today on the stay at home chef I'm showing you how to make the best Swedish meatballs in gravy [Music] several years ago I set about on a quest to create the perfect Swedish meatball recipe most of the recipes that I found were bland and lacking in flavor after traveling through Sweden I'd say that the Swedes would be pretty happy with what I've come up with with my modern take on Swedish meatballs and I think you'll be pretty happy with it too it starts with one pound of ground pork followed by one pound of lean ground beef next we'll be adding in all of the flavor for our meatballs I've kept the flavor very traditional but made it a lot more bold we'll start with a quarter cup of Worcestershire sauce followed by a half teaspoon of allspice 1/2 teaspoon of nutmeg 1/2 teaspoon of salt and 1/2 teaspoon of pepper now since we're making meatballs we'll need a binding agent so we'll add in two egg yolks we want just the yolks and we'll also add in half a cup of panko bread crumbs then we'll stir this all together we'll probably end up needing it by hand as well you want to make sure that you get the pork and beef evenly mixed and the spices evenly distributed throughout the mixture once you have it mixed together grab some of the meat and form it into little 1-inch meatballs and roll it with my hand and then place it onto a lightly greased baking sheet and continue until you've used up all of your meat you should end up with about 30 meatballs then we're going to take this tray and bake it in a 400 degree oven for about 30 minutes I prefer to bake my meatballs I find that it's just a lot easier it requires a lot less fuss and the meatballs never fall apart from stirring now while our meatballs are baking we can go ahead and put together our gravy start by melting a quarter type of butter in a saucepan over medium-low heat now at some point you'll want to bring a pot of water to a boil to cook your egg noodles because you'll need something to serve the meatballs and gravy over once the butter has melted add in half a cup of flour and whisk it in with the butter to form a paste this is called a roux and it will thicken up your gravy then we can start adding in our liquids so first I'll pour in a quarter cup of worship sauce you can see that already mixing in and then I'll slowly add in four cups of beef broth the roux will cause the beef stock to thicken as it comes to a boil while you're waiting for it to come to a boil add in 1/2 a teaspoon of nutmeg and half a teaspoon of allspice those spices were also in our meatballs and they'll help to bring out a lot more flavor in this dish you can see that the liquid has thickened quite a bit as it has approached the boiling point I'm going to turn the heat to low and add in 2/3 a cup of sour cream and whisk that in whisk it until it's smooth and then give it a taste you'll want to add salt and pepper to taste and how much you add will depend on a variety of factors like your own personal taste preferences as well as how much salt was in your beef stock so just give it a taste add a little at a time until it tastes right to you don't forget that you'll need to cook up a pound of egg noodles keep your gravy warm over the lowest heat setting and stir it occasionally while everything else finishes cooking once your pasta is done add a little bit of butter to keep the noodles from sticking together the meatballs are done so I'm going to go ahead and pull those out of the oven and that's it we're ready to eat we're going to serve up some of those buttered noodles top it with some meatballs and ladle on some of the gravy you can also garnish it with a little bit of fresh parsley for color [Music] thanks for watching you can find the full written recipe in the video description be sure to subscribe and check out the rest of my channel where you can find hundreds of restaurant quality recipes you can easily make at home see you later [Music]
