A few less obvious points about this:

• Music Engine a performance group made up of professional musicians dedicated to playing game music. You can really hear the dedication to game music in how the arrangements are made and the professionalism in how they play.
• The are many ensembles/orchestras like this, both amateur and pro, in Japan, and indeed around the world. Like Music Engine, most of them focus on playing to a live audience in the concerts, and not on YouTube presence/online in general.
• That UNDERTALE 5th anniversary concert you saw there was the recording of the 7th Music Engine Concert from May 2019.
• In 2020 there have been way more VGM concert live-streams, and old concerts made available as stay-at-home-videos than ever before.
