we ate at Roscoe's yesterday I don't want to you know you don't have to if we have both of frontals right now I'll be at Parkes fine look into macro and cheese like that yo what's going on everybody welcome to a very highly requested video of fun gross food right now I am in Echo Park at one of the most unique barbecue spots in all of Los Angeles yes I'm talking about the parks finest and you know I could not do a barbecue food video without another foodie the grandfather of the in-car food review is none other then gain drops listen people my made me into hit me up I said damn I know you al like yep I know you haven't had that Filipino barbecue southern style in your life oh hi Joel can you absolutely right we're on the go inside I hope you brought your appetite let's go eat damn let's go [Music] expect some type of barbecue that you've probably never had never ever never have you sure I'm sure about that you know why you never had Filipino flavors before right so he's right I've never had a barbecue is like a social food no one ever is at their home just barbecuing for then in one other person on you gotta bring at least five people community bites bite people over yeah it's bringing people together that's what I love about that kind of food Dame drew the food is dropped what do you think you're looking at right now this right here is a problem a good problem to have I wasn't expecting this I won't even stomach this right here looks like I just slid so a family barbecue spot I'm about to get busy they got the banana leaves here they got the wood balls we need the simple breakdown so one of the co-founders of the parks - we got John Erickson appreciate you jumping all right so we do American cuts of barbecue with the Filipino flavor and traditionally backyard boogie barbecue okay it is cuts of meat dry rub sauce on the side and what we want you to taste the meat the smoke the seasoning the flavor of Southern California provincial hospital Bowl so that's what our tri-tip will smoke roasted with pepper blend our garlic onion blend and pink Himalayan salt that's hard tomato based pineapple brown sugar Parmenio sauce vinegar soy garlic chili sauce and our Mexican crema horseradish that is our mama Leah's coconut beef that's 16 our top round cubes and stewed and a coconut cream pop of rice that 13 people in a three-bedroom apartment and that's really good hood food that is a short rib I had instead of cutting it horizontally we give you that Chris Rock one rib cut our hot link medley so it's a combination of a red-hot a kielbasa and a filipino sweet link is this some sort of chicken adobo so we do basically convection oven roasted chicken and then we continue to smoke it we seasoned it with olive oil our pink Himalayan salt our seasoning the cornbread here this is not just any ordinary corn that's Anne's cornbread bibingka it is cornmeal rice flour coconut cream baked from a banana leaf so pork ribs so what we wanted to do is give you a variety we wanted to give you competition ribs on top of the rib lid and nice juicy pork loin flavors what do you want to start off with man let's just I'm gonna start and I'm just keep going out that way I'll start here I'll get you there in the middle row row play sound good tender you bite right through you have the flavor all over the skin on that short rib nice little crisp to it not too crazy I know you don't like the middle just tomato sauce no flavors I go with the creamy horseradish right here mhm the spicy sausage mmm great flavor on the spin map a lot of pop oh yeah a lot of pop on that school dance what's Oswego we'll go with this right this is like the sweet tangy sauces of vinegar sauces the cream of horseradish I'm going with the creamy Peas hit it with the vinegar it's going oh wow Jack creamy sauce type of sauce do you have one like a vegetable bladder hey do you ever eat your wings like this when you break the bone out first no you don't want you to see how that bone come on then there's some mac and cheese right here know that mac and cheese is cheesy you know your mac and cheese is official when you go hold on a fork like this that's not all falling apart this mac and cheese has so much cheese I feel that like a header kind of tingle feeling you get that one that in the back of your mouth sometimes we get that sharp chair that's why they call it sharp cheddar I think cuz it just gives it a sharp feeling right there this macaroni cheese also lethal so have you had or Chi it's like a sticky rice like stink rest is yes but benka traditionally is kind of like a buttery sweet coconut mochi it's a rice cake but they've kind of blended the rice cake in with the form bread that's good swag it's my hand a sweet pound cake this is crazy have you ever had anything that tastes like that no the strongest coconut the coconut be the legendary those were there [Music] bring it nice thing I'm a beef stew but the way to meet is working what I would love on this is a little bit of this vinegar on we got to take a little low half spoonful sprinkle it on the beef right there just to kind of balance everything out that's we are with it yes okay we are going onto the pork rib this does look like the Chinese barbecue like the cha-cha the barbecue pork that we eat no sauce no fault right just going right in that skin is almost like crackling look the rolls up I want you to pay attention to us we have happened right put it to the test that bone is clean leave that bone is cleaned by now it's time to tip the staff will go creamy with it Wow oh no it's been prepared to write well delicious man mm-hm what do you been feeling so far man I was on I was struggling on this whole entire platter without greatness that we have a forest everything here packs its own flavor of taxes own punch what are the top two most unique flavors that you have so far that macaroni and cheese wasn't expecting we're at a slide to a Filipino barbecue ok get macaroni and cheese this is bangin there's a lot of soul food spots all right and so the ribs then that poor game have me messed they're so tender they melt in your mouth I've never had anything like that sauce never in my life does it kick tomatoes sweet barbecue kick in a spicy oh my gosh I'm still back at this macaroni and cheese here's what I'd like to test about chicken is if the breast meat is good too often the breast meat is dry but if you can keep it moist and juicy to say it something I'm just gonna pull the bones off just kidding take my fingers into it Oh broke up like a relationship bro that's how you did it one thing I did not try yet zucchini squash medley get it squabbles I'm so good man alright that wraps up our Filipino barbecue feast and that was actually like a fusion Filipino barbecue because it was taking influences all these different cultures not just Filipino not just Chinese not just Latino it was everything that they had grown up with in Echo Park I feel like this is such like a local spot it's gonna be very very hard to find food that is just like this anywhere else because it almost has to come from this neighborhood so when he was growing up this was like pretty good this area but uh he was just like I had a barbecue because nobody shoots the DJ or the barbecue person and it is true that's why good point I like that yo you know shoot the DJ you don't shoot the guy in the grill you don't shoot your barber it will it will always make it and I just never even had some of these flavors all together so what a mind blown - I'm about to have a food coma so where you at I just love the way that in this kitchen man they can sit there take a whole bunch of items and pretty much have them just complement one another when it comes to the flavors it's not too often that you can have a full complete platter and you could say everything on that plate is amazing however every single bite kind of led into the next bite yeah it was like a like a chapter there's not like a perfect book we ran through everything that's here and the Filipino barbecue product over here did not fail to deliver greatness all right everybody thank
