the San Marzano tomato this is definitely becoming if not my favorite my second favorite tomato [Music] so San Marzano replaced the Roma on our Homestead we've also tried the Amish paste tomato all of these great paste varieties but the San Marzano is something that is definitely stuck with us and has impressed us year after year after year previously I would have said in a survival situation the Scotia was my favorite tomato and now I'm not so sure after a couple years of growing these San marzanos but we did do a video on the Scotia tomato as well which we'll link above here because they are amazing Tomatoes too I'm going to show you just how prolific these Vines have been this year we said less is more this year we planted way less on each trellis than we ever have before and we have way more Tomatoes than we know what to do with the one thing I will say about the San marzanos we have them on a four foot trellis here and they are watch there's going to be a whole bunch of tomatoes fall off but they are monsters uh we're definitely going to be kind of advancing to a taller trellis for these next year well as Stephanie mentioned the Santa marzanos have really become a staple for us but we made the switch to these and we like them a lot better than the Roma types they still are kind of a Roma type tomato but I'm gonna say it they're fairly sweet they're very meaty and as you can see from everything that's around us here they're a heavy big producer and quite consistent I think that's an important fact to think about with these because when you get something and this is a tomato of course but when you get something like a tomato variety that you really really like for its practical qualities that really is sort of the perfect time to really think about things like seed saving and keeping that pure for those properties which is exactly what we've been doing with these uh San Marzano Tomatoes no I am not about to start juggling these Tomatoes not that skilled but what I am going to do here is I'm going to have the boring conversation with you about just what you should look for when you're selecting tomatoes to save seed on your San marzanos now in my opinion this or this are perfect San marzanos for saving seeds now as you can see there is a significant size difference in those but the one thing that I always am looking for When selecting my tomatoes is the pointy bottom you'll see a lot of the times that they end up curled under which I'm going to show you in a moment or even going bulbous kind of pear-shaped those are not ones that we select for seed and it is important to try and keep them true to what they should be so size really doesn't matter but they should have the pointy bottom nice little bumps on the top so here you have the pear sort of shape that I was talking about I have a feeling that probably is some sort of environmental type thing that's just cause it to stunt a little bit it's still gone a nice bulbous tomato but not something that I would save seeds from and there you can see the little indented divot at the bottom if you look at it this way in my mind this looks a lot more like a roma tomato Aromas tend to have that little bit of a rounded bottom rather than the pointy bottom so again for us this would not be a seed saving specimen but still fantastic for using to make all your pace but that's just a little quick rundown there's three little specimens there that have everything ticked as far as the boxes go just completely different sizes and if I was selecting and I had enough variety I'd be selecting from this one all the time of course regardless of what they really look like on the outside I think what makes these different from other varieties or at least good in our mind is the fact of what's on the inside when you cut these open you'll see they're very meaty they're very thick walled and they almost have to me almost like a pepper like structure they're kind of hollowish on the inside as opposed to being really juicy like something like the Scotia Tomatoes these are very dry and they don't have a lot of seeds and that's kind of why we've brought up the thing about the seed collection because you're going to have lots of tomatoes to select from but you're going to want to pick from those few that are really nice because each tomato isn't going to give you as many seeds as most types of tomatoes do but this right here is what it's all about these suckers are so prolific they produce so much poundage of fruit it just is mind-boggling we are harvesting today you can see here the kids are hard at work already as we're filming this video and I anticipate we're gonna pull at least 50 pounds off these because it's been about three days since I've harvested from here but we are getting 25 pounds roughly a day and certainly trying to come up with some different ways to use them and I'm going to kind of give you a little rundown of some of the products that we use these for when we get inside and weigh what we've brought in today well there we go we've got them in so our two little baskets here of uh San Marzano tomatoes from today's Harvest with 76 pounds which is not that bad so we're inside now with a total of 76 pounds of San Marzano's harvested today and there's still more one thing that we love to do with the San marzanos as you've seen in numerous videos already is freeze them because when you're using a tomato for Pace or sauces or things like that that you want thicker cuts down on the cook down time immensely so definitely a good tip freeze your Tomatoes first but what do we make with them numerous things we use our San marzanos for marinara any other pasta sauce ketchup barbecue sauce Curry tomato paste the list could go on and on to be honest you could make just about anything out of San marzanos especially if you want them a nice thick deep red color but uh not so good for juice a bit that's probably about the only thing juice and soups that you want to be a little bit more liquidy I probably wouldn't recommend the San Marzano for that but otherwise it does just about it all and one of the best ones for the San Marzano is charred salsa this is our go-to salsa I don't make any other Salsas anymore so if you're interested we'll link the recipe video above for this because it is a family favorite and a favorite with just about every friend that we have now that's kind of a brief rundown look into uh the San Marzano tomato and our thoughts on it uh definitely we have uh quite a few videos that have included products like marinaras and pizza sauce and things like that that are made from these Tomatoes but one thing to remember is they don't have to be used as a paste tomato I just recently had a subscriber who mentioned uh that her family loves these as slicers on sandwiches and I have to admit I'm in the same boat because I don't like a juicy sandwich I like a sandwich that doesn't run all over the place when I eat it so after this if you haven't tried San Marzano's and you're looking for something that you can make into a lot of basically preserved products or you just want to try something a little different as far as Tomatoes go definitely give them a try they're one of our favorites and uh most people we've talked to who have ever tried them usually are converted to uh this variety as well so
