[Music] welcome to Japanese cooking 101 today we are making sweet mochi mochi is Japanese sticky rice cake used both in savory and sweet dishes today we are making basic sweet mochi used for many Japanese desserts such as daifuku and mochi ice cream here are the ingredients we have a cup of mochiko sweet rice flour 3/4 cup water and about 2 cups of sugar and you need some cornstarch for dusting to learn more about the ingredients and complete recipe please visit Japanese cooking 101.com let's begin first mix mochiko sweet rice flour and water in a heatproof bowl and mix well add some more water if it's too dry one tablespoon at a time you want to see the mochi Co blend it well into very soft dough like that now we are going to put this ball in the steamer close the lid and steam about 20 minutes transfer the mochi into a pot at medium to medium-low heat and start adding sugar little by little first add a third of the sugar and mix it in until the sugar is completely dissolved you want to use the heat to dissolve the sugar and mix it into the sticky dough add another third of sugar and do the same looks like a lot of sugar but for keeping it soft and silky especially if you want to use it for cold desserts you should keep two to one ratio for sugar and sweet rice flour you can reduce the sugar if you will eat it right away as plain mochi or daifuku add the rest of the sugar and continue mixing until all the sugar is dissolved you will have a very sticky shiny and smooth looking mochi in the pot transfer it onto a baking sheet liberally dust it with cornstarch this dough is very sticky so make sure you dust your hands as well it's very hot to begin with but it will cool down rather quickly at this point you can shape it and use it any way you like spread it thinly and cut it into small pieces you can eat it by itself or use it as toppings for frozen yogurt or wrap a bowl of uncle red bean paste for daifuku mochi our favorite we have a great uncle recipe if you have never made one before both mochi and uncle can be kept in the freezer for a couple of weeks if you cannot finish it within a day or two all make mochi ice cream by wrapping your favorite ice cream and freeze it it is much easier and tastier than you may think to make Japanese sweet mochi at home [Music]
