my name is Ben kaya I'm the owner of spike brewery and I'm proud to introduce our new turnkey brewery we've done the spike system over the past year we have designed tested tweak and optimize our spy system to allow for the easiest most repeatable and efficient through days possible we've sourced and manufactured the highest quality and best performing products and combine them into one turnkey ready to go out of the box furry if you're looking for buy once cry once you're in solution you've come to the right place the spike system is based off the industry standard firms for neck firms is an acronym for heat exchanged and circulating mash system the hot liquor tank HLT for short is the heart of the system the electric element in the HLT heats the mash tun via the submerged heat exchanger this allows for extremely precise control of the mash temps and prevents any scorching issues the spike system also continuously recirculates the mash which is much more efficient than a single infusion mash your brewery should average efficiencies in the 80s but we've had many Brewers getting close to 90% now that you've seen how the system works let's go put it together the spike system is made up of a few main components the three brewing tanks your hot liquor tank mash tun and boil kettle and lastly the brewing controller which manages the elements and pumps we also offer an optional high efficiency copper counter flow wort chiller and heavy-duty full stainless steel brewing table with custom pump mounting system a few of our system's components that set it apart from anything else on the market are the brewing tanks our brewing tanks are made from the thickest 304 stainless steel offered on the market we TIG weld all fittings on to our tanks in a facility in Milwaukee Wisconsin this is a strongest and most professional method to attaching brewing accessories controller our brake controller will control all elements and pumps in your brewery simply set the temperature and the controller will do the rest herbs coil the Herms coil is 50 feet long and is made of half-inch 304 stainless steel seamless tubing elements these specially designed elements have an integrated tri clamp fitting so they can easily be installed and uninstalled for cleaning the plugins allow the elements to simply plug in like an extension cord this means the tank will not have a long cord permanently attached to it let's begin assembly and we'll start with a hot liquor tank the hot liquor tank has four valves the bottommost valve is for the drain the next two ports are for the herbs in and Herms out in the topmost port is for the recirculation to install all the bells you'll first want to wrap three to four wraps of teflon tape on the threads you'll notice that all of our valves have a built-in male adapter which allow it to directly install to the kettle to create a leak-free seal turn the valve until it's just past and tight next attach a Quick Connect fitting remembering to wrap teflon tape on the threads this will be used to attach your hoses repeat these steps for the Herms in and Herms out port as well as the top recirculation port next let's install the sight glass the sight glass is made up of four main components the two flexible elbows a piece of Pyrex glass and the stainless steel arched protective shield simply push a piece of Pyrex glass into one elbow slip the stainless steel shield over the top and attach the second elbow to the other end to a fix to the kettle aligned with the welded kettle ports and twist the elbows until they're tight the cyclist allows you to see the volume inside the tank without having to peer over a hot steaming kettle turning the kettle around to the back side let's install the heating element our proprietary elements are made up of an ultra low watt density stainless steel slip a gasket over the element then feed into the kettle these specially designed elements have an integrated try clamp fitting so they can easily be installed and uninstalled for cleaning the plugins allow the elements to simply plug in like an extension cord this means the tank will not have a long cord permanently attached to it also on the back of the tank is a temperature port simply screw the RTD sensor into this port let's take a look at the inside of the hot liquor tank first install the push-to-connect fitting into the bottom during port push the pickup tube into the push-to-connect fitting next we'll install the Herms coil first install both push-to-connect fittings into the tank simply align the Herms coil with the push to connect fittings and firmly push to attach this is a much better option than standard compression fittings which require tools for install for the topmost port you'll install push-to-connect fitting and a side pickup tube this is for recirculating the water and will create a consistent temperature throughout moving on to the mash tun the mash tone uses 2 valves the bottom is for the drain and the top it's for recirculation and sparging the bottom drain on the mash tun is a little bit different than the hot liquor tank we've moved the temperature probe from inside the tank into the valve assembly this helps prevent any accidental damage while stirring and/or mashing in first install the hex nipple directly into the welded port of the tank then install the tee fitting onto the hex nipple on the right side of the tee fitting you'll install the temperature probe then on the end of the tee fitting you'll install the valve and the Quick Connect fitting for your hose after assembly the drain connect a valve and Quick Connect fitting to the top recirculation port next we'll install the sight glass just as we did before let's take a look at the inside of the mash tun to install the false bottom first attach a push to connect fitting into the tank next place the false bottom in the bottom of the mash tun install the center pickup tube into the push-to-connect fitting lift up on the pickup tube twist and insert into the center hole of the false bottom for the top port install a push to connect fitting and a side pickup tube this is your mass recirculation port and your sparge port the spike system uses a constant recirculating mash this allows for much higher efficiencies than a single infusion mash this allows for less grain to be used each batch which translates into savings for you the system averages efficiencies in the 80s but we've had customers close to 90 percent next let's assemble the boil kettle the boil kettle has two valves the bottom valve is for the drain and the top valve is for the whirlpool using the same method as before install both the valves then install the sight glass just as before the sight glass helps to see an accurate volume level when the wort is at a rolling boil also you won't need to peer over a steamy boiling kettle moving to the back of the boil kettle install the element the same way as with the hot liquor tank next install the temp probe just as before moving to the inside of the boil kettle first install a push-to-connect fitting in the bottom drain and tap whirlpool port next install side pickup tubes into each fitting the bottom drain side pickup tube allows you to drain clean water from the side of the kettle after a whirlpool the Whirlpool action created by the pump centers all the hop and shrub material in the lower part of the step bottom we recommend whirlpool in for 10 to 15 minutes and you'll need to do this while the wort is still hot as a material collects much better we offer an optional counter flow wort chiller which is used to quickly chill the wort to use pitching temps after whirlpool in the wort drain from the boil kettle to the fermenter should be almost 100% clear now let's take a look at the pumps mount the palms to your brew stand or to the leg of our optional stainless-steel brew table the pump heads will need to be rotated if mounting life shown simply remove the four screws turn and reattach let's assemble the pump first install a ninety degree fitting to the inlet then attach the female Quick Connect fitting onto that this will be your inlet now on the outlet of the pump attach the tee fitting since these pumps are not self priming we've designed an air bleed into the system this will prevent air from getting into your hoses and losing suction on the front of the tee fitting connect a valve and a Quick Connect fitting for your hose this will be the outlet of your pump on the bottom of the tee fitting attach a valve and a barbed fitting this will be used as an air bleed and to prime your palm the pumps come with two jumpers that turn the standard three prong outlet into a more secure twist lock connection supplied with a spike system is a roll of food grade silicone half inch tubing you want to cut into five pieces three four foot sections and two six foot sections the longer lengths are needed for connecting the wor pump all the way to the boil kettle and water pump to the mash tun during sparging the bar bender the Quick Connect fitting is oversized so it is not neck down into the tubing this creates a full port design and also secures the hose without a need for a hose clamp lastly let's check out the burn controller the 10 through 30 gallon size use a 30 amp panel and can control the heating elements in either the hot liquor tank or boil kettle the 50 gallon uses a 50 amp panel and can control the two elements and either the hot liquor tank or boil kettle the panel can be mounted directly to the wall to a piece of plywood and then to the wall or using an appropriate TV wall mount the panel will come 100% preassembled and is ready to go out of the box before your first brew you'll need to Autotune the hot liquor tank PID this allows for the PID to calculate heat inputs needed for your tank simply fill your hot liquor tank with water press the enter button once until the PID reads 80 press the up arrow and then enter the PID will heat the hot liquor tank for about an hour until the auto-tuning is complete you will only need to Autotune once when you're ready to brew you'll fill the hot liquor tank to the top and the mash tun the correct amount of strike water the hot liquor tank will be heated via the heating element the mash tun will be heated by running the liquid through the Herms coil which is submerged in the hot liquor tank as an example this 15 gallon system heats 60 degree groundwater to strike temp in little over an hour you'll want to set your hot liquor tank tap about 4 degrees higher than your desired mash tun to account for hose losses the mash tun PID is a readout only to adjust the hot liquor tank temp simply press up or down on the PID controller and then press ENTER to set we usually fill the hot liquor tank and mash tun switch the controller on and go prep for the brew day by the time we're done prepping both tanks are up to temp and we're ready to mash in next mash in and continuously recirculate your mash until all starches have been converted to sugars mash out and then begin sparging using water from the hot liquor tank at the same time slowly drain the mash tun into the boil kettle be sure to match the flow rate of the sparge and the drain to keep an inch of water above the grain bed the pumps are turned on and off via the LED illuminated switches the timer can be adjusted by pressing the yellow button and the up and down arrows until the desired time is achieved press the blue mode button to set the green start button at the bottom of the panel will start the timer note the time is measured in seconds after the desired volume of war is in the boil kettle you can start boiling the boil kettle is PID has an output of 0 to 100% power this allows you to achieve the perfect rolling boil to adjust the boil kettle output press the function button three times and then press the up or down button to achieve the desired percent output press ENTER to set after boil is complete turn off the element to begin whirl pulling for 10 to 15 minutes after the whirlpool let the wort rest for five minutes so the hop and trim material can settle at the bottom lastly drain your boil cattle through the wort chiller and into your fermenter to clean the system we use the leftover water in the hot liquor tank and heat that to around 160 degrees we recommend using craft Meister's alkaline brewery wash and recirculate that through the entire system we move the brewery wash from the hot liquor tank to the mash tun boil kettle to the wort chiller and then drain we open and close the valves while doing this to make sure they are cleaned thoroughly we then rinse and recirculate warm water through the entire system in the same
