Very cool video!

It's 胡辣汤 (hu la tang), we can translate it as "pepper soup". The whole doughy thin he was making at the beginning is wheat gluten. He takes regular wheat dough and wash the starch away, with the starch water saved to thicken the soup. The gluten that's left is added to hot water as the protein base.

He also added ingredients like cellophane noodles, seaweed, peanuts, firm tofu strips, a bunch of spices including white pepper. The soup will somewhat remind you of "hot and sour soup" from Americanized Chinese restaurants, without the sour part.
