hi guys it's carol from 156 and now a week ago i posted on my instagram story a recipe of a chocolate cake and i asked you if you would be interested in the recipe and i receive a resounding yes so today i'm going to teach you part one of that recipe you might be thinking how many parts to this recipe two why because that was a sourdough chocolate cake so today i'm going to teach you how to make a no fuss no discard sourdough strawberry you need three ingredients you need whole wheat flour water and thyme that is it so just so that you can see exactly how to start it i'm going to start a brand new starter right here i have a mason jar okay and i am going to just place a quarter of a cup of wheat flour if you do not have wheat flour you can use unbleached all-purpose flour okay and then a quarter cup of water a note on water please do not use chlorinated water as it will kill your culture let's talk a little bit about what a sourdough is sour joe is basically a fermented dough that has life wild yeast and good gut bacteria that's all it is it is what our ancestors used to use as a leavening agent today we have those handy little packages but there's so much more complexity and flavor when you make your own sourdough all right here's the water and it goes so equal parts flour to equal parts water i'm going to mix it until there are no dry spots you don't want any dry spots all right i'm going to take a paper towel and that's it i want it to be able to breathe because i want it to collect the wild bacteria and the wild yeast that's in the air i place it on my counter and that is it very simple tomorrow you're going to feed it what does that mean you're basically going to do exactly what you did today a quarter cup of flour to a quarter cup of water mix and place on your counter day 3 4 and five are going to be the same by day five your culture is mature that means it is ripe it has enough bacteria and wild yeast for you to use in your baked goods a note on troubleshooting if on any specific day you come in and you open your sourdough starter and you see some fluid right it could be a little brown it could look like water do not panic that is called the hooch all that means is that your sourdough needs to be fed so mix it and feed it just like you would feed it any other given day a fourth cup of flour to a fourth cup of water mix and set aside don't forget to subscribe and hit the notification button so you do not miss out on any of our upcoming videos thank you so much for watching and i will see you next time bye you
