[Music] [Applause] [Music] [Applause] today i'm gonna teach you how to make the next level spicy vegan tuna rolls out of tomatoes if you love sushi i'm sure you love tuna but now can vegan sushi be good well i've tried this recipe multiple times and i've nailed it every single time it tastes just like fancy restaurant sushi i mean american the most important element in sushi is the rice not the fish so first let's get the rice right so for the rice you need either short grain japanese rice or medium grain california rice and if you live in the u.s you can just simply look for some that is labeled as sushi rice i'm using this traditional japanese measuring cup for rice one scoop is equal to about 1.3 us cups and that's gonna make about two rolls put the rice in fresh cold water into the rice cooker and wash your eyes by grabbing and stirring the rice drain the water and repeat the process about three times until the water gets fairly transparent now you don't want to over wash the rice three to four times should be just enough when you're done add the same amount of fresh cold water to the rice cooker along with rice that is 1.3 cups now here's my secret ingredient kombu which is dried kelp this is going to add so much umami to the rice if you don't have kombu you can just add kombu dashi but that's also optional put the kombu into the rice cooker and cook the rice [Music] next get a handful of raw cashews and soak them in hot water in the bowl they're gonna make our sauce later so set aside for now for the tuna i'm using two red beef steak tomatoes i've seen recipes using tomatoes and watermelon to replicate tuna and i figured watermelon seems to do better visually but it'll be a bit too sweet for sushi so i'm using tomatoes if you can find under-ripe tomatoes that would be better because they stay firmer and have less of that tomato flavor grab a sharp knife make an x on top of the tomatoes as well as some small cuts on the sides so that the water will get inside them and cook them put adequate water in the pot and bring it to a boil also prepare an ice water bath put the tomatoes into the boiling water and cook until the skin starts to come off make sure you don't overcook it should only take about a minute transfer the tomatoes to the ice water bath and let them chill [Music] now i'm gonna make the marinade get a bag or a container to the container add two tablespoons of soy sauce a teaspoon of optional rice vinegar a teaspoon of ginger paste or grated ginger one tablespoon of sesame oil which is going to give that fattiness and one tablespoon of mirin or cooking sake mirin is a traditional japanese sugary alcoholic condiment and if you don't have that you can use cooking sake or even regular sake instead with a teaspoon of sugar or just simply skip the alcohol add some hand chopped nori and finally add about a tablespoon of kombu dashi nori and komudashi are both made from seaweed and they're gonna add that rich sea flavor and yes that is actual seafood vegan seafood exists shake the container and make sure every piece of nori is soaked in the marinade the tomatoes are cooled and the skin should easily come off cut them into quarters and remove all the seeds and the wet stuff i'm sorry this is kind of graphic but this is just what you have to go through to turn tomatoes into a tuna like substance try not to waste any food you can save the seeds and the wet stuff for another dish dice the tomatoes into small cubes the tomatoes are soft so they're not going to be perfect cubes and that's all good toss all the tomato cubes into the marinade and mix well i'll let the tomatoes marinate in the fridge for about half an hour to an hour you can even let it marinate overnight in the meantime i'm gonna make the spicy cashew cream sauce get the soggy cashews soy milk mustard nutritional yeast and this time i'm using this mysterious hot sauce you can use any hot sauce sriracha is perfect get all of those into a food processor or blender and if you love garlic like me you can add one clove to it no more than that you'll regret and blend until smooth if you want to make it more american just add vegan mayo and ketchup which is what i did but never filmed but yes do it it tastes so good as you can see this right here was pretty thick so i added more soy milk to it later now the rice is cooked get some rice vinegar sugar and salt ready to a bowl add one tablespoon of rice vinegar half a tablespoon of sugar and just a pinch of salt and mix well and pour the mixture onto the rice and mix well with a spoon or spatula make sure you break down every chunk of rice flip the rice and try to coat all of it with the liquid so that you have very consistent sushi rice once the tomatoes i mean tuna at this point are finished marinating get them out of the fridge and squeeze all the liquid out you want them as dry as possible now you have the vegan tuna get a sheet of nori and a bowl of water and a bamboo sushi rolling mat now everything is ready it's time for the fun part let's roll the sushi place the nori sheet on the mat smooth side down wet your fingers grab a handful of rice and just drop it in the center of the nori and press down and spread the rice evenly across the nori sheet wet your fingers every time you grab more rice so the rice doesn't stick to them make it as flat as possible notice i have this 1 inch margin on the other end of the nori sheet this secures rim for the rice when rolling the sushi [Music] now place the vegan tuna on top [Music] roll add pressure here we have a beautiful roll get a wet towel on a plate in a sharp and wet knife cut the roll into even size pieces make sure you clean and wet your knife for every cut serve drop the spicy sauce on top of the rolls for the presentation i like to chop and sprinkle some chives on top black sesame and finally serve with wasabi get creative here you have the most amazing spicy vegan tuna rolls [Music] you
