Steak Quesadillas IN the Water

stay quesadillas in the water today i might not be able to walk on water but i can definitely grill on it we cruised around until we found a nice sandbar to set up shop at this point the boys were buzzing so naturally we were craving some quesadillas i started off by dicing up an onion and then grabbing a well marbled new york strip throw some kusos lemon pepper barbecue rub on there and then toss that on the traeger ranger it was extremely windy out there on the water we were right in front of the inlet so we had to crank the grill up all the way to get that nice crust and we succeeded no complaints there now go ahead and sear up your onions slice open your steak once it's rested pretty well i cook mine a little more rare for quesadillas because it's gonna cook more in the shell while it's cooking with the cheese melting all over it a little bit of sharp cheddar and aged parmesan it's going to be a stanky quesadilla throw in your cilantro and onions and then once the cheese is melted add your steak and heat it up that way it really won't overcook quesadillas in the water holyoke
