I've been having really excellent luck with oven spring, and crumb by:
1 Preheating to 500 F (260 C)
2 Place dough in the oven
3 Turn oven off for 20 min
4 Turn oven back on, Bake at normal temp for around 20 min
I use my normal baking steel and steaming method of a tray that stays in the bottom of the oven with 5-6 oz of hot water poured in right as the bread's going in and venting steam a few times during the bake.
This has kind of blown my mind. This is just an experiment by Foodgeek, not his default bake. this is my current default method
