[Music] scrambled eggs they're the MVP of any hearty breakfast but on their own they can get boring and repetitive so I'm sharing some fun and super easy variations that you can try to transform plain scrambled eggs and to and out-of-this-world morning meal that you can look forward to cooking really isn't that hard it just takes a little creativity to keep everyone happy this is Cece Rowley meets behind the camera and I'm Dzung we live in LA and I love sharing my approachable family meal ideas with you we're all busy people so if I can whip it up from my piggy family quickly so can you whatever you make though just be sure to mix mix mix our first scramble will transport you to a bistro cafe in Paris this one only uses about five ingredients and takes minutes to make not fussy but certainly delicious so I'm going to start by cracking our eggs into a bowl this is gonna be the same for most of the recipes and I'm gonna use three eggs for each I like cracking my egg on a flat surface so that the shells don't crack into a bowl and with my whisk I'm just gonna mix mix mix I love you eggs any time of day they're full of protein they keep me full and they pretty much go with everything so if you notice I didn't add any water or any milk to the eggs to make it creamy but what you're looking for is a cohesive mix between the egg whites and the egg yolks and this looks good the consistency of your scrambled eggs is really a preference based thing I tend to like mine a little bit on the soft and runny side whereas era C and Nate I know likes it on the super cooked and like a tamago type very firm and almost dry but here I'm gonna show you how to make soft velvety scrambled eggs aka perfect so in a pan on medium to low heat I want to keep the temperature very consistent not too high I'm gonna add half a tablespoon of butter I'll let it get nice and melty now we'll add in our three whizzed eggs and with my spatula I like using the silicon-based ones so that they don't scrape the bottom of my pan and the name of the game here is to go low and slow as it starts to cook I'm just gonna take my spatula and gently scrape the bottom of the pan and let the egg kind of curdle up and form ribbons once it looks like the eggs are about 3/4 of the way cooked I like to turn off my heat and let it finish up in the pan like this and now we add our unique seasonings here I'm gonna add a pinch of salt a little bit of black pepper about 1 tablespoon of our goat cheese make sure the goat cheese is at room temperature or softened at least because it makes it a lot easier to cook with maybe I'll add one more tablespoon some smoked salmon and just fold everything over and mix it up making sure that the goat cheese is nice and melted this looks good so now I'm gonna plate it since we're going for a French bistro theme I wanted to put it in this little souffle ramekin now we're gonna top it with some green onions just a little bit for color I served it with the French baguette that I've already toasted it's like perfect medium for this Bon Appetit treyvion the smoked salmon gives the eggs a nice salty smoky kick and then the creaminess from the goat cheese just adds so much flavor and texture to the overall dish one more bite and then we'll move on our next one is inspired by the classic pasta carbonara except this one is gonna go on toast so with our carbonara scrambled eggs we have a slight variation I'm still using three eggs here cracked into the bowl but I'm gonna also be grating some Parmesan cheese about a quarter cup I'm using Parmesan but if you can find pecorino that would be more authentic to make this I'm gonna heat my pan to medium-high heat and cook off the bacon until it's nice and golden brown about three to five minutes if you guys enjoy the pans that I'm in this video I'll leave links to them in the description box below then I'm going to remove the bacon and then using the reserved rendered fat I'll add in one clove of garlic I'll let the garlic cook for about a minute until it's nice and fragrant for this one because I want to make the eggs nice and creamy it's gonna go really fast I've already turned off the heat so that it doesn't cook any further so we're just using the residual heat to two pegs halfway through I'll add in my cooked bacon and continue until it's nice and creamy this literally took seconds and because I want it to remain nice and creamy see how there's still a lot of uncooked stuff I'm gonna take it off heat and just let it finish cooking like this I'm gonna add the eggs right on top of the ciabatta it's totally fine if it overflows a little more pecorino dash of black pepper and there's your carbonara toast or sandwich I'm gonna eat as a toast though Cheers it's still nice and creamy and the pecorino cheese added that saltiness mmm and the bacon as well growing up in an Asian household it wasn't unusual for me to have my eggs with rice so this one was inspired by my childhood a little bit of soy sauce sesame oil and a hint of sugar and honestly it transforms your eggs with rice I'm gonna heat my pan up to medium-high and add half a tablespoon of butter I'll let it get hot and then I'm gonna add one clove of minced garlic I'll saute it for about a minute and then a lot in my seasoning I have a little bit of sugar sesame oil and soy sauce give it a mix turn off the heat and then we'll add our eggs you guys have also been keeping up with my blog so I have all the recipes listed on there if you want the exact measurements and like our last two just fold it over until it's nice and silky again if you like it a little bit more on the cooks I'd kind of like tamago just keep it on the heat for a little bit longer for this dish because we're not adding any other additions it's a little bit more forgiving and the reason why I added this innings in first with so that it would kind of open up and really infuse our eggs with flavor this looks so silky and velvety just give it a few more folds I'm leaving our eggs a little bit runny here so that it would seep into our rice more like a sauce okay perfect let's plate this baby so I have my bowl of steaming hot rice all ready to go and now I'm just gonna pile on my eggs but wait we're not done I'd like to top it with a little bit of sesame seeds toasted and finally some roasted seaweed I'm stealing this one from Eris see the baby shark she won't mind too much I'll just grab a few I'd cut them up in the strips right on top comfort and nostalgia all in a bowl now I made this for breakfast and I grew up eating stuff like this for breakfast but this could certainly be a breakfast for dinner type of meal too our next one is inspired by LA's famous taco trucks except we're making a scrambled breakfast version and it's one of my favorites so we're going to start by cooking up arteries oh and kimchi first in my pan I'm gonna add a little bit of chorizo so we're just gonna take my spatula and really break up the chorizo so we get like nice small grounded pieces now I'm gonna add in our chopped kimchi and cook it up until the juices evaporate this smells a little bit pungent but I assure you it's gonna be so delicious just the mix of the Trevizo with the funky kimchi I don't know it just it just reminds me so much of la la cuisine just like a melting pot of flavors once it looks nice and caramelized I'm going add in our three whisk eggs in same thing we're just gonna gently fold it over now this one if you want it a little more cook the eggs a little bit more cook you can totally do that because we're gonna be adding it to a taco and I prefer it to be a little bit more fluffy this looks and smells amazing honestly Wow so here I have my taco station setup I love having it with handmade corn tortillas I mean obviously you guys probably don't have time to do that but you can always buy premade tortillas just I like the Street taco size because they're like the perfect size for breakfast lay them down now I just add a scoop of our scrambles to each taco and then for the toppings I just like to keep it simple a little bit of cheese salsa and green onions and that is perfect breakfast taco so excited to try this [Music] honestly anything wrapped up in a warm tortilla is gonna be delicious but the egg mixed with the kimchi and then the chorizo you get a hint of spiciness and a little bit of like Tang eNOS from the fermented kimchi if you're ever looking to incorporate more greens and vegetables into your breakfast that's not a smoothie let this one be the one you try it's a scrambled egg with a fresh and simple garden veggie stir-fry I'm going to add a drizzle of olive oil to our pan let it get hot and then I'm gonna add our mushrooms I have like two mushrooms that I've sliced up here I'll cook it for about two minutes until it's cooked through and then I'm gonna throw in our mixed drinks I'm actually using super greens here it has chard kale and spinach so oh good stuff for you but this one cooks fast and really only just tossing it in to get it nice and wilted it'll just take like 30 seconds then I'm gonna remove it add it to my bowl and then we're gonna cook our scrambled eggs I'll add half a tablespoon of butter let it get melted and then we'll pour in our three whisked eggs for this one the consistency I'm looking for is probably like a more fluffy scrambled egg not creamy and velvety like the last few that we did but a little bit more on the cooked side so I'm just gonna continue scraping it and then now I'm just folding it over like this and fluffing it up and breaking it apart fluffing it up now I'm just gonna slide my scrambled eggs right into the bowl just break it up if you want it took a little bit more scrambled that's good and then for more vegetables I'm gonna add some cherry tomatoes for a pop of color some sliced avocado fan it out make it a little more pretty and for some extra flavor a sprinkle of fresh Parmesan cheese and our everything bagel seasoning let's get some mushroom [Music] this would totally be another breakfast for dinner option imagine having this for breakfast though
