This part is quite expensive. ½ cup of soy sauce Any brand will do. 2 tablespoons of brown sugar ½ tablespoon of ground pepper. ½ tablespoon of salt I used rock salt. But you can use iodized salt as well. 30 pieces of calamansi And 1 clove of garlic. So now, let's start marinating the sweet beef tapa. The first thing that we will do is to smash the garlic. Then, we will directly place it in this bowl. Make sure to smash it well so that its taste will transfer to the beef. We are now finished with the garlic. We will then do the calamansi. We need a strainer to separate the seeds. Let us slice everything first so that we can work continuously. We are now done slicing every piece. and let us now squeeze it. We are now done with the calamansi. We will now soak the sweet beef tapa. Now, we will marinate the sweet beef tapa. But we will start first with the ingredients. Let's add in the calamansi the soy sauce, sugar, ground pepper, and the salt. We are done placing all our ingredients. Let us now mix this very well until the sugar and salt dissolves. When you know that you have mixed it well, when our ingredients are dissolved, we can now place the beef tapa. We washed the beef tapa then placed it in a strainer so it will drain. Let's put it in. When you placed everything, let us now mix it well. The beef tapa smells so good. You will surely like this sweet beef tapa. We are now done mixing the beef tapa. We will now place it in the refrigerator. We will marinate it for at least 1 to 2 hours. The longer you marinate this, the more delicious the sweet tapa will be. Just like tocinos. The longer you soak it, the more flavorful the beef tapa will be or the tocino. Let us cover it with cling wrap. Okay, let us now place this inside the refrigerator and let's leave it for 1 to 2 hours. Okay now it's done. After two hours, this is what we marinated. The first thing we will do is to repack. We will weigh 200 grams and 400 grams (of beef tapa). But if you will make this your business, the weight depends on you. You can put 200 grams, 250 grams, 400 (grams), 500 grams, or 1 kilogram. It depends on what you prefer. What is important is we know our capital per 100 grams. And later, we will do the costing, on how much is our capital per 100 grams. So watch the video until the end. The weights we will do are 200 grams and 400 grams. Wow! Our sweet beef tapa smells so good. It makes me hungry. The longer we marinate, the more delicious the tapa will be. And don't forget our label. Let's start with 200 grams. And when you are done weighing it at 200 (grams), you will add some marinate sauce. Now we are done repacking. And we are able to make 3 (pieces) of 200-gram tapa, and 1 (piece) of 400-gram tapa. Then we have 100 grams of excess tapa. We included the ingredients we added. Which is why the sweet beef tapa exceeded 1 kilogram. The next thing that we will do is to seal these. Let us now start sealing. Let me repeat, if you don't have a sealer yet, and you don't have a vacuum seal, you can use a candle as an alternative. Just like what I did in one of my past videos, I gave an example. When you are done sealing it, include a label on top as well. Then, just cut the edges for it to look neat. Okay there, we are done with one already. And this is the 400 grams. We are done repacking the sweet beef tapa. The total weight of our sweet beef tapa is 1,100 grams. Before we proceed to costing, we will cook first for us to know if the sweet beef tapa tastes good. Let us cook this 100 grams. Now we will cook already. We will fry this quickly. Let's add some oil. Let's wait for our oil to heat up. Then we will put in our beef tapa and we will only fry it quickly so that it won't get tough and hard to chew. Our pan is already hot and let's put it in. Let us also put in the garlic. Wow! So for those who like foods with saltiness, has sweetness, this recipe is perfect for you. If you are going to make a lot of this, you will just double the amount of the ingredients since this is just 1 kilogram. Imagine. We marinated this sweet beef tapa for 2 hours only, but it tastes really good already. The sweet beef tapa is very flavorful already. Especially if we marinated this for 24 hours. For sure our sweet beef tapa is very delicious. Now, we will do the costing. But before we start, as I always say, our costing, the one I am doing, is the costing applicable in our area. You will do your own costing because we have different locations, and the prices (for the ingredients) vary. It could be more expensive, and it can be cheaper. I am giving you ideas on how we calculate the costs of our products. So now, let's start with our costing. Let us start with our beef, 380 pesos. Soy sauce, 5 pesos. Calamansi, 12 pesos. Salt and pepper, let us just price it at 5 pesos. And for the garlic, let's just price it at 5 pesos. (and the sugar, 4 pesos) So the total capital for our ingredients is 411 pesos. Now we will add the labor, 30 pesos, since we just made a small amount and it is very easy to make. But we included the labor, 30 pesos. Let us also add the plastic and the label, 15 pesos. For our electricity, for sealing, and for storing it in the refrigerator, 20 pesos. So the total amount of our capital is 476 pesos. That is our total capital. Now, for us to know our capital per 100 grams, if you can remember earlier, we have one piece of 400 gram three pieces of 200 gram, and one piece of 100 gram. So, the total weight is 1,100 grams. Our capital worth 476 pesos, let's divide it into 11 pieces of 100-gram tapa. Thus, the result is 43.27 pesos, is our capital for every 100 grams. We will first calculate this 400-gram tapa. So that we know how much will be our capital for this 400-gram. The 43.27 pesos, multiply it by 4 because this is 400 grams. So the result is 173.08 pesos will our capital for the 400-gram. In our area, I can sell this for 220 to 240 pesos. But this one, I'll price it at 220 pesos. We were able to produce one piece therefore, we will earn 220 pesos. Now let us calculate the 200-gram tapa. The 43.27 pesos, multiply it by 2 because this is 200 grams. The resilt will be 86.54 is our capital for the 200-gram tapa. You can sell this at 110 to 120 pesos. But I will price this at 110 (pesos) We were able to make three pieces of 200-gram tapa, thus, we will earn 330 pesos. Now, if you can remember earlier, we have an excess of 100 grams, the one we cooked. Our capital per 100 grams is 43.27 (pesos). We only have one piece of 100-gram excess, You can sell that for 60 to 70 pesos. But I will price it at 60 pesos. Now let us add all our earnings. 60 pesos, 220 pesos, and the 330 pesos. So we will earn 610 pesos. Our 610-peso earning, we will deduct the 476 pesos capital. The result is we can earn 134 pesos. That is for 1 kilogram of beef. Imagine. The sweet beef tapa is very easy to make. We will just marinate it, combine all the ingredients, we will place it in our refrigerator. So with this 1 kilogram, it is not impossible for you to sell all of these in just one day. For example, you are selling it every day, you are consistent,, the 1 kilogram of beef, will be 2 kilograms. For example, you are already able to sell 2 kilograms, the 134-peso earning, let's multiply it by two if we are able to sell 2 kilograms. So we are able to earn 268 pesos within 1 day. For example, you continue to sell this, and you are able to sell 2 kilograms within a day, the 268-peso earning, from two kilograms of beef, in every day, let's multiply it by 30 days. So we can possibly earn, 8,040 pesos. It is not impossible for you to earn that amount. That is just for 2 kilograms. We will earn a lot from these ready-to-cook dishes. Just be consistent in selling. Sell everyday because for sure, they will know you in your neighborhood, that in that store, there are always ready-to-cook dishes. When they go to that place, they can buy ready-to-cook dishes. Others are not consistent with selling For today, they will sell. The next day, they won't. Tomorrow, they will. The next day, they won't. That is why they are not earning in their business. But if they will be consistent in selling, it is not impossible to earn that amount within one month or within one day. Just imagine that we will not only be selling sweet beef tapa in front.
