[Music] good life full of fun hey guys what's my kitchen nothing exciting day of my kitchen where we going what do we make in guys we're gonna take a trip to my mom's kitchen or Nora's kitchen and they would make this delicious recipe you know a lot of times you'll make a pasta recipe and you'll have some leftover pasta and you don't know what to do with it so that's where this recipe kind of originated is more of an American Italian feel and it's big CD I'm gonna take what you guys think is like baked ziti or leftover pasta and I'm gonna tell you I'm gonna take it and I'm gonna kick it up forget about it style so I'm gonna go over ingredients with you it's simple it's fun it's fast this thing moves really quick and I'll tell you if you want to feed a small army this is the recipe to do it first off we're going to need some sauce so I've got a great recipe on the island how to make some mom the spaghetti sauce of marinara sauce leftover sauce is fantastic really whatever you want if you're going more meat free obviously you're going to go a meat-free sauce so I've got a four cheese sauce that I like to make spaghetti sauce pomodoro sauce I've got six cups of sauce okay secondly we're gonna start off with the center stage you know the main attraction here right so I've got ZD now you can make this pretty much with really any kind of possibly Walker's you'll have some leftover pasta what I've got here is one pound of brides easy dry pasta okay so we're gonna get cooking on that I've got the water going so you want plenty of water you're gonna salt it now we're gonna go to the cheese's so one I've got six cups of mozzarella cheese okay so ideally if you can get that fresh mozzarella with you know that'll come in the water right and we're going to cube it or shred it and we're gonna get that prepped up I'm going to show you we're going to put some of it inside the pasta we're gonna back off some to put across the top so pay attention for that later in the video okay and now what I've got here is 32 ounces or about three and a half to four cups of ricotta cheese okay now what I like to do with the ricotta cheese is I like to strain it just a little bit get that extra we're out of it and we're going to mix that with in the pasta between the mozzarella and the ricotta it's gonna be absolutely delicious now I've got about a cup cup and a half of pecorino romano cheese and we've got about a cup to the cup and a half depending on your excitement enthusiasm of shredding here of Parmesan cheese okay Parmesan Reggiano if you can go for it now between those four cheese's that's going to add like a body to the to the baked ziti right and a gooeyness and the deliciousness and a creaminess and we want to step that up a little bit here so I've got about 8 ounces of mascarpone cheese oh I'll tell you that's smells so delicious and that's really gonna add up that creamy the creamy depth factor that you're gonna get in this recipe one of the best parts of big CD is the top and cuz you're gonna bake it it's gonna have this beautiful cheesy body to it but everybody on my mouth water just talking about so everybody's gonna want to take that top of that ziti you know get up buddy to that that piece of that that crunch so I've got 1/2 a cup of bread crumbs and then I've got some melted butter I've got about 4 tablespoons of melted butter obviously you want to use some fresh ground pepper nothing better I'm gonna use some salt I always use pink Himalayan as you guys know because it's sexy it's fun right and then I'm gonna use some olive oil now some of my regulars know I always plug our elbows so I've got Vito and Jose so I've got a farm and pull you Italy or a buiiet it's just above the heel called the poi of Peninsula and there we make and bring you some of the most delicious olive oil in the world it's peppery it's grassy it's earthy absolutely delicious and you can grab it right on our website at cooking Italian with Joe calm or on our Facebook if you hit chop or by now or by Outlook click it will drop ship or right to your house I call it a trip to Italy right in the Bob alright so number one we gotta get going our pastas I'll meet you guys right over at the stove waters at a rapid boil so I'm gonna take about a tablespoon per liter ish okay so I want to almost like it like see water is what you're looking for okay and then a key on that is you want to add some starch to your water I've got a great video on how to cook pasta like a master so I'm just going to take a little bit of my breadcrumbs throw it in there that adds a little extra starch to your water right and then I want to jump right in on my ziti I'm gonna take my found disease or right in my boiling water the key is in to add olive oil he is to stir di plenty of water salted and you want to stir it immediately in several times and that'll prevent you from sticking all right guys it's been about 10 minutes we're right where we want to go that al dente okay which is just to the tubes it's got a perfect bite to it so a couple of tricks here before you transfer it to the bowl to the next stage number one like I said give it a really good stir before you pull it out second tip what really gets this to come out and pop awesome is if you subscribe to our channel so you like that transition so there's a little red button right there when you click that you subscribe to our Channel and it makes you put in a family you don't I'm saying all right so what we want to do here is we want to transfer it right into a bowl but the first thing I want to do is I want to get some olive oil in the bowl so for this we're going to use our world's famous Vito and Jose you guys get to buy all that stuff yet alright so we're going to throw a splash of olive those look you know two or three tablespoons right in the bottom of that okay and then what we're gonna do is we're gonna transfer our pasta into the dish and then once we get it in there we're gonna mix it I'll tell you what really helps this out sound of Frank Sinatra I think so after playing the background days of wine and roses that's a good song right there first needy and then you know if you're almost there not even just give it a good stir now see now the olive oil will prevent it from sticking if you put the olive oil in the water that coats the pasta prevents it from absorbing water or any of those flavors that you got in there now it's in there too hot just hit it with a little bit of salt and then a lot of cracked pepper and that's great because it'll stick the pasta now while it's hot so you figure you're gonna do a good teaspoon if not a teaspoon and a half of fresh ground pepper and then give it a really good stir stuff so pressures jump it out of the bowl all right just transferred it over from the stove now we got to get things moving while this is hot see how hot that is we're gonna add almost all the cheese's I'm gonna do a hold back on a few so just pay attention okay I'm gonna put my parmesan and I'm gonna hold back just a little bit of my parmesan okay just about that much my pecorino romano same thing I'm gonna hold back just a little bit of it my mozzarella right I'm gonna put in a lot of it but I want to hold back about a quarter of the mozzarella I'm gonna put all of my ricotta cheese in all of it and I'm gonna put all of my mascarpone a know so we'll give it a good stir while it's warm and all that cheese will melt and start to coat your ziti now everything's melted inside the pasta all those cheese's oh my god this thing smells so good and now we want to prep that dish all right so you're gonna need a good side pan in your is this gonna serve you know eight to ten people maybe a little bit more if you got light eaters which why would you invite a lady eat over here house anyways I'm going to be let's be honest right and then I got the oven prepped at 350 degrees okay and then I've got a ladle I got my sauce so I'm gonna put some sauce in the bottom of the pan so you're just gonna ladle that in you want about a half of that sauce in the bottom and then just give it a nice little spread now you're gonna take your pasta and gently just put it right on top almost like you're layering like a lasagna are you gonna put it all in there without getting it on your shirt say it's smelling horse pee this vid is that now it's totally spread even and I'm not gonna be able to put all the sauce in there but you're gonna take a ladle or two of that sauce depending on your dish and you're gonna spread it all the way across it's perfect total deliciousness all right now we've got the most rustle you guys see oh my god wait about the rather the parmesan and pecorino romano and the breadcrumbs and the butter I didn't forget about that we're gonna want to put that out about 15 minutes into the cooking process okay because we don't want it to burn so I'm going to kick this in there at 350 for probably about 30 minutes 15 minutes in 20 minutes in I'm gonna top and let it go another 15 or 20 tops gonna get brown crust it's gonna be delicious and then it's time need alright I'll talk to you guys in 15 minutes all right so now we want to prep the topping so I've got the Motorola that we held back right I've got my pecorino romano so you know you've got birds pluck their give or take some Parmesan cheese not to be critical here right I'm gonna mix it in there yeah I'm gonna give that a really good stir whoa stuffs press is jumping right out of the jury so I'm gonna give that a really good stir and then what I'm gonna do is I'm gonna take my bread crumbs I'm gonna tell my all my bread crumbs right in there and I'm gonna do my my butter okay those four tablespoons of melted butter and I'm gonna give that a really good mix so that's perfect so I'm gonna go ahead and set that aside hey guys I gotta tell you smells good in here alright so let's open this up check it out you guys subscribe yet I know you grab some oil so now I've got my bread crumbs right and I my cheeses and that's what you want to put right across the top here so you're getting a beautiful even spread on that and remember everybody wants a piece of that cross so make sure you evenly spread it beautiful perfect and now we're gonna pop that right back in the oven for another 15 to 20 minutes first off the smell in here is unbelievable secondly it's show time not only does that smell good you see that perfect crunch and crisp can you hear that oh now that is big ziti alright you guys know it's my favorite time it's taste time so so I'm gonna come in right over here and we are hot I look at it as my duty the goal here is I just want to maintain that crisp on the front oh there does beautiful see that string cheese oh that's beautiful if you guys could smell this right now smellivision and taste division right there it is somebody invented quick first the smell absolutely delicious second the visual look at that the gooey stringy cheese mmm you can smell the pasta the cheese the butter the bread crumbs mmm the sauce and the keys it and the flavor it's so good and then immediately you get that texture
