when three two ounce balls of meat are smashed thin to create a delectably meaty crust due to the mayo reaction and then paired with the gooeyness of american cheese the smokiness of bacon and the tang of burger sauce what more can you ask for in a burger made in 15 minutes pickled onions for one but luckily i have those too hey everyone i'm ethan a home cooking nerd who likes to find better ways to cook and share them with all of you so i probably make some semblance of a burger at least twice a week on average most of the times they're definitely on the healthier side of things but it's saturday and i was feeling a little bit indulgent so let's dive in to start get out a slice of thick cut bacon cut it in half and place it on a cold griddle turn the heat to medium-low and let it cook slowly the bacon is throated on a cold pan so the fat can slowly render and the bacon can get crisp if it's started on a hot pan the bacon will curl up and have to be removed from the pan sooner or burnt this results in gummy bacon instead of a nice crisp bacon with a slight chew while the bacon cooks prep the remaining components for the burger sauce mix two parts mayo one part horseradish one part hot sauce one part mustard one part honey a sprinkle of garlic powder smoked paprika and seven cranks of black pepper stir everything together and then give it a taste and adjust any seasonings as you see fit next very finely slice some romaine lettuce which i find best for burgers as it stands up structurally to the weight and heat of the burger instead of wilting like green leaf or butter crisp lettuce might also gather the pickled onions the slices of american cheese and your burger bun of choice i'm using a brioche bun this time around weigh out 6 ounces of 80 20 ground beef or whatever beef you like and divide that into three 2 ounce loose packed piles loosely packing the beef will create more texture when we go to smash them let's check in on that bacon so the fat has rendered out leaving us with crisp meaty bacon which is my preferred texture mop up a little bit of that bacon fat with the buns and then place them on the upper griddle to start toasting place the piles of beef down on the hot griddle and add a nice little pinch of salt and then smash straight down to create maximum surface area with the griddle as this is what helps create the crust this winco tkp41 is the best spatula that i've found for smash burgers due to its short and wide area compared to longer metal spatulas if you do have issues with sticking you can always put a piece of parchment paper over the top before smashing let the burger crust develop for 30 to 60 seconds meanwhile you can clean that beef plate then scrape the burgers from the griddle and flip them over once flipped immediately add the american cheese to two of the burgers to start melting after another 20 to 30 seconds construct the meat and cheese tower then let's assemble to start place the bottom bun toasted in the bacon fat and add a smattering of the burger sauce followed by the shredded lettuce the crisp bacon and the burger cheese tower finally i like adding some pickled onions to help cut through the meaty layers and then finish that with some more sauce on the top bun and place it up on top let's take a look at that cross section a juicy meaty burger with fresh components to balance it out it is one of my favorites let's do our taste test legitimately i've been salivating for the past like four minutes let's just let's just go an umami bomb with all that the bacon in there the browning we got on the burger and honestly the textures are probably the big reason what sets this apart from you know like a typical burger you know we got the pebbliness of the ground beef in there and then mixed with three patties so with three patties we get that browning on each layer and then you know since they're not as thick we replace them that juiciness with the fattiness and gooeyness from the american cheese which just pairs perfectly i mean i love american cheese if you don't like american cheese use whatever cheese you want to and then the bacon starting at low letting it slowly crisp up and then it's this perfect i don't know how to describe it because it's like crispy and like chewy that's like the perfect bacon for me and then round out with our fresh components with the lettuce the romaine just sliced very thin some pickled onions to help cut through the fattiness and then lastly our burger sauce pretty simple just throwing random condiments that i had in my fridge together to be honest i didn't really have a recipe for that one i was just throwing stuff together but it always comes out good you know when it's mayo and a couple other things so hopefully you guys enjoy
