Saute chopped 2pcs onions on high flame setting for about 20sec. Add 6cloves chopped garlic and continue to saute for another 10sec. Add 1Kilo pork liempo (pork belly) sliced into chunky cubes and continue to saute and let the fat render. Add 1/2tsp salt Add ground black pepper Continue to saute on high flame setting and let the fat render. Then add 2Tbsp soy sauce. Add 2Tbsp oyster sauce Continue to saute on high flame setting and reduce the soy sauce and oyster sauce When the soy sauce and oyster sauce are reduced, you’ll see more oil coming out from the meat. Add 2cups sprite. Add 2pcs dried bay leaves Add 1tsp whole peppercorn Mix and set flame on low and slow cook for about 1hour. Add water as needed After about 1hour, separate the meat from the sauce. Leave a bit of sauce on the pan and add a bit of cooking oil. Add the meat then pan fry on medium to high flame setting. Pan frying will lock all the flavors inside the meat. Making this dish so much flavorful. After pan frying, add the adobo sauce back and mix thoroughly. Add 3Tbsp vinegar and slow cook for about 5min. After about 5min., mix to avoid burning. You could serve this with still a bit of adobo sauce. Or continue to reduce the sauce to make the flavor more concentrated like this. Reduce the sauce according to preference
