roasting the veg until golden and caramelized adds lots of extra delicious flavor to this comforting roasted vegetable soup plus i'm going to show you how to take it up a notch [Music] hi i'm nikki welcome back to our kitchen where we show you how to make delicious family-friendly recipes i love making recipes like this in the winter there's something about dishing up ladles of steaming soup into waiting bowls and then dunking wedges of bread in there plus knowing that you've made something that's nutritious homemade and delicious for this roasted vegetable soup we're going to start by preheating the oven to 200c or 400f for the veggies i'm going to be using one large or two medium sweet potatoes one red and one yellow bell pepper two medium carrots a red onion and three cloves of garlic those flavors are going to work so well together chop the veggies into chunks and place the sweet potato bell peppers carrots and unpeeled garlic cloves onto a large baking tray drizzle on three tablespoons of olive oil and sprinkle on half a teaspoon each of salt pepper cumin and paprika toss it all together using your hands until all the veggies are coated in the oil and seasoning place in the oven for 20 minutes giving everything a turn after 10 minutes after 20 minutes we're going to add the red onion which has been chopped into chunks we don't want to add the red onion at the beginning as if they cook too long they might burn slightly and this would add a bitter taste to the soup whereas we want to retain that lovely rich roasted sweetness add the red onion chunks and toss everything together so the onion gets coated in the oil and the seasonings place back in the oven for a further 10 to 12 minutes until the vegetables are lovely and tender once that veggie is roasted we're going to take it out of the oven if you guys have watched any of my other soup videos you'll know that i love my toppings so i'm going to reserve a few of these roasted veggies to place on top of the soup add the rest of the roasted veggies to a large saucepan and squeeze the garlic out of their skins we're going to add that garlic in too pour in one liter which is about four and a quarter cups of vegetable stock chicken stock would work fine as well stir everything together and then bring to the boil and simmer for five minutes turn off the heat and then blend the soup with a hand blender once you've got to a smooth consistency for that extra level of creaminess we're going to stir in 35 grams which is about a third of a cup of parmesan if you're making this 100 vegetarian you can replace the parmesan with a vegetarian hard cheese that you can get at most supermarkets add salt and pepper to taste and then serve the soup topped with the reserved roasted veggies and a little sprinkle in a parmesan and there you go that's how to make a delicious roasted vegetable soup with extra flavour coming from the creaminess of that parmesan really hope you enjoyed the recipe if you did don't forget to subscribe and hit the bell to be notified of new recipe videos every week see you next time [Music] you
