there you are welcome back friends it's anders today is a good day because i am making a painkiller actually i'm not making a painkiller but i'm making um my riff on a painkiller it's not really even a riff okay the painkiller is one of those cocktails that is trademarked it has to be made with a specific rum but i'm not gonna be using that rum so it's gonna taste similar but i can't officially call it a painkiller but it's a great drink this drink is similar to the pina colada which is one of my all-time favorites but the most important thing about this drink is the rum is meant to be tasted whereas a pina colada it's pretty much in the background and you get that fresh pineapple sweet coconut it's wonderful this one is also wonderful but you get this hefty rum flavor i mean that's why i want to have control of the rum that goes into this drink so i'm gonna show you how i make it i'll touch on the history all that jazz and we will have some fun hit that subscribe button for more sips tips and recipes and let's go make a just to be clear this is not an actual painkiller an actual painkiller is made with pusser's rum i am not using pusser's rom please don't sue me to the bar [Music] the origin story of the painkiller takes us to the soggy dollar bar in the british virgin islands specifically on the island of jos van dijk now i've never been i've talked to a number of people that have been it's a very popular tourist destination and it sounds like a fun tropical paradise situation you take your boat and drop anchor in the bay you put money in your pockets and then you swim into the bar which makes your dollar soggy now in the early 1970s at the soggy dollar bar there was a bartender named daphne henderson i don't know if she owned the bar or not but she was making these drinks she came up with the original painkiller and it was more or less a riff on the pina colada in that it has pineapple coconut and rome but it also has orange juice and nutmeg and there's a lot more going on so this was its own cocktail and people loved it allegedly people would sail from far and wide to enjoy these painkillers at the soggy dollar bar one such gentleman was named charles tobias who happened to be the founder of pusser's rum now puzder's rum is a rum out of the british virgin islands it's got a stronger flavor it's an english style rum and it works great in this cocktail and that is the standard now but once upon a time mr tobias went to the soggy dollar bar had a painkiller and absolutely loved it so he asked daphne for the recipe but daphne was not giving anybody this recipe because this was a popular drink and if she gave away the recipe well then other people could make the recipes that they won't come to the saga dollar bar so she didn't tell him now the story goes charles tobias took one of her painkillers and waded out into the water made his way over the waves out to his boat took that to his home and in his kitchen he reverse engineered what this cocktail was soon thereafter with his new recipe he went back to the soggy dollar bar told daphne henderson hey i figured out your drink and made it for her and it was slightly different so they had a little back and forth saints not quite right but mine's better yours is better and they turned to the people at the bar there were about 10 of them allegedly again and they said okay let's do a blind taste test let's see who wins supposedly 10 out of 10 people picked mr tobias's to be the winner and he used pusser's rum his rum in that drink now what was daphne using in her painkiller i don't know i did find some articles that said well it was a combination of cruise and rum and mount gay rum which are rums from two different parts of the caribbean we'll talk about that another time not important but mr tobias just used puzzer's rum fast forward to the late 80s mr tobias trademarks the painkiller to be the puster's painkiller meaning you can't make a painkiller and not use pusser's rum i mean you can but you could get in trouble in fact there was somebody i don't want to like put anybody in the spotlight here but there was a bar in new york that was called the painkiller and they had a painkiller on the menu and they did not use pusser's rum i don't know what happened behind closed doors but they settled with okay we're going to change the name of our bar to pkny i don't know it upset a lot of people and this is why like trademark cocktails are kind of rough waters see what i did there rough waters it's like island now that brings us to today i have had a painkiller with pussers wrong and i'm gonna be straight with you it's really good it's tasty i believe that 10 people in the bar probably said yeah that's a great cocktail i wish i could taste daphne's original morally ethically is it right to trademark a cocktail you didn't come up with originally that's a great question i'm just going to leave that there these are just tails from the high seas so fairly warm to be the says i now the booze for my version of this wonderful cocktail we're going to call this a cane pillar until we have a better name in the cane pillar we are going to need a demerara rum a jamaican rum fresh pineapple juice fresh orange juice cream of coconut and nutmeg for gratin if you've got the uh the pre-ground nutmeg you can use that but it is much better if you do it fresh over the cocktail like this this is the motion that i use for grating nutmeg real quick let's talk about the rums here for the demerara rum i'm using the el dorado eight year this is made in guyana that has kind of a toffee burnt sugar caramely flavor that's really nice in the drink for the jamaican rum i'm using smith and cross if you are familiar with jamaican rums then you know they have a very distinct flavor this one in particular is a little heavy on the funk kind of this flavor of over ripe tropical fruits which sounds strange maybe but once you get a taste for it there is no going back this is fresh pineapple juice orange juice orange juice orange juice cream of coconut i can talk a little bit about this i made myself used a homemade recipe the standard here though would be coco lopez that's very common for this drink but the homemade cream of coconut is really good and very easy let's build get your glassware chilled just a low ball will work mine is shaped like a pineapple into the shaking tin one ounce of the demerara rum then we can do one ounce of the jamaican rum now if you want to make a true painkiller you would substitute all this rum with pusser's rum so in this case it would be two ounces of pusters rum they also make it with three and four ounces of pusters rum that's if you have nothing to do for the rest of the weekend i'm gonna stick with two ounces i think that's fine pineapple juice fresh pineapple juice is the best canned pineapple juice does work very well too so we're gonna add three ounces of pineapple juice it's one and a half three one ounce of cream of coconut and one ounce of orange juice now we can add crushed ice shake it up wake it up give this a quick shake that's going to quickly chill and dilute but also add air grab your chilled glassware your chilled pineapple and then open pour right into the glass still got room we're going to top it off with more crushed ice now garnish this doesn't look so great but what i do when i get a pineapple is i like to pluck the uh the pineapple fronds and then i freeze them a little tip then you always have pineapple fronds for tropical drinks i'm gonna do three another common garnish for this would be a wedge of pineapple or a slice of orange now don't worry i did not forget about the nutmeg i do a solid dusting right across the top and you get a nose full when you go in for a sip want a straw a little umbrella a drink inspired by the painkiller there it is cheers the cane pillar well if you don't mind i'm just gonna go in for a sip then oh man what i love about this is the fact that i love rum and i can taste rum and i can taste two different rums that are working really well together the fresh pineapple and the coconut is more of a supporting role in this one i'm gonna let oz taste this so that you can hear her go um and you will know that i'm telling the truth all right here's the question everybody's wondering is it better than a pina colada i'm actually gonna say it's not better than pina colada because i love pina colada however there is a place for this drink in my belly i love tropical drinks i love rum there i said it i love
