#167 Making Jamie Oliver's Miso Ramen | But Uncle Roger's Favorite

wow after many hours it's very white soup now okay our misotara is completed the soup is greenish so it's had time to absorb all of the delicious flavors of the ginger and garlic sorry ambrosia this welcome back to another ramen episode of tomodachi table so jamie oliver made him but today love my noodle and we're going to take most of what he used and create our own ramen and if you want to see more videos like that feel free to give the channel a like and subscribe let's try cooking love them step one is to make soup and that's gonna be all of these things we're gonna use chicken today yes so that more tomodachis can enjoy this delicious ramen so first let's bring our water up to a boil first of all chicken wing next three chicken carcasses we're gonna boil this for five minutes okay so see all that scum that's flowered to the top we're gonna rinse this chicken out and then put in fresh water and boil it again so here's our washed chicken and now we're going to refill it with water a lot of steak yes many steps to finish okay already one hour passed so next we're gonna add our aromatics three pieces of garlic and the ginger two shiitake mushrooms and one piece of kombu kelp right so the soup has been simmering for an hour or so so we're gonna remove this kombu so that we can put it on a heavy boil be sure to skim any impurities that float to the surface every now and then as well one day later wow after many hours it's very white soup now and what you want to do is every now and then just take your spoon and sort of mash up the bones and meat all right so let's strain our soup okay so this is our completed soup base it's nice and milky we're gonna make miso tale today we're gonna make a special tarte with three different kinds of miso last time we used the koji is for the beef steak and we did the marinated just like google foods first of all let's mix ingredients together garlic and onions japanese sake blend it all together to make the paste let's do our koji and soybean miso white miso red miso sugar chicken bouillon oyster sauce [Music] fish sauce milling ground sesame and we're going to add a pinch of salt lastly branded ingredients [Music] okay our misotara is completed now you can leave this in the refrigerator overnight ideally or you can leave it even up to a few weeks so it's nice to have in the refrigerator steer the vegetable into the ramen soup and miso ramen is actually a little bit different from normal ramen because you build the soup while you stir fry the vegetables so this time lots of garlic a lot of garlic more than i thought actually but it's gonna make a tasty broth i think this is our chicken oil i'm gonna add a few cloves of sliced garlic and let's just slowly bring that up to heat until they turn golden brown okay so the garlic is nice and golden let's take it out okay our garlic oil is complete two big spoons of oil so this is the garlic chicken oil that we made to that we're going to add a spoonful of minced garlic minced ginger and let that stir-fry next is our ground chicken meat next a small handful of bean sprouts chopped onions our julienned carrots and some cabbage [Music] we have to use two spoons one spoon for three liters of water is not enough well there you go okay so the oil is coming out from the sides here and it's starting to smell really nice in here it's time for our chicken broth [Music] okay so let's bring the soup back up to a boil heat off and soup is finished final step is to make gunch and so what we have here today is very traditional miso ramen toppings so chicken marinated you can watch the last video we already published this one too but first let's cut our seasoned egg soft yolk please ah yes yes so this one is thigh and this one is breast so it's had time to absorb all of the delicious flavors of the ginger and garlic so first we want to get rid of the string yeah good color nice and thin too last step is our sapporo ramen so we take a big handful like this make sure they're separated and put them in our boiling water so we want to boil these for about maybe two to three minutes depending on how hard you like your noodles so our noodles have been boiling for two to three minutes they look done and we don't want to dilute the soup so we want to drain the noodles pretty well this is not soba noodle oh please don't use soba for this you need ramen to get that nice rich flavor okay ramen into the bowl okay miso vegetables steamed fried let's give the noodles a little toss in this delicious broth and we'll top with some sweet corn a few slices of menma some woody mushroom our cha-shu our sliced leeks and lastly a little knob of butter and almost forgot but very important our delicious eggs and there you have it a delicious bowl of miso style ramen so this is the jaime vs tomas table and we made our very own miso ramen i think so much different so you can see but even though it took maybe about the same amount of boiling time four hours right yes four hours and it smells really really wonderful and we can't wait to try this so first i want to try this soup it's got this creamy texture from boiling the chicken for so long and that miso wow oh this is more than expected it's not right but not heavy it's a middle it's good and there's a lot of fresh vegetables in there that are not sad balls oh i see so it almost tastes like a chinese sort of stir-fried vegetable dish but inside this really rich and silky miso broth sorry ambrosia this is healthy that is good wow so many different textures and the wood year mushroom is crunchy the noodle's perfectly done wow so if ankulogo react maybe we should have made soba noodle ah we should have put on some of that buckwheat noodle inside but i don't think it will match or taste good together this is not jamie ramen oh luckily this is not white joshua oh i would be so sad if it was so you think the miso ramen was a success i think yeah so what do you think tomodachi's
