hi i'm tom rushing from stavis seafoods and today we're going to take a look at a beautiful easy to prepare versatile shrimp argentine reds the argentine reds live in deep cold water so they have this very delicate texture and sweet taste almost like lobster they have a higher moisture content so they cook up quite quickly in almost half a time of warm water shrimp so if you overcook them they will shrink up they have this really nice red color and these very thick shells as we know wild caught seafood is always prized for its natural robust flavor the american palette is accustomed to bland firm textured seafood i've often referred to cooked shrimp as just a vehicle for cocktail sauce however because of their delicate texture and sweet flavor these shrimp are sold at a premium in europe here in the states though we have yet to appreciate the unique experience of these delicacies and they're actually sold at a discount here these shrimp are a great value and a great eating experience let's cook some up tonight we're going to throw these shrimp on the barbecue so what i'm going to do is i'm going to split the backs and butterfly them and then throw them on the grill so you remember when i said that they had a nice thick shell what i like to do is i use just a pair of scissors just to cut open the backs clean out any of the sand vein that's inside there and then we'll butterfly it now if you don't want to go through that hassle of peeling and veining and cleaning that shrimp yourself status seafood also offers this frozen brand one pound bag of peeled and domain trim all you have to do is just thaw it out and cook now that we have all this shrimp butterfly you like to put some olive oil on the outside just so it doesn't stick on the grill and then we'll flip them over we'll put some olive oil on the flesh side again so they don't stick some sea salt i like putting on minced garlic and any kind of seasoned pepper you want to put on there [Music] okay we're going to throw the butterfly shrimp on the grill i like throwing flesh side down first so they have those nice grill marks now remember they cook up really quick so you don't have to keep them on the grill for very long you only need to cook them for about five minutes [Music] you always till the shrimp are done when they're nice and white i'm just going to cook them for a couple minutes on the other side [Music] there you have it nice beautiful barbecue grilled shrimp [Music]
