I dont think that was basil though, maybe parsley or coriander, but he probably chopped and mixed the basil in, Genaro is a genius, from what i've seen on a ton of Jamie Oliver's shows, he looks up to him dearly and is like his mentor.

Also, now i want pasta. The rain was more than enough to set-off the perfect mood for eating pasta. dammit now i got saliva on my table.

look at the weather but who can stop me cooking it is incredible i am int he Almalfi coast Minori my home town and i'm going to cook a fantastic dish linguine mare e monti mari is the sea the mussels is the sea monti is the land where you go up to the mountains and what you find is a lovely pancetta which is pig and mushrooms just fantastic oh my my never mind about it make sure that water is boiling salt ive got some lovely linguine pasta like Jamie do put them altogether twist it goes in about 100 gram for a portion olive oil goes in now im going to start to make the sauce and you will enjoy it i guarantee you first of all is the pancetta slice it this particular pancetta is locally in the almalfi coast they love to make everything round the reason why they will feel fennel and chilli you wait there i wont be long for a portion you need about 2 slice of pancetta if you cant find pancetta please use bacon make sure its nice smokey bacon half an onion pancetta goes in don't worry if some big some small you know this is what this is about you have to be precise when you make a cake but not when you cook put your love and put your soul your spirit goes in when it starts to get a bit of colour put the onions inside oh yes yes its all done get the mushrooms cut them in big slice almost like a chunk mushrooms go in stir them a little bit get some olives about ten twenty olives oh my my my these particularly muscles are quite large if they are some it doesn't matter yes a little touch of wine use good wine cover for a second because i want the mussels to go SWAH they start to open and all the beautiful juices is inside with the wine get some nice tomatoes not many tomatoes juts a few i used three tomatoes have you noticed i didn't use much salt because the Pancetta is quite salty and the muscles has got sea water inside which is salt shake them a little bit why not clean my hands with the raining water yeah clean im in paradise and i'm cooking put some basil in come and have a look at the mussels again fantastico i'm going to put some olive oil nearly there the olive oil has made them creamy the onions wheres the onions they have disappeared combined so well sea and mountain this is what were actually eating its crying out for the pasta come on yes this is enough for two i just need a little bit more parsley look at that yes this is fantastic warm happy healthy good bellisimo if you want to see the latest recipe from Jamie Oliver's food tube channel you must subscribe it is very easy
