hello everyone good evening how are you welcome to markets kitchen I totally appreciate it you know what we're again eating late but it's ok I just want to welcome everybody to to markets kitchen I am you know my cookbook you know I'm always showcasing my cookbook Comey doesn't be familia the assignments due Sunday and today this evening I am making my dad salsa but I'm also making some idea burgers so we're gonna work on the dough first then we'll do the south side then we'll do the burger and you're gonna just love it remember you can you can order my cookbook on wwm cookbook maria Baca just as well but anyways welcome you enjoy and we'll let's start so before I begin the dough I'm going to put my water I have two cups of water actually and I'm gonna put them in the microwave to get off because I do hot water I have my oil going I have my red chili cooking and I have my pan ready for the burgers everything's ready I'm just gonna put the the water in for a minute because as you know I multiply everything I multiply my my mic I'm gonna do shortening I'm using Crisco so I have seven cups of flour and that's nothing else is in the flour and then I'm going to do that's about a tablespoon of salt and in my baking powder and I just you know just really combine it really really well and my son-in-law today he's uh he's helping me out again you know just we could get a better you guys can get a better view of what I'm doing gonna take advantage of him he's off you while he's working from homes and so in the evening he's willing to come in and help me while he's doing you know well after work and stuff so I'm so excited about that and so I feel a lot more comfortable and you name it I do so anyways share share share my page you know that my son-in-law he's given me a subscribe please and anyways you know my way I watch a lot of different food channels on YouTube and when I do that you know I'm always watching because there's a variation of of chili you know a total variation of chili New Mexico green chili is unique to it's only we New Mexicans born raised here let me tell you we love our New Mexico chili and the thing about our New Mexico chili is that there's a difference if your chili is really really dark that means that it is of enjoyed and if it is nice and beautiful and red that means that means that it's on at Lisa and they hang it out and it's sundry so is there a difference you're darn right there's a difference so here you're seeing that I'm multiplying my shortening now this is Crisco you know this is my Crisco and so I just multiply it together and so anyway so there is a big difference with New Mexico chili you know we have I think gosh I don't know how many variations but it's different the Anaheim chili out of nine green chili you'll find it you know in the stores during the winter and stuff and you know that helps some people especially if you're wanting to make chili vandals or something you know during the winter and if you didn't freeze enough chili well that will help and stuff but for the most part we do freeze a lot of chili and and stuff so anyway so this is ready almost ready so what I'm doing here as you can tell I am multiplying my shortening well it's Crisco shortening and I'm just multiplying it in the hot water and I do hot water and stuff a thing about when you mull safai it just it just uh it goes better you're not having all these little crumbles you just have a fine flour and now you put anything else in my flour just the baking powder and the salt and then my son of mom's been wanting to me grandpa's chick salsa compass chicken grandpa's salsa so I told him that we could make my dad salsa today and he's the he as a salsa he loves salsa you know and my daughter Rachel and Ireland and Logan and they all love salsa but David loves salsa so he's been wanting to meet grandpa's salsa so that's what we're gonna do so as you can tell it's just multiplying its melting so I do about two and a half cups of water it's what we'll end up probably using we may use a little less may use just a tad more but I don't think so anyways once you use all your water don't ever add any more flour to your dough you know if it's too sticky it's all in the kneading so as you're kneading your dough will come together just so remember that so when you're doing so it might be as Dorothea's don't be adding any more flour you don't have to do that so as you can tell data can come closer and look and see see how it's multiplying so this way you you melt everything right away and it's not and it is hot this is hot water and and stuff so I just put in the microwave for about a minute and a half and so see how it's just multiplying and that was about a half a cup of shortening of the Crisco so sometimes I'll use my dick I'll use the lard the more a lard I'm good with that you know and sometimes I'll just use Crisco and sometimes I'll put the oil in and stuff so now look at this see how nice that is it's all nicely melted see and so this is what you want so anyways so usually what I do is I'll just kind of do a little a little hole here or what does it call like a I don't know just like a hole and stuff so this is going to go in look at this and so when while the dough is sitting for a few minutes because I always allow my dough to rest always it's just me that's just what I do because I do other things when I'm when I'm cooking you know you kind of you do all the what do you call it um do multi multi tasking is what it's called and stuff so here's some more water and this is a one cup so usually it's about two and a half cups of water and this like I said this was six cups I'm gonna warm some more water just in case now that I can use on the chat yeah so dough is forgiving to a point and then to a point it isn't but if you put your water in a little at a time you shouldn't ever have your Jo that's too uh too soft and stuff so anyway um my to cup it wasn't all the way to two cups so that's my meetings gonna have to put just a little bit more water and you can find this recipe in my cookbook come he doesn't mean familia to Sunday after Sunday I like making you and I likely keep tortillas so that's nice hold on and the one thing about my tap water is that it is hot so it's how do you have to go with this so I have everything ready for my suds up nice look at this it's coming together so like I said it's all in your kneading everything is in your kneading and the most that I do is all dissolved s my my my butcher block that's the most that I do nice and this is what you want you don't want to you don't want a hard dough and you don't want to softer the door when you're making your slip IPS okay clean this I can dust my counter oh I like it put this away it's easy when I have help you know cuz I can have everything on the on the counter and ready and stuff okay I'm gonna get just a tad of flour I'm just using my hand like I said we're just doing a dusting see it's just a dusting on my count on my butcher block and it comes right off as you can tell it's pretty clean the bowl and it's all in the heating need your dough see the more you need the nicer it gets and the only we started late today even later than yesterday because the curvy lady was here she wanted to demonstrate her vacuum have to admit it's a great vacuum but way out of our budget you know way out of our budget it's not something we can do you know and some people say well just going to make payments no no no no none of these days in time you know that it gotta be safe look at how nice like I said it all in here it's all in the kneading knead your dough knead so I'm gonna have a smothered sopaipillas burger so in Victoria it wants regular stuff like a burger and Zachary could care less he'll eat cereal he doesn't like it he does like sopaipillas so he Willy it's up ideas so he's good with cheese and soap ideas as soon as you can tell it's all in your needing me to meet and I've already washed all my vegetables and everything's ready look at how beautiful see it's all in your tell them they need you look at this then I'm gonna just let it sit to the side cover it with a towel and well that's I'm just laying at rest that is the greatest thing to do is let it rest and in the meantime we're gonna start our sponsor mix so dad would always put McKenith diced tomatoes and and fresh tomatoes dad used whatever was in the cabinet he didn't care he was just like and his turn salsa was just fantastic fantastic so I'm going to use for target closed for now my hands just have dough on it you guys so it's all good see I love my garlic thing it's nice it's nice okay next here's what we should have some music I don't know if Alexa's working today Alexa wasn't working earlier so sometimes she gets a little temperamental my son-in-law is very quiet just concentrating give a thumbs up David so they know that you're here there he is okay check that out okay so the garlic is done doing done and then what we're gonna do is the onion so remember this is where you need to strength abusing that like that the other way you do this and we're going to use this entire onion so we're going to use half at a time okay and here we cut the tail off like that okay so here I'm gonna just down that's when we need that strength to do that okay so I'm gonna throw these onions into my food processor right away and I'm gonna do two of the guarded clothes right away and I am going to add the diced tomatoes right away okay and then what we're gonna do and we're just gonna cut them like this I'm putting these in put a couple in neat that freshness still I'll put two Tomatoes welcome everybody thank you for coming on to my page don't forget to do that's the whole thing about a KitchenAid and heck it's the oldest isn't it I think it's the oldest wouldn't you say that David yeah I promise yeah so anyway so just do the jalapeno and it is spicy then but do the ones that are colored right now Christy I just like the color so I bought these like this on purpose okay check that out my a little bit of order there no mr. tad and then the salt and you can tell I already have my oil ready my oil is ready my little salt bin that I just love my salt bin so remember everything is in there already [Music] okay here we go and it's locked and I'm seasoned it with salt and pepper and garlic and onion powder and I'm gonna make these hamburger patties were really quick not gonna cook him yet I'm just gonna make him really fast so we can that way you guys can we can have that taste test nice check that out okay mixed up all the salt pepper garlic onion powder okay I'm gonna put all this this around and we're gonna start working on the slope ideas and then I'll cut vegetables or the so5 your burgers what do you think guys is this quick or wet okay oh look at my look at my dough look at how cool look good oh my god it feels awesome so what I do is I do I will make them a little thick because I like that thickness for that where you're sort of your sub idea burgers and in all reality we only need like eight of them but this will make a lot more than that now we're just making them all so usually with this seven cups my my Jos a little I'm making my dough balls a little bit bigger and then stuff so we won't get as many you can use the same dough for your 30s and your slope ideas over the dough smells suck see the difference when you use hot water and you multiply it really honestly makes a difference it really does yeah oh you guys like trying a new flower they show you it's called cassava flour and it's used in Filipino dishes so I can't wait to use it anyways and it's gluten free it is grain free and it is nut free it's 100% yucca root so anyway so it's good to make Looby but anyways you can make tortillas out of this so it's gonna be great to try all hopefully I can I'll get on and when I'm using it check that so anyways so like I said when you're doing your vanitas it's all in the way that you don't do your nails in there and look nice and round same and I don't dig my nails in if you make these round and perfectly round your Dorothea's should come out round the one thing about it is and I've set this to a few people several people a lot of people it is all in the palm of your hands if you watched my tortilla my third theäôve video and the other day i showed you it's all in the way you roll some people when they're rolling they roll all the way up to the wrist and it's like no wood you're loose control that way so it's all in your the palm of your hands and it's always up and counter clockwise just the same way I'm doing this just the same way see everything hey who's hungry come in eat who pan is hot by cheetah let me show you my chili I just love rich chili look at this isn't that great don't you love my spoons oh I love my spoons look at this this is the perfect red chili this is what I made last night and stuff so look at that so it's all in the palm of your hands everything okay now you see it's started and look up I never go towards anything I look up it always stays on the same side up let's see if it's ready now you always put the wet side down this is how you test to see if your pan is ready because it should sizzle the bottom of your spoon look you hear that that means it's ready so it's always the whip side down look at that just like brown look at how nicer they're the same way don't put your 500 pounds into it just be gentle be gentle you should always be gentle with your xxx turn it let's see if it's ready to turn look at that check it out doesn't that look just divine I'm gonna make Zachary's little one right away so this is how your so and if you let your don't rest your stuff ideas will come out the best let your dough rest it's okay what's the hurry I'm not a honey person a lot of people like honey on there some ideas I'm not gonna I'm not have any person so I think honey's always just a preference again it's the website down check it out and sometimes you know dough is is temperamental so sometimes it'll rise and sometimes it doesn't want you but for the most part it does that looks great let's see if my grandson Zachary can hear me he could come and test out one of the slip ideas or when I need for him you want to make him for him hopefully he'll come in here and he can be the taste test journalist sopaipillas cuz he's here he's outside with his doggy Wow check it out perfect this book might be a purpose and this one you'll just fold them you know for yourself I hear burgers look at that and it's not that I cool nice nice nice and here's mr. Zachary's aren't these great and the more you get it into the oil the nicer it'll be so all in the palm see it's all in the palm of your hands you don't need to push down see all in the palm of your hands up and lay your dough rest it's okay to let your dough rest see making them a little thick so what I'm gonna do is we're gonna make us a burger homemade patties yeah now we can taste test doesn't it look great that out you can do this to a group you get myself idea again the palm of your hands up turn all the pomp now let me show you what somebody some people do they go this way see they go this see get your 13 that way so it's all in the palm of your hands so what see how you you mess it all up when you do that so if you just pay attention palm of your hands Wow pack my sofas are coming out amazing Wow check it out look at that nice nice nice look at that nice and I can make all over the village it'll come down a little bit man so quick see just leave it don't bother your your masa is in there don't bother so the difference multiplying your your shortening is so important somebody asked me did you put did you put that in your cookbook the bucked emulsify like oh no I did not I said um I did you know some turps some people will get confused so not understanding what I meant by it so this way I'm going to show you look at this I just I don't know it myself ideas came out to rate and see this is this is the one that that we that I killed you when people do things wrong so it doesn't it didn't want to rise the way the other one side right so we're gonna be very gentle with your job especially between this and even with bright red you know if you've got to be gentle you know it's not right that's not the easiest thing to me I need it to Michael mother Sandra you know should she is sweater and Native American and oh my god and still hurting me he's at Crystal Bay yeah one day they may she leaned of injured bread and um and she made it her home in her own regular oven you know it was just so delicious and stuff so it's just like anything out there some things you just leave to them to you know to certain people but you have to be gentle we've have to be check that out resisting light my burgers almost ready see the palm of your hand I got cheese out I got the lettuce out just like you know that's how you do it really really good it's coming out three so what I'm going to do for a second and I'm going to shred a little bit of medicine just for that you should see how I'm going to do this and I'm going to do a little bit of the tomato they're good so just I just you know I love iceberg lettuce when I was pregnant with Victoria I used to crave lettuce and bags of ice and that was for a while and then before you knew it I was craving the noodle and walk up one day it was just really something I was just like oh my god you know so my dad he was really he's really great about it and one day my mom wakes him up in my mom said you know what markets craving mini with us you better go get her stuff so he went and got me some in here I'm eating they knew the way at midnight it was this little restaurant I can't remember the exact name of it and it was the most earnest and oh my god i sat there and I ate they knew the money my mom a little it was just great you know my dad was just really really neat about certain things and and stuff and ciconia was his first his first so that made a big difference [Music] yeah great okay there's a nice big onion it's a nice onion set at Albertson's all right nice nice whoo anyways you know I um every time I'm cooking you know I think of different things and I start thinking about what I'm gonna make for breakfast tomorrow or what we're gonna have for lunch tomorrow it's so funny how you ended up thinking this way and you haven't even finished this meal you know and so I don't know how many people are like that but I am like that I am just mean all of us I think are all like that and it's tough do you know so it's like what I'm gonna beat you tomorrow am I gonna film tomorrow I don't know okay look at that okay we're gonna wait a little bit because I'm in makeup so what I'm gonna do because I'm just gonna get the little ones there I knew exactly how much put just a little bit of cheese on this just like that well those are done yet almost like you I almost like you're doing your your enchilada but get this look at this oh my gosh but turn this little I'm gonna put a little bit more cheese and I'm gonna do the chili look at how gorgeous Allah -
