The water only appears to be standing still because of the frequency of the sound wave is the same as the recording rate of the camera.
You experience the same effect with car rims appearing to stop and the spin backwards, this time due to your eye.

I think it's worth noting that if you looked at this in person it you would just see a stream of water.
The reason this happens is because a camera record in 24 fps (meaning it takes 24 pictures every second), and the frequency of the wave is 24hz, so it's only taking a picture at a certain point in the wave, making it look stationary.
