I'm so excited to share this recipe with you today I am making a spicy crab sushi roll I've nailed it I'm so happy I did it it's like my biggest breakthrough ever stick around I'll show you how to make it the idea for this roll is a spicy crab roll and I had a version of this at a restaurant called schiessen in San Francisco an entirely vegan sushi restaurant and they had this crab salad equivalent there but it said tofu salad and so I wondered how exactly are they turning this tofu to be exactly like this crab salad that I'm used to seeing and like grocery-store sushi rolls or even a non vegan sushi restaurants and then just yesterday I found this in my fridge because I'm kind of obsessed with baked tofu I graded it up on the smaller setting of my box grater out insame Oh stirred it up and I was blown away it tasted literally exactly like that crab salad you get at a sushi restaurant which was just like what I was getting at shiz in and so that's why I had to share this with you today so let's grade this up and I'll show you how amazing this looks this brand Wildwood I get at Whole Foods but I'm pretty sure they sell it at you know just kinda traditional Smiths or Albertsons or Kroger's they also have Trader Joe's has their own version of baked sriracha tofu as you can see it's pretty dense it's almost like a I would say it's almost the texture of like a cheddar but it's marinated and has this thick sriracha on it it's incredible so I'm gonna grade this up here because I'm using the small side of my box grater and I'm just gonna grade this into a bowl this baked tofu can be used for so many things grate it up like this you can use this type of like crab salad and so many applications but it's going to work so well the sushi roll you could even just slice up the baked tofu use it as like sort of your sandwich meat it's just currently my tofu obsession to the grated up baked sriracha tofu I'm going to be adding some vegenaise and I'm not really measuring here probably a couple tablespoons and then because this is a spicy crab mix I'm going to be adding sriracha if you didn't want it to be spicy obviously don't have the sriracha it actually has a great flavor with just the mayo and the grated up tofu so I'm gonna mix this around and I'll know if I need to add more of the sriracha or mayo you have to trust me when I say this is just crazy I mean if you look at it here it completely just looks like what you would get at a sushi restaurants in st. and it tastes just like it - it has a sweetness to it that I thought the original is gonna have me maybe have to add a little bit of sugar or something to it but it it's already all there so now let's assemble some rolls first thing we need to do is prepare the rice now I made this rice earlier it is I've only made about a cup and a half of sushi rice it was a cup and a half dry it is sushi rice cooked on the sushi setting and I'm gonna be pouring into this bowl and seasoning it with this sushi vinegar the point of this is to help cool off the rice a bit to break it apart from while it was cooking and sticking together and to season it sushi I believe the word means seasoned rice so it's important to have the rice nice and flavorful this gives it a nice acidity a sweetness saltiness and it's going to carry the flavors of the other items in the world so just tossing this around here for a moment getting every grain covered and then I'm going to just kind of set this aside and let it cool you really want this to be room temperature when you go to make your sushi rolls I have a sushi mat here that I have just placed a piece of saran wrap over and then I have a nori sheet that I cut in half these rolls aren't going to be too fat so there's no reason to have the entire sheet of nori just gives you a little bit too much to choose so have a cut in half here and I have my rice ready to go it's nice and cool ready to be handled so I'm gonna put just say that's probably about a half cup worth of rice on there wet my hands just a little bit and I'm going to move the rice around the nori you don't want to pack it down you want to just kind of fluff it all over the nori it'll get packed down as you roll it up keep it kind of fluffy at this point and if you cooked your sushi rice right it'll just be nice and sticky already alright it's pretty much it this is a process where you want to keep your hands kind of moist everyone hates that word but keep them a little bit damp I guess so that things don't stick to you too much before I flip it over I'm going to add just a bit of sesame seed and you want to flip it over that's the reason why you want to use the saran wrap so that it removes from that sticky rice and I'm placing my tofu crab salad just down the center I am by no means an expert roller so we're all going to hope together that this works the idea is that we're going to roll this over on top and then push back as you can see it's pretty much sealed and then we're going to continue rolling it over not too bad if I can find the opening here kind of pretty so I'm just gonna set this one aside and I'm gonna make another one and then we'll cover them both with avocado let's do this one more time all right looks like I have to this one's a bit of a torpedo shape it's cool still tastes delicious now let's cover these both in avocado I have here one avocado sliced in half and I've removed the pit I'm going to try my best to remove the peel without affecting the avocado too much this is so I can slice it and just lay it nicely on top of the roll what I want to do now is slice these as thin as possible while still keeping it together all right next thing you want to do is try to fan these out try to spread them so that they are the same length as you're careful as you push down again these are really ripe so as you can see they're kind of falling apart in the center all right let's cover okay I am actually I have the seam side up here doesn't really matter and I'm going to lift it as best as I can on to the roll guess that's just some extra want to move this aside and then I will do the next one alright so it does look a little bit messy again I'm not an expert sushi chef by any means but the last thing we're gonna do is just the final shaping so we're gonna put another piece of plastic wrap over the top and just use our sushi mat to shape it up and we will be leaving this on here to slice it but just to show you what it looks like now all right it's time to slice this up that could prove to be the most difficult part depending on how sharp or dull your knives are you want to make sure that between each cut you wipe your knife off on a damp cloth things are a bit tricky here because the interior with the crab salad or the tofu salad is pretty soft the avocado being super ripe on the outside as well so this could prove to be the most difficult part of the whole process this is actually the second attempt at this here so all right looks like we're through let's plate it up I'm sure there's an easier way to do this but I'm going to just plate this as best I can in a design you can see how cute those look and I'm just gonna kind of stagger them back and forth so I'm so excited to show you how to use this crab salad that I forgot that I don't know how to really make sushi but they're all the fumbling and mistakes that I've made through this I think that I've made a pretty decent decent plate of sushi here the last thing I'm gonna do is brush these with a bit of teriyaki sauce this is just a store-bought teriyaki sauce but I'm sort of going for that kind of eel sauce flavor over the top just gives it extra bit of sweetness and just kind of drizzle it on the plate too to add a bit of kind of pizzazz last thing is I'm going to add just a bit more sesame seeds to the top here we have our finished product we have a spicy tofu crab salad covered with avocado and a teriyaki glaze [Music] before going vegan sushi was one of my favorite foods I would go have all you can eat sushi with my friends once or twice a month and have all I could eat and since going vegan I have to say my options have been very limited I can get like a cucumber avocado roll but the creative rolls and crazy things that I was used to eating just aren't available here in town there's that great restaurant shiz in in San Francisco that has the best sushi that I've ever had but it's in San Francisco and I don't live there so being able to make this for myself was truly groundbreaking and I know I'll get better at rolling in and putting it together but so far I'm really impressed with my work today so let's give it a taste it's pretty legit it's incredible a little bit labor-intensive but that crab salad with the tofu is so good and that spice just hit my palate creaminess from that avocado and the the vinegar and the the flavors from the sushi rice really come through as well from if you guys
