today's video is sponsored by Squarespace more on that at the end of this video today we're going to make tiny meatball baked pasta this one is so good pretty sure the taste tester is going to love it let's get into prepping it right now on this baking sheet here we have the meatball ingredients I have a half a pound of ground pork half pound of ground chuck I grated a cup of pecorino Romano with a microplane so it looked like I had a lot but it turns into nothing a half a cup of Italian seasoned breadcrumbs quarter cup of minced fresh parsley three cloves of garlic minced I have a little bit less than a teaspoon of kosher salt probably like three quarter teaspoon and two eggs that's for the binder this is a really good standard meatball recipe we've done so many meatballs on this channel every time I do it a little bit different but it's a meatball you know it's not too complicated the remaining ingredients we have two 28 ounce cans of plum tomatoes one was crushed already I think with sclafani the other one was Moody we have a pound of ziti olive oil will be for the sauce pound a block mozzarella by the way guys all these recipes always full processed shots all the instructions everything on the web website as much as I try to make them great here for the video I do just as much work for the site we also have one pound of regatta we also have four cloves of sliced garlic we have a quarter teaspoon of crushed red pepper we have one medium onion that I diced that'll be for the sauce it's about a cop's worth and then that's that other half a cup of pecorino Romano first thing we want to do is make the meatballs and you can get your oven set to 375 degrees Fahrenheit all I'm doing here is just kind of mixing up the meat I have the three quarter teaspoon of kosher salt and I'm just going to put it on top here now pecorino Romano has a lot of salt so that's why we're not using that full one teaspoon or more per pound of meat you don't need to when you're putting that much pecorino in if you're worried about the taste and the quality you know you're seasoning with your meatballs all you have to do is roll up one you can fry it up you could put it in the microwave just that the meats cook so you're not eating raw meat and then you can see if you have enough seasoning in it it doesn't matter which order you do this this is a lot of parsley I think I should put it all in or not I like parsley yeah I put I put it okay our eggs are safe so now here is the ultimate test do I put bro gloves on or do I do it by without what should I do you're in your own house yeah so I would forego the bro for go the bro you know where gloves come in handy a lot when you're working with very hot peppers now you don't really want to over mix too much okay a simple way to uh roll your meatballs is get a bowl of water and then just dip your hands in between each one and then nothing will stick to your hands you can also get a little bowl with olive oil do the same thing you know third way is obviously to break out the Bro gloves I dip my hands in the water and I'm gonna roll them up to about that size that might be a little big we'll go a little bit smaller than that on the next one okay so dip my hands again in the water take a little bit roll it up and then another perfect meatball so we're gonna just repeat here and we're probably going to get 30 to 40 meatballs if you're lazy and you don't want to do the little tiny meatballs that I'm doing here just do a couple big ones and then just cut them up when you're done here and you got them all on your baking sheet 375 degrees Fahrenheit for 15 to 20 minutes you really just want to get the internal temperature of these to be about 160 degrees I'm going to turn it to medium heat just going to coat the bottom with olive oil so it's about a quarter cup putting the onion in it's been about four minutes and you can see the onions are getting lightly translucent and then you can add your garlic in and we'll let it go a couple more minutes [Music] and then we'll put in a quarter teaspoon of crushed red pepper if you like more here definitely add it our onions our garlic are soft very fragrant I'm going to add in two 28 ounce cans of crushed plum tomatoes now be careful here [Music] bring it to a simmer we're going to let it cook until take a little bit of the water out of it all right so it's coming to fairly bubbling simmer it's going to go all over my counter here I'm just going to put this here just to stop that from happening I think the meatballs are done oh yeah those are looking beautiful you see how much fat has come off then so it's been a good simmer for about 10 minutes and you can see how much thicker it has gotten I am boiling the pasta now okay so my pasta is like one minute away from the two minutes less than Al Dente stage let's just give the sauce a taste test and add salt or even a little hot red pepper if need be delicious you want to put in a little bit more in a teaspoon of salt normally I go up with like a half to three quarter per 28 ounce can we use two cans there so that should be enough salt you want four cups of the sauce [Music] here's my pasta just came out of the water let's get it right in there with the tomatoes I never have enough room when I'm trying to mix these up so we're going to put in our mozzarella our Regatta the only thing with the mozzarella just save roughly one cup for the top meatballs I am saving a little bit of the meatballs for the top and we'll put the rest of them in you could also layer this which like that oh it would be it would be amazing just like this you would have cooked your pasta until Al Dente because right now it's probably a little bit harder than than you would like it a larger Bowl will give you a chance then to see if you like need some more sauce or if you're you know meatballs aren't distributed quite correctly but they they will be so the recipe calls for a 9 by 13 baking dish this is much smaller this is like five by eight and this is small too and this is nice you know you can make one for yourself for your family you can give one to your friend I'm gonna put some sauce at the bottom of both of them and to be honest we're just gonna have enough sauce here maybe should have made a little bit more and then get your massive amount of pasta in there foreign [Music] got the mozzarella the remaining mozzarella [Music] and then the meatballs so I have more of the Meatballs because I think by putting them on there it's just going to look so much better 375 degrees Fahrenheit 20 to 25 minutes broil it for the last one or two minutes one thing that might help you if you're worried about like you know making a mess in your oven just bake it like that [Music] when you take your baked pasta out you really want to let it sit for 15 or 20 minutes to absorb the liquid everything will settle it's the same principle you do with lasagna hello taste tester this looks really good I let it cool down a while for you just so it's not like piping hot make sure you do that just to let it settle but also for anybody who's eating it'll burn them out roof of your mouth immediately not even telling you what it is you you go for it well yeah I think I know what it looks like I like how you put a lot of cheese in it yeah I didn't have the meatball yet I thought they looked really good they are really good okay I like the body and shoot meatballs this is honestly like really good okay I thought it was I thought it looked really good I haven't had a bite of it yet give me some tasting notes what's what's the deal here is it just really good or is there something that makes it really you have to try the sauce plain I like the balance with the sauce with the tomatoes and cheese I feel like there's not too much cheese where it's like super like strainy and stuff I really like the meatballs yeah I just like meatballs I wanna try I didn't try a meatball yet either so let me let me do that I think the pasta could be baked a little bit more and yeah and I was thinking the same thing too so I said 20 to 25 minutes on the baking I only did 20 kind of in a rush here I would probably do that another five more minutes and the recipe will say that for you guys those meatballs are incredible I know these I love these kind of Meatballs yeah I'm not looking okay this is hard just be honest that's all we ask of you to be honest that's not a 10 I can tell technically this is an eight and a half but it's it's better than an eight and a half and better than an eight in three-fourths so I did nine minus one half because it just sounds better that's an eight and a half then James yes could I do like eight and um eight and nine tenths sure no I'll just give it nine thank you buddy can I finish this yes you can finish it and that's ultimately the real score is whether he wants to finish it whether he wants to keep eating it [Music]
