this is my vegetable curry I don't know how to describe this the spices are so delicious heat up the olive oil then add finely chopped onion and let it fry for three minutes now add pressed garlic and grated Ginger and fry for one more minute then add curry powder ground cumin turmeric powder ground coriander red pepper flakes and black pepper and toast the spices for about a minute guys this flavor base is a concentration of flavor that is going to make your Curry delicious now I'm going to add vegetable broth a can of crushed tomatoes a can of coconut milk diced sweet potato chopped bell pepper frozen green peas and broccoli florets and don't forget to season the curry with some salt stir the veggies in the curry cover with a lid bring it to a boil and crack the top oven and let it simmer for about 20 minutes or until the sweet potatoes are forked tender now I'm gonna add fresh spinach cook them for a couple of minutes until they Wilt then turn the heat off and add garam masala give it a final stir and your Curry is ready serve it on basmati rice with a dollop of plant-based yogurt or regular yogurt a squeeze of fresh lemon juice and a Sprinkle of fresh cilantro easy right
