Selling His Giant Contracting Business To Start A Gourmet Pizza Trailer // Small Town Savouries

[Music] I've literally every part-time job I've had in between working I've always reverted back to pizza because it's just something that I've enjoyed it's something that's easy to do I like to make people happy and everybody smiles when they eat pizza so very good worth the drive come to the odd that's it [Music] my name is Mark Nixon I own Pisa pie food truck I'm located here at the norfor county fairgrounds Simco we specialize in Gourmet thin crust Quality Pizza our biggest sellers are our dill pickle [Music] pizza I'll be here tomorrow night all bu see you later our meat lovers and lately our Daryl dogs have really taken off and they are a big hit in town now too right now 9:00 time to start the ovens so to get them started warmed up for start of everything at 11:00 I like this location cuz it get lots of traffic everybody comes in and out of here it's a very busy spot and there there's nothing on this side of town it's been good the the a society is is fantastic to work with there's a lot of people that they still don't know we here yet some people aren't on the same social media pages that we're on the smell has definitely attracted a lot of people from the neighborhood cuz when the wind blows that way I get a lot of people walking over here going oh can't handle the smell I need your pizza today so right now we're headed to British baked goods to pick up our dough for the day got a hold of Clive and he gave me his recipe I gave him mine and we went through a couple of batches before we uh settled on this one he makes my dough fresh every day I just give him the amounts as long as I Dro my bins off to him the day before he can make all the dough that I need Oh look The Parking Spot right out front for me today that never happens that never happens all right so British Breakers here we are morning thank you dear you want the other too uh no just the lid though cuz yeah cuz I need it for for in the fridge please thank you I'm assuming you meant 18s again right not 14s I know what I did what I get the 14 from is from you because you send it over in a message with four teams no I don't think I I think so I think not this time not this time 18 and 14 okay so 14 is to be 12 oh is that say you were right okay so no she's got she's got the 12 somewhere between us than you I know what you mean I was at the Catalina wine mixer last night leave me alone with Clive I know that my D is consistent every single day super nice guy very helpful very knowledgeable I can assure you that it's nice and light and Airy it comes out with a nice thin crust everybody that's that's had it absolutely loved the dough so there you go hey now open there you go when to take it back Kayla's my daughter and when I embarked on this endeavor kind of sort of said that she wanted to help out a bit she was interested in it and intrigued in it ever since I've actually had it and she's learned how to make the the pizza and she you seen how it runs and she's taken a a really big leap into really really enjoying working here puts me in my place sometimes still what are you doing it's pepperoni I told you he's waiting on the pepperoni the boss yeah that's right so I didn't think I was going to enjoy the cooking part so much but I actually really do getting to stretch and learn how to spin the dough without dropping it on the floor I did that once I haven't done done it since it's the uh eat drink Northfolk after party in here tonight with a big uh big party with Black Creek entertainment is doing their uh doing the DJing tonight well 50% of the proceeds of the sales of the pizza tonight go directly back to Northfolk Agricultural Society you you guys all [Music] right if you don't have fun and Expos environment like this you just trying to kill each other that's why I only allow my wife in every once in a [Music] while let see you guys beat the high school kid rush so that's good it's 11:41 this is what we were we were waiting for what is happening here he's putting the ranch on oh oh this is quality content I just want to dip my [Laughter] scaar I gave it solid 10 8010 for a $5 combo doesn't get better than that give it an eight as well yeah the deal is awesome it tastes like dill pickle fries that you get at the chip shf the dill pickle is my biggest seller I go through two of these tubs a week 40 L of pickles a week is what I'm going through right now and I'm expecting that to increase as the popularity of the trailer and this location is found after you search the dough we have our black garlic aoli base put it all over we don't spread it just because it's kind of the way it melts under the cheese it just kind of works then we throw some mozzarella cheese and then we grab crinkle cut pickles just all over that the key to it being the crinkle cut is that it keeps the crispiness when they come out of the oven you don't lose the crisp on the on the [Music] pickle I mean who would have thought that dill pickle pizza would be one of my biggest sellers meat lovers is my second biggest today I'll probably go through a lot of bacon cheeseburger start with a good serving of ground beef onions are double smoked bacon and then we top it off with pickles and a little bit of cheddar cheese and then I serve it with ketchup and mustard and when you take a bite with the ketchup and mustard you almost literally cannot tell the difference between a hamburger and a [Music] pizza so the Daryl dog is named after my best friend Daryl because he wanted us to do like a finger foods pizza with pigs in a blanket I kind of laughed it off at first but then he really continued to insist that I name it after him so we kind of put our own twist on it little bit of bacon we top it with garlic butter and Parmesan and then we serve it with ketchup and mustard and marinara sauce as [Music] well always wanted to do it so it wasn't a shock but the timing was coming near because of his other job he was not happy anymore and physically it was getting to him so basically he came to me one day and just said I'm either going to do it now or I'm never going to do it so we just said okay let's do [Music] it I used to help him out when he did his installation stuff so it's a little change of pace the 18-hour days spend more time in my truck than actually at home you know what the money is good but my physical my physical health and and and family health and everything else not worth it and I have a pepperoni in the oven right now we didn't get to really see him except the weekends I think it was a good move and I feel like he's a lot less stressed too now it's much calmer environment and he gets to make up the menu make up the hours and kind of do what he's always wanted to do the family's got to come first at some point and having the family be a part of this when they're able to be a part of it everybody working together again just 100% made a lot more sense I always do
