[Music] welcome to this groundline every day i'm your host nick mccreadies and this week i'm going to be showing you how to make this greek slow roasted lamb which is a melt-in-your-mouth flavorful experience prepping ahead of time is key but what you're left with is a slow roasted fall of the bone lamb that is packed full of yummy greek flavors your house will smell amazing your taste buds will be satisfied give this recipe a go you won't regret it also this goes really well with my greek lemon potatoes [Music] today i'm going to be using my yaya's tapsir which is the greek word for baking dish this is the one that she used to use when she made this recipe for us every sunday we would have it after church so this is a little bit special now i'm going to be using a leg of lamb i bought this for my butcher quality is key here guys don't go for that cheap stuff at the supermarket because flavor is what it's all about so go for a really good nice cut from your butcher pop that into your dupsy and then using a sharp knife very carefully make some little incisions into the lamb what we're going to be doing is packing these full of garlic big surprise greek recipe that has garlic once you've done that drizzle it with some olive oil again big surprise great recipe that has olive oil and then we're going to rub it in there before we add some spices now the spices are what maya used to use garlic powder oregano paprika a good amount of pepper and salt then you're going to rub it in and do the same on the other side this is going to go in the oven that's been preheating at 210 degrees celsius for 30 minutes we're going to bake it on a high temperature just to kind of seal the outside take it out of the oven and add some fresh lemon juice always use fresh then some white or red wine some beef stock or water some rosemary some thyme and you're going to turn this over add some red onions i'm i love the red onions they add a really nice sweetness to the recipe you're going to cover this with some baking paper so that it doesn't stick to the foil that you're going to wrap it with this is going to go in the oven to bake for two hours on 180 degrees celsius after two hours take it out of the oven unwrap it turn it over back in the oven for another two hours then take it out unwrap it and back in the oven unwrapped for a final two hours now that zumbi or that zhu that liquid that you're seeing around the meat greeks call it zumi is liquid gold guys the flavor is incredible so what we're going to do is we're going to take the roast out pop it onto a serving dish and cover it with that wrap let it rest for about 20 or 30 minutes and drain the zumbi into a bowl now there's gonna be a fair bit of fat from the roast because lamb can be fatty you can drain it if you like i don't do it because i think it just adds flavor and it's not a lot if it's a lot drain it as much as you can after 30 minutes what you're going to be left with is a beautifully rested leg of lamb you're going to add the greek lemon potatoes if you want to make them around it drizzle it with some fresh lemon add some lemon wedges on top when you serve it just in case anybody wants more and sprinkle it with some freshly chopped parsley and guys look at this i mean come on it is incredible and it's so tasty i mean i can literally taste it while i'm watching recording this drizzling that zumi on top just makes it so much better if you want to grab the recipe for this it is a great christmas recipe easter recipe sunday roast recipe the recipe is over on my website this grandma.com link for that is in the box below same as the greek lemon potatoes they're over on the website as well i hope you guys enjoy spending time with me in my kitchen make sure you subscribe if you're new to the channel and hit the like button because it actually helps the channel grow have a lovely day and i'll see you all on the next episode of this grand line every day
