Hello, everyone. Today I'm going to start with baking sourdough. This is what I made yesterday. It's a sourdough with black sesame. I proof it in the fridge for 18 hours. I like petting the dough gently. It's cool and feels good.😂 This is the most nervous moment Not sure how it'll turn out. I think it turns out pretty well! Yay! It looks plump. The Oven spring came out well. Nice open crumb. I think it's cool down enough. Let's cut it. It's a cute black bunny🐰 I'll make a croque monsieur with this bread. Actually it was a long journey for a croque monsieur😂 I'll try classic French recipe using Béchamel sauce. You need enough amount of butter so that It can make crispy crust. Oh god, I really like butter. I think a sourdough is the best for a croque monsieur. This is a Béchamel sauce I made the other day. Add generous amount of it. Put the other ingredients in order. I used every cheese I have. Brie, havarti, gouda, cheddar and mozzarella. Originally it use some Swiss cheese like Gruyere cheese. I have everything except it😂 Yes, you should add more! It's gonna be more tasty. I'll bake it in the oven to melt cheese completely. It looks so tasty. I'll sprinkle some dried parsley. Let's cut it. I can't wait. Look at this beautiful melting cheese... It's very impressive with its rich cheese flavor Sourdough has a little firm texture and crispy crust, which I think that makes it more delicious. I'm making dinner. It's chicken piccata which is an Italian dish, aka lemon chicken. I think Italian dish is really great in terms of using less ingredients. They're not using many spices and seasonings as much as other countries. But that doesn't make their taste shallow or just simple. Rather it makes me want to taste it more. It's interesting. This is the same. I used an onion, garlic, parsley and lemon. Very simple. Looks a little bit dangerous. I need to take some cooking gloves. I'm going to eat all the lemon peels. It won't be sour at all. It should be fresh lemon juice not a product. Let's make fried batter. I used 1T of all-purpose flour Garlic powder, salt and pepper. This is seasoned chicken thighs. Coat them with the batter. Original recipe used chicken breast. But I like chicken thighs more because it has nice crispy skin🥰 I almost want to eat that alone. Put the thighs on fully heated pan. Turn it over when I become golden brown. It'll take 2-3 min. Put them aside, Let's make the most delicious sauce. Sauté chopped garlic and onions first. When it gets golden brown too, add chicken broth, lemon juice and capers. Put the chicken thigh again and simmer it. It's thick so you need to cook it well. Take them out and Add some butter. I guess it's done. Sprinkle a handful of parsley. Dinner is ready. I brought my favorite white wine. It's Sauvignon blanc. It goes well with white meat or seafood. Pecan and cranberry sourdough is always good. It should be salted butter. I think I fall in love with sourdough.😂 It's so tender and juicy that you can cut it easily. It's cooked well. How did Italian people get the idea to cook chicken with lemon? It's not sour at all. Rather it has a refreshing taste, Which balances out the richness. I'm glad that I can make it even if I live in Korea. I think the concept of this video is yellow. I'm going to make pumpkin red bean bread. This is the sweet pumpkin puree I made yesterday. Fun fact, Even though you add sweet pumpkin in the bread, You can't feel the taste of it that much. It just helps to make gluten and add moisture to the dough. It also makes the bread more colorful.💛 When I was a kid, I didn't like red bean bread much. I thought it tasted like grandma. Now I got to feel how delicious it is. Are there any foods that you like as your taste buds change as you grow older? I think my taste buds become like grandma's already.😂 Look how pretty it is! Now it doesn't matter with actual taste.. If your finger shows through, it's done. This container for proofing is so good to check how much it grows. If you have trouble with checking proof point, use this kind of container. It got bigger. Let's divide it. Divide it into 9 parts and make them round. When I make them round like this, I can zone out and relax. That's what I love about. Let's shape it. Sprinkle some flour, Roll it out flat with a rolling pin. Flip it over so that the smooth side faces down. Put some red bean paste on it, And top it with a pecan. Cover the red bean paste with the dough. Look like dumplings.🥟 Flip it over and give it tension once more. Top it with a pecan again and proof it one more time. It's baking now after proofing. I love their round and plump shape. I think every bread is so cute.. Let's try it. Once you cut it in half, You can see the generous amount of filling inside. It looks so gorgeous!
