Hey guys, welcome to Souped Up Recipes. I'm Mandy. First of all, I want to say  thank you so much for subscribing. You   guys are so nice. I'm so happy  and appreciated that I already   got 24 subscribers from my first  video which means a lot to me. Today, it's my second video and I want to share  with you my best Chinese crispy pork recipes.   The one that you always see when you walk by  Chinatown. They usually hang it up and you   can see the nice golden crispy skin - looks so  amazing, so let's get started by picking a nice   piece of pork belly. Make sure you get a lean  one with a clear layer like this and do you see   how this part is thicker than the other part?  We don't want that. We want to cook evenly in   the oven. For the thicker part you can just fill  some meat off, but I'm going to just cut it, so   if it's my oven. These gonna be my Caa Siu save.  Now, we got the really nice piece of pork belly. Prepare a pot with water. Add cooking wine along  with some slices of ginger. Add your pork in. Once   it boiled, turn the heat to medium and cook  it for another two minutes. For the dry rub,   you will need sugar, some salt, black  pepper, and a pinch of five-spice. Now, our pork is cold, so you take a fork and  put holds on the skin side as much as possible.   I'm gonna show you how it looks like. When the  holes are enough, in case yours come out with a   tough skin not crispy at all. Good food almost  his effort right? so don't be lazy. This is how   it should look like when you're done. Use kitchen  paper to wipe that fat off. Put a pinch of salt   on the skin. Give a nice massage and then put  the skin down on clean paper to keep it dry.   Cut your pork like this. The space between the  cuts should be 1 inch. The depth should be 1/3   from the cut to the skin. What I have here it's a  bottle of rosé wine. Smells like rose. I'm gonna   apply it to the pork. It is a traditional way  to make your pork fragrant. I think you can find   this in the Asian market. If not, you can just  use regular Chinese cooking wine. After that,   we're gonna season our pork with the dry rub we  just made. Make sure every side is covered well   except the skin. Use some sticks to keep the  shape. it is optional. Just in case it comes   out with a weird shape. Fold the foil like  a box. Let the skin side be exposed and if   you see any spices on the skin, wipe them  off. Let this sit in the fridge overnight. I took it out from the fridge. The skin should  look very dry. Before we put it in the oven we   need to put two things on the skin. Back baking  powder it's going to cause a chemical reaction.   Make the skin super crispy. Pre-heat your  oven to 400 degrees, put it in the middle,   and bake it for 40 minutes. We can go to the  process of getting crunchy skin. You really   need to be careful here because every oven is  different. This is gonna take anywhere between   10 to 20 minutes. I find out these quite fun  experiences that you can see how the skin is   popping, getting nice golden color, and you're  able to smell it in the entire house. Once you see   becomes like this and the sound should tell  you it is ready, but I decide to cook it for   another five minutes, so I can get a little bit  of burn on the skin that is my favorite part. whoo! it came out it's perfect. Sticks  should be easy to take off now. If not,   that means you need to cook it more.  Places skin down on some paper towel,   so you can get rid of those fats. See the cut  with it before you can follow it. Just cut it   into the size you want. Actually, the light  is not good. That looks pretty dark. If I   can get a hundred subscribers for this video,  I will buy myself really nice light equipment.   Put it on the plate. You can serve. See the  brown and burned part? I love that color. I'm trying one. They are so good, but I  can tell with my mouse so just wait. Okay,   so it is really good. That's amazing crunchy  skin. Actually, I'm gonna tell you something   about the crispy pork. It's not just only  the skin, also what you should look for is   the fat layer melting and the lead layer  becoming tender. Absorb all the juice,   so it's really about like at the whole balance.  I think I'm gonna eat them all. That means I   have to do exercises tonight.
