all right oh yeah oh yeah good stuff definitely give this a shot all right just to recap we seared it up for about a minute on one side at really high heat flipped it over seared it for another minute added the butter the garlic the rosemary butter basted it for a little bit popped it into the 350 oven about 15 minutes until we got to about 125 internal let it rest
