in case you don't know our mission here at sorted is to get people into the kitchen talking about and cooking great food because of this the guys at Tesco have asked us to take some everyday ingredients use them to create three incredible dishes [Music] this week we're looking at chicken breasts now we know that there are loads of chicken recipes already out there but this time we've picked some absolute winners winner winner chicken dinner really winter yeah did it why would you even say that I'm cooking up some chicken teriyaki skewers with an awesome crunchy salad I'm making a lemon and sage roasted chicken breast with a potato and pea salad the first one baking and well-being inspired chicken breast with pervy discus are you ready because this is gonna be a little bit amazing and a little bit speedy it's a really quick cook it starts with our chicken I'm gonna do butterfly it out bash it between greaseproof paper and spin it with some amazing flavors am i doing that it's gonna cook quick it's gonna take on more that flavor [Music] there we go looks good it does more importantly it's nice and flat so now we can add on our flavor huh new favorite ingredient mine rice our new basically hey paddy from Batman no well this is it's a really nice spice blend the translates to top of the shop which basically means all the best spices in one you only get your hands dirty I'll pour and rub that into our flattened out chicken this is the squeeze of honey which helps just to sweeten it and that caramelizes we cook the chicken actually delicious get both sides of the chicken and a generous pinch of salt in this stage as well get a nice hot griddle pan ready for our chicken uh-huh now obviously we're cooking this on a griddle but you could just as if you doing a barbecue or something like that slice a lemon and cut them into thirds well that's going to go into the pan mix the chicken once you've turned it over next up chicken stock goes into the pan to blow it away with the chicken and then that will go over our couscous to cook it nice right for the couscous without going to serve with our cha chicken grab yourself any container right fill it with couscous and add that into the bowl yeah then remove the chicken and the lemon from the pan and use that hot stock just do the same volume into the couscous no cooking no time at all superb don't want to stir it or leave it leave it as it is give it a stir once it's cooked and fluffy yeah in the meantime I'm gonna chop up all of our fresh herbs some pomegranate seeds get those out on the fruit and they can all go in as well and then the sexiest couscous you've ever seen but as if that's not enough remember those caramels lemon squeeze that in last minute and then serve the whole thing up the caramelized lemons taste sweeter than normal lemons yeah cuz what you've done is you've got rid of all of that juice and sugar and cameras right right right yeah yeah but I'm a taste it's better than a lemon I'm not going to say it's nice but it's gonna be better than a regular lemon yeah it's still bitter bitter sweeter but it's now going everywhere about chicken to risk that onto the plate chef bayonet soy twist and paralyze lemon not the one that you've sucked Mike there we go that is al Baraka inspired chicken with her B and pomegranate couscous sorted [Music] now for some lemon and sage roasted chicken which is like a family favorite when you think of roast chicken you think the big family meal we need a summary twist with amazing potato salad so new potatoes chopped up and ready to go into cold salted water water boil simmered for 1215 minutes and then they'll be cooked while the potatoes cooked let's look at chicken breasts so two of those if we season obvious salt and pepper and place them into a frying pan with foaming butter plenty of butter get a great color on the breasts why once it's frozen but it's not about the fact that it's got to be foamy as tibetans could be hot and when it's hot it does food flavors that go into the chicken now we've got some fresh sage leaves you could use dried but fresh is so much better so we can just pick some of those and just throw those in is there a particular reason we're going for stage so it's just very classic with roast chicken okay sage and onion sage and lemon and we're gonna lemon today a bit more summery to the zest of a lemon as well oh that smells great once it's nice and sealed on one side turn it over look at that that's why the bus should be foamy that amazing color at this point top tip squeeze in the juice of a lemon and a splash of water into the pan before it goes in the oven and as it roasts it keeps the chicken super circulate so you go a lemon okay with water and then into the oven 200 degrees Celsius about 10 12 minutes [Music] while the chickens roasting in the oven and our potatoes are boiling let's talk about peace let's talk about things very very simple Petit Pois just defrosted they're good to go as soon as you're happy if it takes the cooked add the peas in just like 30 seconds because these essentially steed warming through and then drain those by which time the chicken be done goes back in 12 minutes with the potatoes cooked and drained we're giving them a few minutes just to cool off but they're still as you can see hot and steaming now we can our gave up extra-virgin olive oil a dollop of mayonnaise an equal quantity salt and pepper and that's a hot potato salad good to go it's important not to throw the mayonnaise straight in because otherwise it's gonna curdle so that's why we've let the potatoes cool down just a little bit awesome chicken we're gonna take we've let it rest now so time to carve it are you doing and since literally slippers slippers that's right plate up where it's still nice and warm little bit of fresh mint to this would also be delicious hopefully got plenty of sage in our chicken make sure you don't want me to go and get a sprig of it I'm good he's changed super suckling because the lemon juice finish it with some gorgeous sage butter and that's our lemon and sagebrush chicken breast [Music] unfortunately Ben and I are going to make some awesome chicken teriyaki skewers and sober with a delicious crunchy salad so like all the rest the recipe is going to start a couple of breasts all we need to do is chunk them up into pieces to put onto our skewer place the chicken chunks in traval and squash our some teriyaki sauce it's kind of sticky soy glaze yeah it's awesome later on we grill it and we add some sesame seeds with our chicken chunks you can cover it and put it in the fridge and leave its marinade for a day or so along the better it will help to tenderize the chicken actually because the sauce already reduced yeah it's kind of doing what he's doing otherwise do it now metal skewers good top tip because as they heats out on the Barbican of the grill they're cooking the inside out whereas wooden skewers set on fire yeah pretty much if you're using wooden skewers yes soak them in cold water because then they don't burn and we're gonna cook these under hot grill but for about three or four minutes turn them half way after a minute or two that can be done yes sir to serve with our chicken skewers a very simple crunchy salad three vegetables all raw we've got more to radish and a carrot needs to be peeled all sliced up nice and thin and toss together an amazing dressing but if we just set the challenge to Jamie of cutting things thinly the only thing is you can take the time things like much to really easy because they're already that kind of shape just cut them into four strips that way radishes on the level base and then slice really thinly to finish off the salad a very simple dressing we've got soy sauce we've got a little splash of mirin and a squeeze of honey mix them together toss the vegetables in it and it's job done [Music] it's all about these dimensions these colors these crunch so just transfer it to a bolt ah please look incredible and down there and while they're still super hot a little sprinkle of sesame seeds they'll kind of stick to it I smell delicious sugar the transfer them to your bowl with salad get some height on it that is our chicken teriyaki with a crunchy salad salted how awesome do I look pretty weather relation tuck in yes I'm going for the couscous Mike your lemon shake-up is incredible I want the official verdict on this Russ how honey now it's cooked what do you think I think he did a really good job of training Bevin
