[Music] freezing milk the way that i've used for years now stay tuned because i have a new method that i'm absolutely in love [Music] with [Music] historically if you had a lot of milk one of the things that you would do would be to make cultured milks something like yogurt kefir most historical ball would be clabber you can check out how to do that right here in this video but you know that doesn't leave you with something that you can drink milk wise or put in your lattes and it only lasts for maybe a couple of weeks that way then you had your hard cheeses which is a great way to preserve your dairy but again you don't end up with anything that you can actually drink that leaves us with some of the other methods that we have today the first one of those is the canning now i've got to say canning is not approved by the national center for home food preservation as safe and regardless of whether you choose to listen to that recommendation or not when you can melt because it's a low acid food you have to pressure can it and canning milk under that type of heat changes the flavor and the color and it's just not great it's a totally different thing by the time you're done then you have dehydrating and i love dehydrating but in a home setting you can't dehydrate milk fast enough to keep it from adding bacteria whether it's good bacteria that you don't mind drinking or it's a bad bacteria that's going to spoil your milk either way it's going to change the flavor of your milk we want to avoid dehydrating milk at home and that brings us to freezing milk which is the way that i've used for years now stay tuned because i have a new method that i'm absolutely in love with but first let's talk about freezing milk freezing milk is really easy to do as long as you have the freezer space you know i've tried using all different methods of containers all different types of containers for freezing milk and i've really found that the best answer is a good old ziploc plastic bag go with the actual ziploc brand because it's the only one surprisingly enough that will actually hold the liquids in reliably in the freezer without leaking all over the place you guys know if you followed me for very long that i would really prefer not to store my food in plastic especially a thin plastic like this i just don't think it's great but in this case it really is the best answer before you fill your bags up make sure you label them right away with the date so you know what you're putting in here and how old it is a one gallon bag will nicely hold a half gallon of milk and to do this i usually set the bag into a casserole pan and then carefully just pour the skimmed milk into the bag now the big con with the frozen milk and freezing milk is that the fat globules in the milk starts to change texture and when you defrost it it doesn't ever quite come back to the same texture so it's really best if you use skimmed milk for this or at least if you're buying store bought and you want to store store bought use the homogenized milk now we want to push out as much air as we can and seal it really really well now we're going to place this flat into the freezer and let it freeze solid when you go to defrost this you're going to want to immediately cut it out of the bag lay it back into a casserole pan to defrost in the refrigerator at which point you'll be able to pour it back into a jar to use for baking or for drinking just plain now the texture can be even better and improved if you go ahead and heat it just slightly to just about warm to melt those fat globules and then shake it back up and serve it that way milk like this will last in pretty good condition in a deep freeze for about six months maybe even nine months in good condition while i've been freezing milk for a few years i have just found a brand new method of preserving my milk that i'm absolutely in love with it makes the milk taste absolutely just like fresh milk when you go to use it i'm really really excited to share this with you guys and that is freeze drying the milk you guys i know that freeze dryers are expensive but when you can rehydrate your good raw milk and it's still as nutritious as it was when it started and it tastes the same this is a game changer for the homemade dairy world i am so excited about this it tastes great and it's worth every single penny of the freeze dryer itself let's check it out freeze drying milk is super simple to do all you do is you take your nice clean trays and set them in to the freeze dryer i'm gonna grab my milk and pour about half a tray's worth into each of these trays right in place there is no need to pre-freeze this just make sure you don't overfill the trays you want to go more than about halfway full that is about a quart of milk in each tray [Music] now you just put the insulating cover in place close the door lock down the pump and push the start button when you get it started you get to select the not frozen button because the milk is not already pre-frozen that is going to kick it into the mode of freezing the milk before it starts the freeze drying process and then you just wait for the machine to beef at you and tell you that it's done after it's freeze dried for about 24 hours it is ready to come out and you guys look at this you have to see this ooh that's kind of chilly look at this this is home made milk powder at its finest you guys this completely just crumbles i'm just going to crumble all this powder i'm just going to do it by hand it powders so easily and then i'm going to store this in a half gallon jar that i have used the vacuum sealer attachment for to vacuum seal it you could also put this in a mylar bag with an oxygen absorber with it so that it really makes sure that no moisture even the humidity from the air gets into it that's really important and then this milk will preserve in this form for 20 years 25 years they say at least 20 years while holding on to 95 of the nutrition i am so excited about this when it comes time to use your freeze-dried milk all you do is rehydrate it with a one-to-one ratio by volume of water to your freeze-dried milk powder right here i have a pint jar of freeze-dried milk powder and i'm just going to fill that up to that top line slowly with water [Music] once the liquid volume is all the way up to the full volume measurement of the powder itself so all the way up to that two cup mark here in this paint jar just gonna cap it down really well and give it a shake just to mix it up and then we're just gonna let this sit for a few minutes to let it fully rehydrate now obviously milk always tastes better if it's really cold and right out of the fridge so for our blind taste test i'm gonna put this in the fridge and chill it now that freeze dried milk has reconstituted all the way and it looks really good let me just give it a good shake make sure no cream has risen to the top and it just kind of looks like milk that's been shaken up really well i'm gonna go ahead and pour this into glass number three in glass number one i've got fresh milk totally fresh right from the cow has just been in the refrigerated this is the frozen milk that has been defrosted and this is the freeze-dried milk okay so let's see how it tastes [Music] well that tastes great the taste on this is not bad it's only been frozen for about a week and a half here it's not bad it doesn't taste freezer burned but the texture is really weird it's very grainy and gritty and i know that after this has been in the freezer for you know three to four months the flavor isn't all that great and then freeze dried oh i think that tastes exactly like the fresh maybe slightly sweeter i think this might be just a little bit sweeter but it's really good okay now for the real test though we're gonna call the kids down and see what they think hannah elizabeth and rebecca are going to help us taste our milk today this is three different types of milk and i want you to have a taste of each and tell me which one's your favorite okay can you take a sip and then pass it to becca and yes in our family we absolutely share cups [Music] point to which one's your favorite this one i think this one's my favorite you guys like the frozen milk which and lizzy you like this one well i don't know that that was very conclusive [Laughter] maybe we need to get an older person's opinion here and find out what they think thank you girls [Music] [Laughter] we have three different types of milk here and i need your opinion as to which one's best which one you like which one you don't like go for it just don't try not to mix up the order so you can keep them straight well i definitely say that one's best and i guess it's the fresh milk i guess this one's the frozen and it's and then this must be a freeze-dried and it's pretty good yeah that one's good you're right this is the fresh and this is the frozen and this is the freeze-dried so it's no wonder that you think this is great because it's absolutely fresh and really good but this is actually pretty good isn't it like it's really tasty and really good i'm impressed i think it's really good one last tip for you guys is that if you're going to be using your preserved milk in order to put it in coffees or to make lattes this winter go ahead and skip the step of preserving the milk and just preserve the latte instead it turns out amazing all i do is take four ounces of espresso or really strong coffee and just top that off with the rest of the four cups worth filling up a quart jar of good milk now i'm gonna go ahead and just pour this straight on the freeze dryer tray and turn the freeze dryer on freeze and freeze dry it [Music] all right all i'm gonna do is top this with boiling freshly boiled water [Music] put the lid on give it a good shake wait for just a minute and then i'll shake it up really really well to make the foam for a latte before i pour it into the cap good shake for the phone careful it's hot and look at that an instant latte you guys imagine that when you're out traveling or you know when you just don't have the time to have a
