[Applause] let's chew it [Applause] osaka is a very big lively city it has a completely different atmosphere than tokyo and kyoto it's very flashy there's lots of saucy foods like okonomiyaki takoyaki that's my image of osaka but what are we going to do in osaka oh that sounds cool i'm so excited let's go [Music] [Music] mummy of japan freeze dried food edition hey everyone it's michaela and today we are in izumi city which is about a 40-minute train ride from osaka and today we are here to learn about the freeze-dried technology for freeze-dried food here in japan hello konnichiwa so i've heard that japanese freeze dry technology is really advanced ah so exciting all right let's go [Music] first we toured the lace foods factory here we were given an explanation of the total process from start to finish let's start by taking a look at the freezing process [Music] so you can see right over here it's minus 28 and a half degrees celsius inside this freezer and food goes in there for one day before going to the dry machines the next room let's go take a look what are these machines [Music] japan's freeze-dried technology is very advanced you can have whole meals such as steak dinners baked fish and even desserts preparing the meals is really easy too all you have to do is add hot water and wait for about three minutes okay but how does it all taste let's give it a try [Music] it has a very very strong salmon flavor lots of salt and the meat is flaky just like it should be [Music] wow and it looks like it's really really easy to make you just put hot water in and wait five minutes the most impressive thing about freeze-dried technology is that food can be preserved for a really long time for example this rice lasts 7 years and can be eaten with or without water this makes it extremely valuable in the event of an emergency or a natural disaster this is a pork burger let's give this a try it's chewy it tastes like meat i don't know what i expected because it is meat but both of them have very distinct different textures just because they've been freeze dried and brought back rehydrated doesn't mean that they have the same texture or flavor they both are very distinct and different and they taste very similar to how they're supposed to which is really amazing considering how easy it is to prepare them strawberry a freeze dried strawberry let's make a fondue chocolate covered strawberry [Music] i don't even know how to explain that that's a beautiful combination of freeze-dried and rehydrated food the rehydrated sauce is nice and thick and then the freeze dried fruits are crunchy and even though they aren't rehydrated and you're not eating them in their normal form it's still a really good combination i'm going to try with the persimmon [Music] wow so i've learned a lot today i used to think the freeze-dried food was just the little tiny bits of vegetables you find in the containers of cup noodles but as you see today from the technology has evolved the range of items that can be freeze dried has evolved the possibilities are endless and it's really really interesting to see all this technology and think about the ways that moving forward into the future this technology can be used to create a sustainable food culture all right thank you for watching if you want to see more factory tours recipes farm visits please subscribe to speaking of japan and we'll see you again next time [Music] [Applause] [Applause] [Music] you
