it's time to make maple syrup as you can imagine the process starts with identifying maple trees looking for healthy trees that are about 12 inches in diameter which won't be harmed from some ethical sap harvesting averaging at over 2 sugar sugar maples have the highest sugar content in their sap but other trees such as red maple box elder and black walnut can also be used to make delicious syrups this is jordy and he's been tapping the same trees ever since he was a kid and now each year he and his family come out to the sugar bush to continue the tradition after drilling a shallow hole at about waist height a small metal or plastic spile is tapped in with a hammer the sap is running fastest when the days are warm and the nights are cold and on a day like today the sap immediately began to flow out of the spiral and you could hear the soft tap tap tapping all up and down the hillside as the trees fill their buckets drop by drop when the buckets are full they're brought down to the boiling pan and the sap is filtered and heated over a wood fire to evaporate most of the water it takes over 43 gallons of sap to make just one gallon of maple syrup but after a few hours we're left with a delicious amber syrup that will tide us over until next spring when
