(chopping and upbeat music) - Hello, everybody. Today, I'm going to make spicy braised chicken. It's called, Dak-bokkeumtang. Or Dakdoritang in Korean. Chicken, potatoes, and onion are together with spicy seasonings. Everybody loves this. This goes well with rice. In 2011, I went to Europe Netherlands, in Amsterdam. One of my readers named Sarah. Sarah loved to learn how to make Dak-bokkeumtang. So, we made it together. At that time, I used chicken thigh and chunks of chicken. But today, I'm going to use chicken breast. And also, I'm not going to use any sugar. I will use just apple. A little bit apple makes it sweet enough. So, today's Dak-bokkeumtang is going to be a little upgraded and healthy version and delicious, of course. Anybody who was in Amsterdam, you guys who came to my meetup, raise your hand! (laughing) And I hope everybody is healthy and you guys have a good life. Please leave a comment if you were there. Because I miss you guys. So, this is chicken breast. A little more than one pound. We are going to make two or three servings of delicious of delicious Dak-bokkeumtang today. (package unwrapping) (water rushing) There's some kind of a slimy stuff that I like to wash it clean. (water rushing) (utensils tapping) (loudly patting the meat) Cut it half, first. (cutting the meat) And then, this way, make a slit. (cutting the meat) Like this. (cutting the meat) You guys are wondering why I'm doing this. It look like an accordion. I have a reason. You are going to see next stage. I'm going to put it here. And then, same. (cutting the meat) So, we have four accordions now. You need to season. Half a teaspoon salt. (mixing the meat) (water rushing) And add milk. Just any type of milk is okay. I will just add around quarter cup. (pouring the milk) When you marinate the chicken with the milk, not only you remove the smell but also tenderize the meat. And refrigerate this at least 30 minutes. So that the chicken is a little seasoned with salt. Usually, chicken breast, is kind of too dry. When I do this, it makes the chicken moist and very tender. And we make the seasoning sauce. Two tablespoons soy sauce. (pouring the liquid) One tablespoon Gochugaru, Korean hot pepper flakes. Hot pepper paste, two tablespoons. This is two tablespoons. (utensils tapping) We need garlic and ginger. Four cloves of garlic and around one teaspoon ginger. (crushing the ginger and garlic) It's ginger. (crushing the ginger and garlic) (chopping loudly) Smells good, ginger smell. (chopping loudly) Nicely minced, garlic and ginger. (utensils tapping) And this is ground black pepper, half a teaspoon. (grinding the pepper) And mix all together. (mixing the paste) Smells good. Apple, small apple. Or if you have a large apple, just use half. Peel the apple. (peeling the apple) Look at this! And cut this into half. (cutting the apple) Just slice. (chopping loudly) Then, I'll bring my chicken. My chicken is here. One by one, take it out. Here, I'm going to put this apple, really thin sliced apple. Put this between this chicken cuts. This and next (utensils tapping). (stuffing the chicken) (utensils tapping) Look at that, so pretty, isn't it? And this leftover apple, put it anywhere. We have to add seasoning paste on top. (smearing the paste) And two-and-half cups of water. (water pouring and utensils tapping) And, let's heat it up! Over medium high heat, I'm going to cook for 15 minutes. This is potato, I already peeled. And just soaked in cold water to stop it from going brown. And this is around eight ounce. After peeling, it's around eight ounce. (chopping the potato) Cut in half. (chopping the potato) Let's prepare this. (mumbles) And onion. Onion, we need around six ounces. (chopping the onion) I'm also going to make this chunks (chopping the onion), about one cup. (chopping the onion) (utensils tapping) It already smells so good! Wow, it's bubbling and cooking and yum! And just one green chili pepper. (chopping the pepper) I will use two green onions. Cut them into one inch long. (chopping the onions) And put it here. Good thing about Dak-bokkeumtang is that, you can make a huge amount to feed so many people. That's what I did! I made a huge pot of Dak-bokkeumtang and we shared it with my readers. You know, these days, when I think about Dak-bokkeumtang, I just think about people I met in Amsterdam, in Netherlands. We had a really good potluck party. Everybody brought some delicious homemade dishes. We shared them together. So, you are part of my life. (upbeat music) 15 minutes over medium-high heat I cooked this. Come here and see! Look at this, wow~ This things, we don't have to throw away. I eat it all. (utensils tapping) Okay, Let's add all vegetables. Potato, onion and green chili pepper. See? They are exactly submerged. Alright, good, great. Cover this and turn down the heat to medium. Another 15 minutes over medium heat. So that, potato and all vegetables are well-cooked. Apple needs time until delicious sweetness comes out. (sauce boiling in the pot) So, today, I'm going to eat this Dak-bokkeumtang for my lunch. And rice and this is oi-muchim. I already posted this recipe video. (mixing the vegetables) Mix. (mixing the vegetables) I added seasonings. Hot pepper flakes. (mixing the vegetables) Sesame oil (mixing the vegetables) Wow, nice, nice, very fresh. Cold and fresh. (utensils tapping) (sauce boiling in the pot) Green onion. (sauce boiling in the pot) Turn up the heat to medium-high. Just one minute cooking and that's it. (sauce boiling in the pot) Let's see potato. With my wooden chopstick. See? Look at this. It goes through easily. Well-cooked. (sauce boiling in the pot) Okay, nice! (upbeat music) My water. (upbeat music) You can use a spoon like this. (utensils tapping) (sighing loudly) Well-seasoned and also juicy. (sighing loudly) Usually, I put some of the Dak-bokkeumtang, the broth and potato over my rice like this. And mix together just a little bit. The apple makes it really sweet. Cucumber salad. (munching the cucumber) umm~ (munching the cucumber) umm! Spicy, sweet and soft potatoes, a little thick broth is so tasty! You can easily finish you a bowl of rice. And also, the cucumber salad is a really good match. (upbeat music) Today, we made Dak-bokkeumtang, spicy braised chicken. Enjoy my recipe. See you next time, bye. (upbeat music)
