what's happening everyone welcome back to the show this is my bangers and mash recipe one of my favorite things to cook so this is real kind of nostalgic thing for me to cook as well so we're gonna start with two brown onions and just have them all top and tail em half and peel them slice them again like that as you can see turn them across ways and then just slice through you kind of like 1 centimetre kind of slices we want it kind of pretty chunky we're just gonna need some which the sauce balsamic vinegar olive oil and some instant gravy of your choice I like thirty's an instant gravy because I don't know about that and aa static thing from childhood really so just brings me back to that and you can make it pretty tasty so we'll get a pan on a kind of medium heat get some olive oil in there once it's heated up get the onions in salt pepper give it a good stir around so it's all kind of nicely coated in that oil and then just keep cooking that down really gradually for about this is gonna take about 20 minutes you want to really take your time with this and let the onions develop they're kind of natural flavor much about 5 minutes in get a pan on the heat get some sausages on there and get them browning off on all sides just a nice medium heat is fine we don't need to cook them all the way through at this point just keep cooking those onions down keep an eye on it and as you can see they start to go a little bit more golden colored they soften get a bit shiny and just nice turn the heat down a touch if you want to you really don't need to cook these too quick we don't want them to kind of caramelize too fast one we're at that point just get the potatoes peeled keep moving those onions around every few minutes and they'll just start to kind of form together really nicely into that later all nice flavors with the potatoes just have them slice them across ways like that any way you want to do it get him in a pan hot water well cold water so on the heat on to a gentle simmer and then the onions after about 20 minutes will look like this so what we're gonna do now is get a few pinches of sugar in there it's pretty about 2 teaspoons of sugar just a nice good quality unrefined sugar is good give that a stir around and they'll start to kind of caramelize up a bit get a good log of balsamic vinegar in there it's pretty about a tablespoon ish I'd say give that a good stir around and get it all nicely coated and we're gonna just cook this until the real strong vinegar smell kind of cooks out it spread about 2 or 3 minutes and then we're gonna get the sausages in there and then get them nicely stirred round and coated with all that kind of nice kind of bowls a murky kind of glaze that we formed once that's been there about a minute and you've moved it around what we're gonna do is get some red wine or actually add a bit of I wish the sauce because why not is super awesome there's your red wine get that in there at least a glass up to kind of half a bottle is good get that in there turn the heat up give it a little stir around make sure we the onions are kind of sitting in that wine and then we're gonna reduce that down and cook off the alcohol he's probably gonna take anywhere between five and ten minutes once it kind of thickens up and gets to kind of about this point as you can see it goes all nice and thick and anxious then we're gonna add in our gravy so we're just gonna have enough gravy just to cover everything roughly and we're going to let this bubble and simmer down and it were like thicken up and go also I'm just a mix of the red wine and the Box Samak and the sugars and oh it's gonna be awesome so yeah keep that bubbling away really gently while that's doing that you can put it to one side potatoes should be ready now strain them put them back in the saucepan add in a few knobs butter low back of course and a good pinch of salt which is of course Molden and then a load of pepper I love really peppery mash so I put quite a low in here and then we're going to add in a splash of milk I just put the lid on I'll get that on till like a really low heat on the hob there and get that all mixed in so the butter melts what's up but it's kind of melted you can start mashing it up so just keep mashing until it's nice and smooth it just started took a few minutes to mash it properly and then add in some cheese if you want to it doesn't really hurt just to add a little bit that's just a nice standard creamy cheddar and then that's some nutmeg just freshly grated in there you don't need too much it just gives a nice little subtle flavor to it and then if you want to at this point you can get some fresh watercress roughly chop it and chuck it in the mash and let it wilt down for a few minutes it's really really nice and if you're not gonna do that just plate it up as you can see add in as many sausages as you want I put three on just for the purpose of the video but I'm pretty sure I added two more after this because I am a bit of a fatty when it comes to bangers and mash so so yes I'd your sausages on there then what I like to do is get a nice slotted spoon and a spoon on the onions first so I get a good even amount of onions on each portion and once you're kind of happy with the amount of onions on there and you want quite a bit because it you know doesn't they're super delicious you can see how anxious and just thick and amazing they are once you've got that kind of right amount of onion on there then we're just gonna spoon over some gravy using a ladle as much as you want really you can get away with quite a bit because the mashed gotta say except that gravy really well and you can always had a bit more mash on at the end which I think I did here anyway and then there you go I mean that's like about as good as it gets with your bangers and mash I mean yeah it's an instant gravy but it's so delicious with the wine the balsamic in there and stuff as well so there you go super awesome you could have some broccoli on the side if you want to be healthy but it's it's pretty awesome just like that really so yeah there you go guys there's my bangers and mash give it a go there's
