Welcome everyone to my channel Today I'm preparing a very Italian dish Those meals that always bring back good memories Gnocchi. They are a classic not only in Italy but also in Argentina and other South American Countries And is that so that in Argentina they've dedicated a day to them Is the 29th of each month. And if we don't make them at least we remember it's Gnocchi day. I'll prepare a classic meat ragú to go with the gnocchi and I'll use fresh tomatoes. I have here 2 Lbs of fresh plum tomatoes I'll make two small cuts on the bottom like this then place them in a pot with hot boiling water for about 10 seconds. Then I'll remove them and put them in ice cold water to stop them from cooking Now I remove the skin which now should be very easy to do. Then cut them into small cubes You can remove the seeds if you want to Once they're all chopped,put them aside And here I have 1 Lbs of beef Any stew meat will work for this recipe I'll cut them into big chunks and remove some of the fat. season with salt... And I also use one Pork Sausage Pork meat and sausages always add more flavor to stews and sauces I'll remove the skin and cut it in half. Then I'll chop and Onion and one Garlic clove, I'll just cut it in half. In an big pot, already hot, I'll put some olive oil and then add the chunks of meat And once I put them in I will not move them until they start to brown Otherwise if I start moving them around they will release to mach liquid and the meat will look boiled I'll add two Bay leaves...and the Garlic Season with 1/4 Tsp of fresh ground black pepper and once the meat has brown all over I'add a glass of red wine and now I can stir the meat to deglaze the bottom of the pan I let most of the wine to evaporate and then add the onions I let them cook until they're translucent then add the chopped tomatoes I also add some water and in small glass I'll mix 2 tsp of tomato paste with some of the wine and add it to the sauce. and then a bunch of basil leaves Then cover the pot and let it cook gently for 2 hours For the Gnocchi I'll need 2 lbs of potatoes preferably the waxy kind (like Yukon Gold) I'll cook them with the skin on so they'll absorbe less water I place them in a pot with cold water and once the water boils, I cook the potatoes for 35 to 40 minutes until they are soft and when you pierce them with a knife they slide off easily and now to peel the potatoes Peel them when they are still hot the dough for the gnocchi should be made with the potatoes still hot But not too hot otherwise the steam they release will add humidity to the dough having to add more flour The more flour we add the tougher the gnocchi will be Make a pure with a potato masher and let the steam out and when you see that no more steam is coming out of the potatoes add one egg yolk mix it in season with sal and black pepper and Nutmeg to taste mix again... and now add the flour I'm using 250 gr of all purpose flour but I don't add it all at once I do it gradually, I may not need it all work the dough until it comes together without kneading it You don't to over work it so it will become elastic besides, if you keep kneading, the dough will keep absorbing more flour form a ball dust it with flour and cut a piece and make ropes the thickness of a finger and then cut into small pieces then form ridges using a gnocchi board If you don't have a gnocchi board you can use the back of a fork to make the ridges Afer two hours of slow cooking the meat ragú is ready I'll ladle some in a saucepan and I like to brake apart some of the meat using a spoon The meat is so tender it comes apart easily Meanwhile, in a pan with plenty of salted boiling water cook the gnocchi in small batches Remove from the pot as soon as they start to come up to the surface Put them with the sauce in a pan or a serving dish and toss to coat the with the sauce Serve with some of the shredded beef on top and some freshly grated Parmesan cheese So I hope this 29th you have a nice and delicious plate of gnocchi And I really recommend this Meat Sauce Easy and inexpensive but truly delicious I hope you liked this recipe.
